HIGH ALTITUDE HOMEMADE OATMEAL RAISIN COOKIES



High Altitude Homemade Oatmeal Raisin Cookies image

Chewy in texture, a no-fail high altitude recipe for oatmeal raisin cookies.

3 eggs (well beaten)
1 cup raisins
1 teaspoon vanilla extract
1 Cup butter (softened just enough for it to cream with sugars)
1 Cup brown sugar
1 Cup white sugar
2 1/2 Cups flour
3/4 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 Cups oatmeal (Quick cooking works best. )
3/4 cup chopped pecans

Steps:

  • In a bowl, add eggs and with a whisk or fork, beat the eggs well. Stir in raisins and vanilla and let stand for one hour, in the refrigerator covered with plastic wrap.
  • Cream together butter and sugars. Add flour, salt, cinnamon and soda to sugar mixture. Mix well. Blend in egg-raisin mixture, oatmeal, and chopped nuts. I used my stand mixer for this step.
  • Dough will be stiff.
  • Drop by heaping teaspoons onto uncreased cookie sheet or roll into small balls and flatten slightly on cookie sheet.
  • Bake 350 degrees for 10 - 12 minutes or until lightly browned.

If you're tired of having totally flat or stiff and tasteless chocolate chip cookies for the high altitude baker, then this is the recipe for you! If you like firmer cookies, increase the flour by 1/4 cup.

1 cup butter or margarine
1 cup white sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
½ teaspoon salt
1 teaspoon baking soda
3 ½ cups all-purpose flour
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the butter, white sugar and brown sugar until smooth. Mix in eggs one at a time, then stir in the vanilla. Combine the flour, baking soda and salt; stir into the batter just until blended, then mix in the chocolate chips so they are evenly distributed. Drop cookies by heaping teaspoonfuls onto ungreased cookie sheets spacing 2 inches apart.
  • Bake in the preheated oven until the edges begin to turn golden, 12 to 15 minutes. Allow cookies to cool for a few minutes on the baking sheets before removing to wire racks to cool completely.

1/2 cup butter or 1/2 cup margarine, softened
1/2 cup granulated sugar (less 2 Tablespoons)
1/2 cup packed light brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
3/8 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1 1/2 teaspoons shortening

Steps:

  • Preheat oven to 375 degrees. Beat butter, granulated sugar, and brown sugar in a large bowl until light and fluffy. Beat in peanut butter, egg, and vanilla. Gradually stir in combined flour, baking powder, baking soda and salt; mix well.
  • Roll heaping teaspoons of dough into 1-1/2-inch balls. Place balls 2 inches apart on cookie sheet. (If dough is too soft to roll into balls, refrigerate for 30 minutes.) Dip fork into sugar; press crisscross indentation on each ball, flattening only slightly. Bake 11 to 12 minutes. Let cookies stand on cookie sheets for 2 minutes. Remove cookies to wire rack; cool completely.
  • Melt semisweet chocolate with 1-1/2 teaspoons shortening in top of double boiler over hot, not boiling, water. Place melted chocolate in baggie and snip bottom corner to create a small opening. Squeeze slowly to decorate cookies with a dragonfly design or create your own design.
  • Makes: about 2 to 2-1/2 dozen cookies.

  • In the bowl of a stand mixer or in a medium bowl using a hand mixer, cream the butter and brown sugar until light and fluffy (about 3 minutes). Add the egg and yolk, then the molasses; beat on medium speed for a few seconds until incorporated. Stir in the vanilla and orange zest. With the mixer on the lowest speed, add the flour/spice mixture a little at a time until the dough is uniform and is beginning to come together in large clumps.
  • The dough will be slightly crumbly at this point. Turn it out onto a counter or large cutting board and knead it a few times with your hands until it begins to come together in a large, soft ball. Divide the dough into two halves and shape each into a ball, then press into a thick disk. Wrap each disk in plastic wrap and chill in the refrigerator for 2 hours.
  • When you’re ready to bake, preheat oven to 350 degrees. Remove the dough from the fridge and allow to soften slightly. Line two baking sheets with parchment paper. On a large, flat surface, place another sheet of parchment paper and sprinkle it lightly with flour. Place the dough on the floured sheet and roll it out to 1/4-inch thickness (if you want crispier cookies, roll the dough a bit thinner). You may have to muscle the dough a bit at first until it softens and becomes more pliable.

  • Preheat oven to 350 degrees F. I always use an oven thermometer. Ovens can, and usually do, heat at a different temperature than what shows on your oven screen. For the best results in any of your baking, I highly recommend using an oven thermometer. Line your baking sheets with parchment paper or silicone baking mats.
  • In the bowl of a stand mixer with the paddle attachment, add your cream cheese, cool unsalted butter, sugar, and salt. The temperature of the butter and the fact that you use unsalted butter matter here.
  • Turn your mixer on the lowest speed available. We don't want to incorporate any air into the dough. Air will cause spreading! We only want to mix this until it starts to incorporate. Scrape down the bottom and sides of the bowl.
  • Add the cold egg and the vanilla. Again, the temperature of the eggs matter. You want to use them cold.
