SUGAR-FREE MOCHA MOUSSE RECIPE

Steps:
- In a small saucepan, warm together the heavy cream, instant coffee and sweetener on a low/medium heat. Do not boil.
- Break the chocolate into pieces and add to the warm cream, stirring until the chocolate has melted. Remove the saucepan from the heat.
- In a small bowl, whisk the eggs. Add the eggs slowly to the warm chocolate/coffee/cream, whisking continuously.
- Pour the mocha mix into 6 little espresso cups and place them in the fridge for at least 2 hours to set.
- Garnish with shredded/grated chocolate.

- Stir 1 tablespoon chilled brewed espresso or strong coffee into 2 cups prepared chocolate pudding. Beat 3/4 cup heavy cream with 1 tablespoon sugar until soft peaks form. Fold into the mocha pudding. Top with chocolate shavings.

- Place a small bowl in a larger bowl filled with ice cubes; set aside. In a microwave-safe bowl, heat chocolate and coffee until chocolate is melted; stir until smooth and set aside. , In a small heavy saucepan over low heat, whisk the eggs, sugar and salt until mixture reaches 160°, about 2 minutes. Remove from the heat; whisk in chocolate mixture. , Pour into prepared bowl. Let stand for 5 minutes or until cooled, stirring occasionally. Add cream. With a hand mixer, beat until soft peaks form. Spoon into dishes; refrigerate until serving.

LOW CARB SUGAR FREE MOCHA MOUSSE
This is a recipe I got off another site. It is a mix between an egg custard and a mousse. I haven't made this yet but I would add a tablespoon or two of cocoa powder to make it "mocha" instead of just coffee flavored. I'm guessing on the prep time and the "cooking" time is chill time before serving.

- Combine egg yolks, splenda and coffee in top of double boiler.
- Cook until thickened to consistancy of a soft custard, remove from heat.
- Soften gelatin in 1/2 cup water, stir and add to coffee mixture.
- Stir and cool.
- Whip the cream and fold in gently.
- Pour into individual serving cups and chill.
