A creamy yogurt dressing-flavored with orange juice and grated peel-beautifully coats fresh fruits.

1 cup Yoplait® Original yogurt French vanilla (from two 6-oz containers)
1 tablespoon mayonnaise or salad dressing
1/4 teaspoon grated orange peel
2 tablespoons orange juice
1 pint (2 cups) strawberries, sliced
1 kiwifruit, peeled, cut up
1 small bunch seedless green grapes, cut in half
1 can (11 oz) mandarin orange segments, drained

Steps:

  • In large glass or plastic bowl, mix yogurt, mayonnaise, orange peel and orange juice.
  • Gently stir remaining ingredients into yogurt mixture. Cover and refrigerate at least 1 hour but no longer than 4 hours.

¼ cup minced fresh mint (chocolate mint preferred)
½ lemon, zested
1 tablespoon honey (fireweed honey preferred)

Steps:

  • Combine watermelon, strawberries, peaches, nectarines, pear, and grapes in a large mixing bowl.
  • Whisk lemon juice, mint, lemon zest, and honey together in a small bowl; drizzle over the fruit mixture and toss to coat.
  • Refrigerate 1 hour before serving.

1 white grapefruit, peeled and sectioned
1 pink grapefruit, peeled and sectioned
1 navel orange, peeled and sectioned
1 honeydew melon, halved and seeded
1 cantaloupe, halved and seeded
1 large avocado, chopped into small pieces
1 tablespoon lemon juice
¼ cup extra-virgin olive oil
¼ cup fresh lemon juice
1 teaspoon balsamic vinegar
⅓ cup chopped fresh mint
2 tablespoons honey
1 teaspoon coarse sea salt
freshly ground black pepper to taste
fresh mint, leaves picked

Steps:

  • Combine white grapefruit, pink grapefruit, and orange sections in a large bowl.
  • Scoop out honeydew melon and cantaloupe flesh using a melon baller; add to the citrus in the bowl.
  • Toss avocado with 1 tablespoon lemon juice in a small bowl. Remove from the juice; add to the bowl of citrus and melons.
  • Whisk olive oil, 1/4 cup lemon juice, and balsamic vinegar together in a bowl. Stir in 1/3 cup chopped mint, honey, salt, and black pepper. Pour over citrus and melon mixture; toss gently to prevent mashing avocado. Garnish with fresh mint leaves.

1 tablespoon frozen orange juice concentrate, thawed
2 teaspoons whole-grain Dijon mustard
1 teaspoon grated orange peel
1/2 teaspoon sugar
1/2 cup olive oil
2 large bunches watercress, tough stems trimmed
4 cups 3/4-inch pieces seeded watermelon
4 oranges, peel and white pith removed, each cut into 6 rounds
4 thin red onion slices, cut in half
3 tablespoons thinly sliced fresh mint

Steps:

  • Whisk first 5 ingredients in small bowl to blend. Gradually add oil and whisk until well blended. Season dressing with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring to room temperature and rewhisk before using.)
  • Divide watercress among 6 plates. Top watercress on each plate with watermelon, orange rounds, onion slices and mint, dividing equally. Drizzle salads with dressing and serve.
