3 tablespoons water
½ teaspoon vanilla extract
1 cup all-purpose flour
2 tablespoons all-purpose flour
1 tablespoon white sugar
¼ teaspoon salt
½ cup softened butter, cut into chunks
1 cup heavy cream
½ cup white sugar
1 (3 ounce) package cream cheese, softened
1 teaspoon vanilla extract
1 (11 ounce) can mandarin oranges, drained and patted dry
5 large fresh strawberries, hulled and sliced
1 ripe kiwi, peeled and thinly sliced
⅓ cup fresh blueberries
⅓ cup fresh raspberries

Steps:

  • Mix water and vanilla extract together in a small bowl.
  • Stir 1 cup plus 2 tablespoons flour, sugar, and salt together in a medium bowl. Cut in butter until mixture forms fine crumbs. Do not overmix, or pastry will be tough. Stir in enough vanilla water to pull dough together. Chill for 15 minutes.
  • Roll dough out into a 12-inch circle. Gently transfer to an 11-inch tart pan. Pat dough into place, cutting off edges and aligning pastry along the edges of the pan. Freeze pastry shell until firm, at least 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake pastry shell in the preheated oven until lightly browned, about 10 minutes. Prick any large bubbles with the tip of a knife. Allow to cool completely.
  • Meanwhile, make the filling. Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Beat sugar, cream cheese, and vanilla extract in a separate bowl until smooth. Fold in whipped cream.
  • Spread filling into the cooled tart shell, smoothing out to reach the edges. Arrange mandarin oranges, strawberries, kiwi slices, and berries over the top, covering as much of the filling as possible. Serve immediately or store in the refrigerator.

Mary Cadogan shows us how to make a classic French crème pâtissière - the perfect filling for these lovely summer fruit tartlets

300ml milk
1 vanilla pod
3 large egg yolks
50g caster sugar
1 rounded tbsp plain flour
knob of butter
300g shortcrust pastry
400g mixed summer fruit , such as small strawberries, raspberries, blueberries and redcurrants
icing sugar , for dusting
a few chopped pistachios , if you like

Steps:

  • To make the crème pâtissière, pour the milk into a pan. Split vanilla pod down its length using a small sharp knife (do not cut in half completely). Twist tip of the knife inside the pod to open out like a book at one end, then run the knife down its length to scrape out seeds. (See step 1)
  • Put the seeds and empty pod in a medium-sized pan with the milk and bring slowly to a gentle boil. Reduce the heat and simmer for a couple of mins. (Step 2)
  • Put egg yolks, sugar and flour into a bowl. Whisk with a hand electric mixer until the mixture becomes pale and fluffy - it should leave a trail that stays on the surface momentarily when the whisk blades are lifted. This whisking will take about 2 mins. (Step 3)
  • Pour about a third of the hot milk into the bowl, whisking on a slow speed all the time until it has all been mixed in. Now whisk in the remaining milk, removing pod. (Step 4)
  • Return the mixture to the pan, scraping it out of the bowl using a rubber spatula. Bring slowly to the boil, stirring all the time, until the custard is thickened, smooth and glossy. At first, it will look a bit lumpy, but persevere - keep stirring and it will become smooth. Reduce the heat and simmer for 2 mins, stirring. (Step 5)
  • Remove the crème pâtissière from the heat. Beat in the butter until it has melted, then scrape into a bowl. Cover the surface of the crème pâtissière directly with cling film (this will stop a skin forming). Leave to cool, then chill in the fridge until needed. (Step 6)
  • Heat oven to 190C/170C fan/gas 5. Divide the pastry into 8 equal pieces. Roll out each one to line a 7-8cm deep fluted tartlet tin, trim leaving a little pastry sticking up above the tin. Line each one with a paper cake case and add a layer of baking beans. Put on a baking tray and bake for 10 mins, then remove the paper and beans and bake for a further 5 mins until the pastry is crisp and golden.
  • Trim any pastry edges that need it with a small sharp knife. Remove from the tins and leave to cool on a wire rack.
  • Halve or quarter any large strawberries and remove the stalks from any redcurrants, then mix the fruits together. Fill the pastry cases with crème pâtissière and pile a generous layer of fruits on top. Dust thickly with icing sugar and scatter over some chopped pistachios, if you like.

1 1/2 cups all-purpose flour, plus extra for dusting
3/4 cup confectioners' sugar
2/3 cup almonds, ground
1/2 cup butter
1 egg yolk
1 tablespoon milk
1 cup cream cheese
confectioners' sugar, to taste, plus extra for dusting
12 ounces fruit, such as berries

Steps:

  • To make the dough, sift the flour and sugar into a bowl.
  • Stir in the ground almonds.
  • Add the butter and stir in until the mixture resembles breadcrumbs.
  • Add the egg yolk and milk and work in with a spatula, then mix with your fingers until the dough binds together.
  • Wrap the dough in plastic wrap and let chill in the refrigerator for 30 minutes.
  • Preheat the oven to 400 degrees Fahrenheit.
  • On a flour counter roll out the dough and use it to line 12 deep tartlets or individiual bioche pans (can also use muffing pans if you can get it to form correctly).
  • Prick the bottoms.
  • Press a piece of foil into each tartlet, covering the edges, and bake in the oven for 10-15 minutes, or until light golden brown.
  • Remove the foil and bake for an additional 2-3 minutes.
  • Transfer to a wire rack to cool.
  • To make the filling, place the cream cheese and sugar in a bowl and mix together.
  • Place a spoonful of filling in each tart shell and arrange the fruit on top.
  • Dust with sifted confectioners' sugar and serve.
  • Tip #1: You can use store bought tart shells or phyllo dough if you wish (I would recommend following the instructions for cooking that come with the packages).
  • Tip #2: You can substitute many different types of fillings, such as mousse, pudding, yogurt, etc.

4 ounces Shortcrust Pastry, recipe follows
2 ounces dark chocolate, melted
4 ounces cream cheese, at room temperature
1 tablespoon double cream
1/2 ounce caster (superfine) sugar
Vanilla essence
Fresh fruit (strawberries, raspberries, sliced peaches, etc.)
Apricot jam or red currant jelly, melted and sieved, to glaze
115g/4 ounces plain (all-purpose) flour
Salt
25g/1 ounce butter
25g/1 ounce lard
1 tablespoon freshly grated Parmesan cheese (optional)
Cold water

Steps:

  • Line tartlet tins with the pastry (use boat-shaped tins if you have them). Bake blind in a preheated oven at 375 degrees for 10 minutes. When cold, brush the inside of the tartlet cases with the melted chocolate and leave to harden.
  • Mix together the cream cheese and double cream until very smooth, then add the sugar and vanilla essence. Fill the tartlet cases with the cream mixture and arrange the fruit on top. Brush with the apricot or red currant glaze, depending on the fruit used, and leave to set.
  • Sift the flour and salt together and rub in the butter and lard until the mixture resembles bread crumbs. Add the cheese, if using, and bind with a little cold water. Chill for 30 minutes and then roll out and use as above.

10 Tbsp unsalted butter at room temperature
1 cup icing sugar, sifted
3 large egg yolks
1 tsp finely grated lemon zest
1 ¼ cup pastry flour
¼ tsp salt
⅔ cup raspberry purée
3 Tbsp lemon juice
6 large eggs
2 large egg yolks
1 cup sugar
1 cup unsalted butter, cut into pieces
2 tsp lemon zest
3 peaches or nectarines
3 apricots
1 Tbsp lemon juice
1 cup strawberries, hulled
1 cup raspberries
1 cup blueberries
1 cup seasonal fruit of your choice

Steps:

  • For crust, beat butter until smooth. Add icing sugar and lemon zest and cream together. Stir in egg yolks, one at a time, stirring well after each addition. Sift pastry flour and salt into butter mixture and stir just until dough comes together (turn out onto a board and bring together with your hands, if needed). Shape dough into a disc and chill for at least 1 hour.
  • On a lightly floured surface, roll out pastry to ¼ inch thick. Sprinkle a 9-inch fluted tart pan (with 1 ½ inch sides) with a removable bottom with a little flour and line with pastry. Trim edges and press pastry up, so it stands about ¼ inch higher than the sides of the pan. Dock pastry with a fork and chill 20 minutes.
  • Preheat oven to 350 °F. Bake pastry shell for 18 to 20 minutes, until edges are a light golden brown and center appears dry. Allow to cool.
  • For filling, whisk together 1/3 cup raspberry purée, lemon juice, eggs, yolks, and sugar. Whisk in butter and add lemon zest. Place bowl over a pot of simmering water and whisk steadily, but gently, until curd becomes thick and pale and creamy, about 10-15 minutes. Remove from heat and cool to room temperature. Stir in remaining 1/3 cup raspberry purée and pour into cooled pastry shell.
  • For fruit, slice peaches or nectarines and apricots and toss in lemon juice to prevent discolouration. Slice strawberries in half. Arrange fruit on chilled tart up to 2 hours before serving and chill until ready to serve.

1 cup dried unsweetened shredded coconut
1 cup old-fashion rolled oats
1/4 teaspoon sea salt
1 1/2 cups whole spelt flour
1/4 cup melted extra-virgin coconut oil
5 tablespoons maple syrup
2 teaspoons vanilla extract
1 1/2 cups plus 1 tablespoon apricot nectar or apple juice
5 teaspoons agar flakes
1 1/2 teaspoons arrowroot powder
1 teaspoon vanilla extract
1 large apricot, pitted, quartered and thinly sliced
8 cherries, pitted and sliced
2 fresh figs, halved and thinly sliced
1 large kiwi, peeled, quartered and thinly sliced
1 medium plum, pitted, quartered and thinly sliced
1/2 cup blueberries
1/2 cup black raspberries
1/2 cup raspberries

Steps:

  • For the crust: Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • Spread the coconut evenly on the prepared baking sheet and bake until deep golden, 4 to 5 minutes. Set aside to cool.
  • Increase the oven temperature to 350 degrees F. Line the tartlets molds with mini muffin liners and set aside.
  • Add half of the toasted coconut to a food processor with the oats and salt and pulse until finely ground. Transfer to a bowl, add the spelt flour and stir to combine. Drizzle in the coconut oil and mix until evenly combined. Add the maple syrup, vanilla and 1 tablespoon water, and mix until the dough comes together. The dough should hold together without being too sticky. If mixture is wet, set aside for 5 minutes for the oats to absorb more moisture.
  • Press some dough into each lined tartlet pan as thinly and evenly as possible. Prick the bottom with a folk a couple of times and bake until lightly golden and fragrant, 14 to 16 minutes. Remove from the oven and set aside to cool.
  • For the glaze: Add 1 1/2 cups of the juice and the agar to a small pot. Bring to a boil over high heat while whisking. Cover the pot and reduce the heat to low, and simmer until the agar dissolves, 10 minutes.
  • Dissolve the arrowroot in the remaining 1 tablespoon juice and whisk into the simmering juice mixture. Return to a boil, then remove from the heat and stir in the vanilla. Set to thicken and cool slightly, 10 minutes.
  • For the fruit filling: Place the sliced apricot into a medium bowl and toss with 3 tablespoons of the glaze. Spoon about 1 teaspoon of the glaze into four of the tartlet shells and divide the apricot between the shells. Repeat with the cherries, figs, kiwi, plum, blackberries, black raspberries and raspberries, and the remaining glaze until all the shells are filled. Store in the refrigerator until ready to serve.

4 cups plus 3 tablespoons all-purpose flour, plus more for dusting
1 teaspoon salt
1/2 cup plus 2 teaspoons sugar, plus more for sprinkling
3/4 pound cold (3 sticks) unsalted butter, cut into 1/8-inch pieces
6 plums or peaches, stones removed, sliced into 1/2-inch pieces
4 to 5 pints fresh berries
Milk, for brushing dough

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, combine 4 cups flour, salt, 2 teaspoons sugar, and half of the butter. Mix on medium speed until mixture resembles coarse meal, about 3 1/2 minutes. Add remaining half of the butter and 1 cup ice water; mix 20 seconds. Dough will be full of butter chunks. Turn out dough, and flatten into a 1-inch-thick disk. Wrap in plastic, and chill at least 1 hour.
  • Heat oven to 375 degrees. Toss stone fruit with 3 tablespoons flour and 1/2 cup sugar.
  • On a floured board, roll out dough about 4 inches larger than pan; transfer to pan. Toss berries with stone fruit. Pile fruit over dough; fold dough toward center. Brush dough with milk; sprinkle with sugar. Bake 30 to 40 minutes, until bubbling and crust is brown. Transfer to wire rack to cool. Serve warm or at room temperature.

Easy Summer Fruit Tart image

This is a fun fruit tart recipe that doesn't require too much baking and will work with almost any summer fruit. A great place to play with color palatte and shapes.

3/4 cup whole wheat pastry flour
1/2 cup all-purpose flour
2 tablespoons granulated sugar
1/2 cup chilled salted butter, cut into 8 pieces
1/4-1/3 cup cold water
1 (8 ounce) package cream cheese
3 tablespoons confectioners' sugar
1 lemon, juice and zest
peach, nectarines, berries, etc etc., whatever you like that is in season

Steps:

  • For the shell: pulse dry ingredients in food processor to combine. Add butter and pulse until pea sized crumbs form -- don't process too much. Pour in water gradually until dough forms into a ball. Turn out and roll into a circle about 15 inches in diameter. Move to cookie sheet lined in parchment paper. Fold over/pleat outer edge of the dough about 3/4 inch. Line the inside of the dough with a piece of foil, and add rice or beans or pie weights to prevent the crust from bubbling during baking. Bake at 375 for 25-35 minutes until crust is lightly browned. You can remove the foil/blind bake rig after 10 minutes.
  • For the filling - combine the ingredients and whip/beat in stand mixer until fluffy.
  • For the glaze -1/2 cup whatever kind of jelly melted in the microwave for ~30 seconds. Clearer colors are best. I used Rosé wine gelée from Whole Foods.
  • To assemble - let the shell cool to room temperature and then spread the filling inside the shell. Arrange fruit. Brush on glaze. Eat ASAP!

Use this crunchy, flaky tart recipe as a template for any ripe summer fruit you have, adjusting the sugar and cornstarch depending on how sweet and juicy the fruit is (see Tip). Made from store-bought puff pastry that's been coated in Demerara sugar, the crust caramelizes as it bakes, turning shiny and crisp enough to shatter when you bite down. And feel free to change up the seasonings and substitute 1/2 teaspoon ground spices or grated lemon zest for the vanilla. It's an easy, fuss-free dessert that seems like a lot more work than it actually is. For maximum flakiness, serve this on the same day that it's baked.

2 to 5 tablespoons granulated sugar (see Tip)

4 cups berries, or pitted and sliced stone fruit (peaches, nectarines, apricots, plums), or rhubarb (or use a combination of stone fruit and berries)
1 tablespoon lemon juice or mild vinegar, such as rice wine vinegar or balsamic
1 tablespoon honey, plus more as needed
1 tablespoon vanilla extract
All-purpose flour, for dusting the work surface
1 (14-ounce) package puff pastry, preferably made with butter, thawed if frozen, but still very cold
Whipped cream, crème fraîche or ice cream, for serving

Steps:

  • Put a rack in the center of the oven and heat oven to 400 degrees. Line a baking sheet with a silicone liner or parchment paper. Sprinkle 2 tablespoons Demerara sugar in an approximate 10-by-13-inch rectangle in the center of the liner or paper.
  • In a large mixing bowl, whisk together granulated sugar, cornstarch and salt. Add fruit, lemon juice, honey and vanilla. With a rubber spatula or large spoon, mix well, making sure fruit is coated with the cornstarch mixture. Set aside to macerate while rolling out dough.
  • On a lightly floured surface, roll the cold puff pastry out to form a 10-by-13-inch rectangle. Work quickly, as the pastry becomes sticky as it warms up. Transfer the dough to prepared baking sheet, laying it on top of the Demerara sugar. With a sharp knife, lightly score a 3/4-inch border around the edges of the puff pastry, making sure not to cut the pastry all the way through. Using a fork, prick the pastry all over inside the border at 1-inch intervals.
  • Give the fruit another toss to dissolve any honey that may have clumped. Arrange fruit mixture in an even layer on pastry within the border, pouring the juices from the bowl over the top. Sprinkle the top of the tart, including the fruit and pastry borders, with more Demerara sugar.
  • Bake until the pastry is puffed and deeply golden and the fruit is tender, about 30 to 40 minutes. Transfer the pan to a wire tack to cool for at least 15 minutes before serving (or up to 4 hours). If the fruit looks dry when the tart comes out of the oven, you can brush it with a little more honey while it's still warm. Serve with whipped cream, crème fraîche or ice cream.
