FIVE INGREDIENT PASTA TOSS



Five Ingredient Pasta Toss image

Pasta is tossed with white beans, roasted tomatoes, fresh basil, and a garlic infused olive oil. Serve with crusty bread to soak up the sauce and any leftover garlic olive oil. This isn't a hot pasta dish so it's perfect for summer.

¼ cup extra-virgin olive oil
2 cloves garlic, crushed
8 ounces farfalle (bow tie) pasta
1 (15 ounce) can seasoned small white beans, rinsed and drained
1 (14.5 ounce) can fire-roasted diced tomatoes, with juice
¼ cup chopped fresh basil leaves, or amount to taste

Steps:

  • Combine the olive oil and garlic in a small bowl. Set aside.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Place the pasta, beans, tomatoes, basil, and 2 tablespoons of the garlic olive oil in a large bowl; toss gently until combined. Serve the remaining olive oil at the table to drizzle over individual servings.

Tony is my husband. He brought home a recipe he had gotten from someone at work, and it was adapted over time to this recipe--so I named it Tony's Summer Pasta. The tomatoes and cheese are marinated in oil, basil, and garlic, and then tossed with the hot linguine. The tomatoes are warmed and the cheese melts ever so slightly, creating a simple but delectable meal.

1 (16 ounce) package linguini pasta
6 roma (plum) tomatoes, chopped
1 pound shredded mozzarella cheese
⅓ cup chopped fresh basil
6 cloves garlic, minced
½ cup olive oil
½ teaspoon garlic salt
ground black pepper to taste

Steps:

  • Combine tomatoes, cheese, basil, garlic, olive oil, garlic salt, and black pepper in medium bowl. Set aside.
  • Meanwhile, cook pasta according to package directions.
  • Drain pasta, and transfer to a serving bowl. Toss with tomato mixture. Serve.

This is a vegetarian dream. I love this dish more than ordinary spaghetti. You will never miss the meat!

Number Of Ingredients 10

6 tablespoons butter
1 medium onion, sliced in strips
2 tablespoons minced garlic
2 medium yellow squash (summer squash)
2 medium zucchini
1 quart whole tomato, drained
1 tablespoon sugar
1/2 cup parmesan cheese
12 ounces angel hair pasta, cooked al'den'te
1 tablespoon parsley

Steps:

  • Saute onion and garlic on med heat in 2 Tbs of butter. Cook until onions are tender.
  • While onions are cooking, slice the squash and zucchini in disks. Add to onions. Add 2 more Tbs butter. Cook until the squash is almost translucent.
  • Add tomatoes. Carefully chop tomatoes without cutting the squash. Stir.
  • Add sugar. Stir. Simmer 15 minutes.
  • Add remaining butter to the pasta and toss. Add parsley and toss again.
  • Stir in the Parmesan to the squash mixture until melted.
  • Top the pasta with squash.
  • Sprinkle with Parmesan if desired.

½ cup Italian-style salad dressing
1 tablespoon olive oil
2 tomatoes, chopped
2 cups cooked and cubed chicken
1 cup grated Parmesan cheese

Steps:

  • In a large pot with boiling salted water cook pasta until al dente. Drain.
  • In a large saucepan heat the Italian dressing and olive oil together over medium heat. Add drained spaghetti; toss well to coat. Add chopped tomatoes, chicken or turkey, and grated Parmesan cheese and toss lightly.
  • Serve warm.

1 (13.25 ounce) package whole wheat rotini pasta
½ pound fresh asparagus, trimmed and cut into 1-inch pieces
1 (8 ounce) package sugar snap peas, ends and strings removed
1 tablespoon olive oil
1 small onion, chopped
2 tablespoons lemon juice
1 teaspoon lemon zest
½ cup freshly grated Pecorino Romano cheese
¼ cup thinly sliced fresh basil
½ teaspoon salt
¼ tablespoon coarsely ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the whole-wheat rotini at a boil until just beginning to become tender, 3 to 5 minutes. Stir in asparagus and snap peas and cook until vegetables are bright green and pasta is tender, about 3 more minutes. Drain pasta and vegetables, reserving 1/2 cup of the cooking water. Transfer rotini, asparagus, peas, and the cooking water to a large serving bowl and keep warm.
  • Heat olive oil in a large skillet over medium heat; cook and stir onion until barely golden, 10 to 12 minutes; stir in lemon juice and lemon zest and cook until lemon zest is fragrant, about 2 minutes.
  • Toss onion mixture, Pecorino Romano cheese, and basil into the pasta and vegetables; season with salt and black pepper.

16 ounces rotini pasta
4 boneless skinless chicken breast halves, cut into bite size pieces
4 tablespoons olive oil
3 garlic cloves, minced
1 1/4 teaspoons salt
1 1/4 teaspoons garlic powder
1 1/4 teaspoons dried basil
1 1/4 teaspoons dried oregano
1 cup sun-dried tomato, chopped
1/4 cup parmesan cheese, grated (optional)

Steps:

  • Cook and drain pasta as directed.
  • While pasta is cooking, in a large pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked.
  • Add sun-dried tomatoes and cook for two minutes.
  • Remove from heat and toss with pasta.
  • Serve with grated Parmesan cheese if desired.
