Perfect for a date night at home, this creamy, rich pasta dish is filled with sun-dried tomatoes, mushrooms and peas in a creamy sauce.

Number Of Ingredients 11

1 lb fettuccine
2 tablespoons olive oil
8 oz baby bella mushrooms, sliced
1 1/4 cups heavy cream
3/4 cup milk
freshly grated nutmeg
salt and pepper
1/2 cup chopped sun-dried tomatoes in oil
1/4 cup freshly grated Parmesan cheese
1 cup frozen peas
1/4 cup sour cream

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and reserve.
  • Meanwhile, heat the olive oil in a large pan over medium heat. Add the mushrooms and cook until softened. Remove the mushrooms to a plate.
  • In the same pan, add the cream and the milk. Season with freshly grated nutmeg, salt and pepper to taste. Bring to a gentle simmer and let it cook for about 3-4 minutes. Stir in the sun-dried tomatoes, Parmesan cheese, frozen peas and reserved mushrooms. Gently stir in the sour cream.
  • Stir the drained pasta into the cream mixture. Stir to coat the pasta. Serve with additional Parmesan cheese, if desired.

16 ounces fettucine pasta (1 package)
1 cup reserved pasta water
2 Tablespoons olive oil
4 teaspoons minced garlic
½ cup sun dried tomatoes (diced)
14.5 ounces petite diced tomatoes (1 can, drained)
3 Tablespoons tomato paste
1 Tablespoon sugar
1 cup heavy whipping cream
½ cup sour cream
2 cups baby spinach
salt and pepper (to taste)

Steps:

  • Cook fettuccine according to package directions, reserving 1 cup of the pasta water; set aside.
  • While your pasta is cooking, add olive oil to a large pot over medium-high heat.
  • Saute garlic for 1-2 minutes.
  • Add sun-dried tomatoes, diced tomatoes, tomato paste and sugar, stirring until well combined.
  • Turn heat to medium-low and whisk in whipping cream and sour cream.
  • Let simmer and thicken for 5 minutes.
  • Add spinach to sauce and cook until wilted.
  • Add salt and pepper, to taste.
  • If sauce is too thick, use reserved pasta water to thin it out.
  • Add pasta to prepared sauce and toss until coated.

Fettuccine with Shrimp and Sun-Dried Tomatoes image

6 to 8 quarts water
1 tablespoon salt
1 pound dried fettuccine
3 tablespoons pine nuts
2 tablespoons extra virgin olive oil
16 to 20 medium, fresh shrimp, peeled and de-veined
Salt and freshly ground pepper to taste
1/2 cup sun-dried tomatoes, soaked in 1 cup hot water for 30 minutes, then drained and julienned
1 tablespoon chopped garlic
1/4 teaspoon red pepper flakes
1/4 cup fresh basil leaves

Steps:

  • Preheat the oven to 350 degrees.
  • Bring the water to a rolling boil in a large pot. Add 1 tablespoon salt and re-boil. Add the pasta to the boiling water and cook until al dente.
  • Place the pine nuts on a cookie sheet and put in the oven for about 3 minutes, until slightly browned. Set aside.
  • Meanwhile, stack the basil leaves and slice into julienne strips. Use a very sharp knife to avoid bruising the basil, causing it to turn black. Set aside.
  • Heat the oil in a large saute pan. Season the shrimp with salt and pepper and add the shrimp to the hot pan. Cook for 1 minute before turning and cooking on the other side. Add the tomatoes to the shrimp and cook for 2 minutes more. Remove the pan from the heat and add the basil, garlic, red pepper, and half the pine nuts. Adjust seasoning.
  • When pasta is al dente, drain and toss it in the saute pan with the shrimp/tomato/herb mixture. Divide among 4 plates and garnish each serving with the remaining pine nuts.

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Add 1 tablespoon olive oil and cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain, reserving 1 cup of pasta water, and set noodles aside.
  • Mix together Greek yogurt and sour cream in a small bowl.
  • Meanwhile, heat remaining 3 tablespoons olive oil in a skillet over medium-high heat. Add sun-dried tomatoes and garlic and saute until fragrant, about 2 minutes. Reduce heat to medium-low and mix in diced tomatoes, sugar, and tomato paste. Stir until well combined. Whisk in yogurt mixture swiftly. You'll want to slowly add it in, but whisk fast to get it all incorporated well. Increase heat to medium-high and simmer until sauce starts to thicken, 5 to 7 minutes. Season with salt and pepper.
  • Add baby spinach to sauce and cook until wilted, about 2 minutes. Add cooked fettuccine and remove skillet from heat. Toss to coat pasta with sauce. If sauce seems too thick, thin with some of the reserved pasta water, 1 tablespoon at a time. Top with crushed red pepper to taste.

Olive oil
1 pound ripe tomatoes, medium-diced
3/4 cup good black olives, such as kalamata, pitted and diced
1 pound fresh mozzarella, medium-diced
6 sun-dried tomatoes in oil, drained and chopped
5 sun-dried tomatoes in oil, drained
2 tablespoons red wine vinegar
6 tablespoons good olive oil
1 garlic clove, diced
1 teaspoon capers, drained
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan
1 cup packed basil leaves, julienned

Steps:

  • Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, mozzarella, and chopped sun-dried tomatoes.
  • For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt, and pepper in a food processor until almost smooth.

1 cup dry-pack sun-dried tomatoes
1/2 cup olive oil
4 garlic cloves, minced
1/2 teaspoon dried crushed red pepper
1 pound spaghetti, freshly cooked
1 cup freshly grated Parmesan
1/2 cup toasted pine nuts
Additional parmesan

Steps:

  • Place sun-dried tomatoes in small bowl. Add enough boiling water to just cover tomatoes. Let stand until tomatoes are soft, about 1 minute. Drain. Coarsely chop tomatoes.
  • Heat olive oil in heavy small skillet. Add sun-dried tomatoes, garlic and dried crushed red pepper. Sauté until garlic is just golden, about 3 minutes. Transfer mixture to large bowl. Add spaghetti and 1 cup Parmesan. Toss well. Sprinkle with pine nuts. Serve, passing additional parmesan separately.
