SUNCHOKE AND SPLIT PEA SOUP
Steps:
- In a large Dutch oven over medium heat, saute the pancetta until just starting to brown. Remove from the pot, and drain on a paper towel lined plate. Increase the heat to medium-high and add the leeks, sunchokes, pasilla pepper, onion and carrots. Let cook for 5 to 6 minutes, then add in the garlic and cook for 2 to 3 minutes more. Make a well in the middle of the veggies, add the olive oil, and cook for 1 minute, then add the ham hocks. Cook the ham hocks, turning every 2 minutes, until all sides are warm and starting to lightly brown. Add the chicken stock and the peas. Bring to a simmer and cook for 30 to 45 minutes, stirring occasionally. Stir in freshly cracked pepper, to taste, and remove the ham hocks from the pot to a cutting board. Let them cool for a few minutes and with a fork, shred the meat and add to the soup. Stir in the heavy cream and the vinegar. Ladle the soup into serving bowls and serve with the goat cheese croutons. Sprinkle with rendered pancetta and a crack of black pepper and serve.
- Combine all the ingredients, except the panko, in a small bowl.
- Form into a log shape and wrap in plastic wrap. Freeze for 30 minutes or until firm. While in freezer, preheat the oven to 375 degrees F.
- Remove the cheese from the freezer and slice into 1/4-inch rounds. Flatten each slice with your palm or hand, and press into the panko crumbs. Arrange on a silicone baking mat or parchment lined baking sheet. Bake for 8 minutes, then turn over and continue to bake for 6 to 8 minutes more. Cool and store in airtight container in the refrigerator.

Steps:
- In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.
- Once peas are soaked, add ham bone, onion, salt, pepper and marjoram. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
- Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

Soup keeps up to 4 days, chilled in an airtight container, or frozen up to 3 months. Gremolata can be made up to 4 days ahead and chilled in a separate airtight container.

- Heat oil in a large pot over medium heat. Add onion, carrot, and celery; cook until softened, about 6 minutes. Stir in garlic; cook 30 seconds more. Stir in broth, split peas, thyme, bay leaf, salt, and pepper; bring to a boil. Reduce heat to low; simmer, partially covered, until peas are falling apart, about 1 1/4 hours.
- Meanwhile, stir together parsley, sun-dried tomatoes, garlic, paprika, and salt in a small bowl.
- Remove thyme sprigs and bay leaf from soup; discard. Add more broth or water to thin as desired, and more salt to taste. Serve topped with gremolata.

- Place dried split peas, ham hock, and bacon into slow cooker; pour in chicken broth and 3 1/2 cups water.
- Cover cooker and cook on High until peas are tender and broken apart, 3 to 4 hours. Stir in more water as needed to prevent soup from burning on the bottom. Stir occasionally throughout cooking.
- Stir potatoes, carrots, leek, onion, celery, and garlic into soup; mix in more water, if needed. Cover and cook soup on High for 2 more hours.

- In a large pot, combine peas, broth, water, and soup mix. Stir well. Add carrots, onions, celery, leeks, garlic, mustard, tamari, and balsamic vinegar. If mixture seems too thick, pour in a little more water.

- rinse the split peas in cold water, then place in a large kettle with all the remaining ingredients except the sausage and bitters,.

- Set Sun Oven out to preheat. Combine oil and vegetables in a large pot, cover and cook in the Sun Oven until softened, about 2o minutes (alternately sauté the vegetables stovetop). - In a 5-quart dutch oven over medium heat, heat bone, split peas, carrots, onion, and water to boiling.
- Tie allspice, peppercorns, and bay leaf in a piece of cheesecloth. Add to bone mixture.
- Reduce heat to low; cover; simmer 1 hour. Discard spice bag; add salt if necessary.
- Remove bone to cutting board. Cut off meat and discard done.
- Cut meat into bite-size chunks and return to soup for serving.

MOM'S SOUTHERN STYLE SPLIT PEA SOUP
This soup's flavor is very different from your traditional pea soup. It is not sweet but has a spicy flavor very different from the 'savory' flavor of most pea soups. I love any pea soup but this one is the one I yearn for. Sometimes I add even more carrot if I think we need more carrots in our diet.

- You may substitute a meaty hambone, diced smoked ham, cut up smoked pork butt, or, if like my husband prefers and no pork is allowed, use smoked turkey.
- Put all ingredients except salt into large heavy-bottomed stock pot.
- Cook over low-med. heat. Stir occasionally.
- Simmer until meat falls off bone and split peas have become mush. Be careful not to burn. Stir more often as soup thickens.
- Remove bone, bay leaves and spices.
- Puree and test for salt. Add salt if needed and cook an additional 15 minutes. Adjust water if necessary.
- The soup should be very thick. It becomes almost paste when cold. You may need to add some water to reheat.
- This soup freezes very well.
- If you leave out the cloves you won't have this special recipe. They are the secret ingredient.
- I'm guessing on servings and amount. it depends on how much you cook it down.
