2 cups flour
1 cup cornmeal
1 cup sugar
1 ½ tablespoons baking powder
1 teaspoon salt
½ cup (8 tablespoons) butter (melted)
½ cup oil
1 ¼ cups milk
3 large eggs
honey and extra butter for serving (optional)

Steps:

  • Preheat oven to 350 degrees and grease a 9x13 inch pan.
  • In a large bowl whisk together flour, cornmeal, sugar, baking powder, and salt.
  • In a medium bowl mix together butter, oil, milk, and eggs.
  • Add wet ingredients to dry ingredients and mix until combined.
  • Transfer batter to your prepared pan. Bake for 35-45 minutes until golden and a toothpick inserted in the middle comes out clean or with only a few crumbs (no wet batter).
  • Allow to cool for 15-20 minutes in the pan before cutting into squares and serving. Serve with butter and honey if desired. Store in airtight container at room temperature up to 3 days or in the fridge for 1 week.

1 teaspoon salt
3 1/2 teaspoons baking powder
1/3 cup neutral oil or melted butter
1 large egg
1 cup milk

Steps:

  • Grease a 9-inch round cake pan or cast iron skillet well and set aside. Preheat the oven to 400 degrees.
  • In a medium mixing bowl, add the flour, cornmeal, sugar, salt, and baking powder. Whisk to combine well.
  • Make a well in the center of your dry ingredients and add your oil or butter, milk, and egg. Stir just until the mixture comes together and there are only a few lumps remaining.
  • Pour the batter into the prepared pan and bake for 20-25 minutes until the top is a deep golden brown and a toothpick inserted into the center comes out clean.

1 (1 1/2 ounce) packet chili seasoning mix or 1 (1 1/2 ounce) packet taco seasoning mix
2 (8 ounce) cans tomato sauce
1 (15 1/4 ounce) can no-salt-added corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (12 fluid ounce) can nestle Carnation Evaporated Milk, divided
1 (4 ounce) can diced green chilies, drained (optional)
2 (8 1/2 ounce) boxes dry corn muffin mix
2 large eggs
1 sliced avocado (optional)
1 (8 ounce) container salsa (optional)
1 (8 ounce) container sour cream (optional)

Steps:

  • PREHEAT oven to 400°F Grease 13 x 9-inch baking dish.
  • COOK turkey in large skillet over medium-high heat until turkey is no longer pink; drain. Stir in chili seasoning, tomato sauce, corn, beans, 3/4 cup evaporated milk and chilies. Bring to a boil, reduce heat. Simmer for 5 minutes, stirring occasionally. Pour mixture into prepared baking dish.
