1 tablespoon neutral oil, such as grapeseed, plus additional for brushing
1/2 cup chopped white onion (from about 1/2 small onion)
1/4 cup apple cider vinegar
1/4 cup ketchup
1/4 cup soy sauce
1/4 cup brown sugar
1 tablespoon paprika
2 peaches, sliced in half and pits removed
4 skinless chicken breasts
Kosher salt and freshly cracked black pepper
1 medium sweet potato, thinly sliced
Olive oil, for drizzling
Tomato Cucumber Salad, recipe follows
Lime wedges, for serving
1 pound heirloom tomatoes, cored and chopped
1/2 medium English cucumber, seeded and chopped
1/4 cup thinly sliced red onion
2 tablespoons avocado oil
1 teaspoon minced fresh ginger
1 clove garlic, minced
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon ground turmeric
Juice of 1/2 lime
Kosher salt and freshly cracked black pepper
2 cups arugula

Steps:

  • Heat the oil in a small skillet over medium heat, then add the onions and caramelize, stirring occasionally, until soft and deeply golden brown, 10 to 15 minutes. Deglaze with the cider vinegar and reduce by about half, 3 to 5 minutes. Whisk in the ketchup, soy sauce, brown sugar and paprika, then bring to a boil and let simmer for 5 minutes. Remove from the heat and let cool.
  • Meanwhile, preheat a grill or a grill pan over medium-high heat. Lightly oil the grill grates, then grill the peaches, flipping once, until they get a nice dark char and are soft, 3 to 4 minutes per side.
  • Place the cooled onion mixture and grilled peaches in a blender. Puree until smooth.
  • Sprinkle chicken breasts with salt and pepper. Place chicken on the hot grill and cook for approximately 5 minutes; flip chicken and coat grilled side of chicken with the peach BBQ sauce. Allow chicken to cook for another 5 minutes, then flip again, coating with more peach BBQ sauce.
  • Cook chicken until it reaches an internal temperature of 165 degrees F, another 4 to 5 minutes on each side.
  • Meanwhile, toss the sweet potato slices in a bowl with olive oil and salt and pepper to taste. Grill, flipping once, until nicely charred and tender, 3 to 5 minutes per side.
  • Arrange a few slices of grilled sweet potato on a plate, then top with some Tomato Cucumber Salad and lay a chicken breast on top. Repeat with remaining ingredients. Serve with lime wedges.
  • Combine the tomatoes, cucumbers, onion, avocado oil, ginger, garlic, the spices and lime juice in a large bowl, then season with salt and pepper. Toss well, then toss with the arugula.

6 bone-in chicken breast halves, with skin
1 tablespoon Worcestershire sauce
1 tablespoon hickory-flavored liquid smoke
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons garlic powder
2 teaspoons dried thyme
2 teaspoons dried oregano
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Arrange chicken pieces in a lightly greased 9x13 inch baking dish, allowing room between pieces. Drizzle with Worcestershire sauce and liquid smoke, then sprinkle with chili powder, cumin, garlic powder, thyme, oregano and salt and pepper to taste.
  • Cover dish with aluminum foil and bake for 1 to 1 1/2 hours, or until chicken is cooked through and juices run clear.

1/2 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
8 boneless skinless chicken breast halves (5 ounces each)
1/4 cup canola oil
2 cups peach preserves
1 cup chopped onion
1 cup barbecue sauce
1/4 cup soy sauce
2 medium green peppers, julienned
2 cans (8 ounces each) sliced water chestnuts, drained
Hot cooked rice

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. , In a large skillet, brown chicken in oil in batches on both sides. Return all to skillet. In a large bowl, combine the preserves, onion, barbecue sauce and soy sauce; pour over chicken. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Add green peppers and water chestnuts. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until a thermometer reads 170°. Serve immediately with rice; or cool chicken and transfer to a freezer container and freeze for up to 3 months., To use frozen chicken: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before reheating. Cover and bake at 350° for 50-60 minutes or until bubbly. Serve with rice.

14 ounces ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

8 chicken pieces
1 (284 ml) can sliced peaches
50 ml water
50 ml lime juice
25 ml brown sugar
5 ml dry mustard
2 ml nutmeg
2 ml salt
5 ml butter
2 onions, sliced

Steps:

  • Place chicken pieces in a heavy plastic bag and set in glass bowl.
  • Drain peaches, reserving syrup. Cover peaches and set aside.
  • In a small bowl, combine peach syrup, water, lime juice, sugar, mustard, nutmeg and salt; pour over chicken pieces and close bag tightly.
  • Marinate in refrigerator 4 to 6 hours. Remove chicken reserving marinade.
  • Build a medium fire in a barbeque or electric grill to medium.
  • Place chicken on greased grill.
  • Barbeque for 10 minutes on each side.
  • Brush with marinade and continue barbequing turning occasionally and brushing with marinade until chicken is tender and browned on both sides. About 20 to 25 minutes.
  • During the last 5 minutes of cooking time, melt butter in a small pan on side of grill. Sauté the onions and minutes and keep warm, add the peaches.
  • Serve the chicken pieces topped with onion and peace slices.

I found this recipe as a sample in a flyer I got to buy a cookbook. It's a great combination of flavors and is good served over rice. You can substitute margarine easily for the butter.

3 whole chicken breasts, halved
1/2 cup flour
2 tablespoons butter
2 tablespoons cooking oil
1 1/2 cups orange juice
2 tablespoons white vinegar
2 tablespoons brown sugar
1 teaspoon basil
1/2 teaspoon nutmeg
1 (16 ounce) canned peach halves, drained

Steps:

  • Shake chicken pieces in bag with flour and salt & pepper (to taste); brown in butter and oil.
  • Place browned chicken in a greased 3-quart casserole dish.
  • Combine orange juice with vinegar, brown sugar, basil and nutmeg and pour over chicken.
  • Cover (aluminum foil works great) and bake at 375 degrees F for 1.25 hours or until tender, but baste often.
  • Then place peach halves between chicken pieces, baste well and bake uncovered for 15 minutes longer.

1 Tablespoon vinegar
1 Tablespoon ground ginger
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup barbecue sauce
4 boneless skinless chicken breasts

Steps:

  • In a microwave safe bowl, combine peach preserves, vinegar, ginger, salt, pepper, and barbecue sauce.
  • Microwave for 1 minute stirring halfway through.
  • Place chicken in a zip-loc bag, or container that has a lid.
  • Poor the mixture over the chicken.
  • Seal bag or container and refrigerate for 6-24 hours.
  • Occasionally turn chicken in bag or container for best taste and coverage.
  • Lightly grease the grill before heating.
  • Heat grill to medium.
  • Turn chicken every 4 or so minutes until fully cooked.
