STEAK TACOS WITH TOMATILLO SALSA



Steak Tacos with Tomatillo Salsa image

Number Of Ingredients 13

1 1/2 teaspoons cumin seeds
2 cloves garlic
4 serrano chile peppers, halved (remove seeds for less heat)
3 tablespoons vegetable oil, plus more for the grill
Juice of 4 limes (about 1/3 cup)
2 tablespoons packed light brown sugar
Kosher salt and freshly ground pepper
2 pounds skirt steak, cut in half
1/2 small white onion, diced
3 tomatillos (in their husks)
3/4 cup fresh cilantro
16 corn tortillas
Grated Cotija cheese and/or thinly sliced radishes, for topping

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Add the cumin seeds and toast, stirring occasionally, about 1 minute; transfer to a bowl. Add the garlic and chiles to the skillet. Cook, turning occasionally, until soft and blackened in spots, about 5 minutes. Transfer to a food processor and let cool. Add the cumin seeds, vegetable oil, 1/4 cup lime juice and the brown sugar and puree until smooth. Season with 1 1/2 teaspoons salt and a few grinds of pepper. Transfer to a resealable plastic bag and add the steak, shaking well to coat. Refrigerate, 1 to 4 hours.
  • Soak the onion in a bowl of cold water. Meanwhile, wipe out the skillet and heat over high heat. Cook the tomatillos, turning, until well charred, about 7 minutes. Transfer to a plate and let cool. Remove the charred husks and roughly chop the flesh. Drain the onion. Wipe out the food processor; add the tomatillos, onion, cilantro and the remaining 1 to 2 tablespoons lime juice and puree until smooth. Season with 3/4 teaspoon salt and a few grinds of pepper; set aside.
  • Meanwhile, bring the steak to room temperature, about 30 minutes. Preheat a grill to high. Remove the steak from the marinade and shake off any excess. Lightly oil the grill, then grill the steak until charred on the bottom, about 5 minutes. Flip and cook until charred on the other side, 1 to 3 more minutes. Transfer to a cutting board and let rest 10 minutes.
  • Warm the tortillas on the grill. Thinly slice the steak against the grain. Double up the tortillas and fill with the steak and tomatillo salsa. Top with cheese and radishes.

1 tablespoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
1 lb beef flank steak, trimmed of fat
1 cup chopped plum (Roma) tomatoes (about 2 medium)
1/4 cup chopped red onion
1 avocado, pitted, peeled and chopped
1/8 teaspoon salt
8 white corn tortillas (6 inch)

Steps:

  • Squeeze limes into measuring cup; reserve 1 tablespoon juice for the salsa. In heavy-duty resealable food-storage plastic bag, mix remaining lime juice (about 1/4 cup), the cumin, 1/4 teaspoon salt, the pepper and garlic. Add beef; seal bag and turn to coat beef. Refrigerate 1 hour to marinate, turning occasionally.
  • Meanwhile, in medium bowl, mix tomatoes, onion, avocado, reserved 1 tablespoon lime juice and 1/8 teaspoon salt; toss to coat.
  • Set oven control to broil. Remove beef from marinade; discard marinade. Place beef on rack in broiler pan. Broil with top 4 to 6 inches from heat 10 to 15 minutes or until desired doneness, turning once. Let stand 5 minutes. Cut diagonally across grain into very thin slices.
  • Warm tortillas as directed on package. Divide steak strips among tortillas; top each with about 1/4 cup avocado salsa; fold in half.

2 teaspoons kosher salt
2 1/2 teaspoons New Mexican or other mild chile powder
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cumin
1 large garlic clove, finely grated or minced
Finely grated zest of 1 lime (cut lime into wedges for serving)
2 1/2 pounds skirt steak (usually 2 steaks)
1 white onion, peeled and sliced into 1-inch-thick slices
2 large garlic cloves, unpeeled
2 jalapeños
1 quart cherry tomatoes, quartered
1 avocado, diced
1/4 cup chopped cilantro leaves and stems
2 teaspoons fresh lime juice, more to taste
3/4 teaspoon kosher salt, more to taste
Corn or flour tortillas, for serving
Sliced radishes, for serving
Mexican crema or sour cream, for serving (optional)

Steps:

  • Prepare the steak: In a small bowl, mix together the salt, chile powder, coriander, cumin, garlic and lime zest. Rub mixture all over the steaks, cover and refrigerate for at least 1 hour or preferably overnight.
  • Prepare the salsa: Light the grill or heat to medium-high (or heat the broiler). Grill onion, garlic and 1 jalapeño until tender and charred on all sides, 5 to 10 minutes (or place on a broiler pan and broil). Remove from heat until cool enough to handle, then roughly chop onions, peel garlic and remove seeds and stem from jalapeño.
  • Transfer grilled onion, garlic and jalapeño to a blender or mini food processor. Halve the fresh jalapeño and seed it, if desired, then add it to the blender. Process to a chunky paste. Scrape into a serving bowl and toss with tomatoes, avocado, cilantro, lime juice and salt.
  • Add more charcoal to the grill, if needed, and grill the steaks until done to taste, about 2 minutes per side for rare (or broil). Let meat rest on a cutting board covered with foil for at least 7 minutes. Meanwhile, grill or broil the tortillas until warm.
  • To serve, slice the meat across the grain, and serve with the warm tortillas, radishes, lime wedges, salsa and crema. Let people assemble their own tacos at the table.

2 tablespoons olive oil
1 tablespoon minced garlic
Tomatillo Salsa
16 purchased taco shells
1 large bunch watercress, trimmed

Steps:

  • For Sour Cream:
  • Whisk all ingredients in medium bowl to blend. Season with salt. (Can be made 1 day ahead. Chill.)
  • For Shrimp:
  • Combine chili powder and paprika in large bowl. Add shrimp; toss to coat. Let stand 5 minutes. Heat oil in heavy large skillet over high heat. Add garlic and sauté until fragrant, about 1 minute. Add shrimp; sauté until opaque in center, about 5 minutes. Season with salt and pepper. Transfer to a small bowl.
  • Preheat oven to 350°F. Arrange taco shells on heavy large baking sheet. Bake until hot, about 8 minutes. Place shells in napkin-lined basket. Arrange half of watercress on platter. Top with shrimp. Chop remaining watercress. Place in small bowl. Place sour cream, salsa, avocados and chopped watercress in separate bowls.

⅓ cup soy sauce
¼ cup olive oil
1 small lime, juiced
3 tablespoons white vinegar
2 cloves garlic, minced

½ teaspoon cayenne pepper

1 (12 ounce) package tortillas

Steps:

  • Combine soy sauce, olive oil, lime juice, vinegar, garlic, salt, black pepper, white pepper, garlic powder, oregano, cayenne pepper, cumin, and paprika in a container. Place flank steak in the marinade and refrigerate for 8 to 24 hours.
  • Mix mango, avocado, lime juice, jalapeno, red onion, and cilantro together to make the salsa.
  • Set an oven rack at least 6 inches from the heat source and preheat the oven's broiler.
  • Remove flank steak from marinade and pat dry with paper towels.
  • Broil flank steak on high, flipping at the halfway mark, until steaks are beginning to firm and are hot and slightly pink in the center, about 18 minutes. An instant-read thermometer inserted into the center should read at least 130 degrees F (54 degrees C).
  • Cut flank steak into small cubes. Wrap 8 tortillas in a paper towel and heat in the microwave until soft, 20 to 30 seconds. Serve steak on tortillas.

1 lb beef skirt, chopped
1 lb shrimp, deveined
10 cloves garlic, peeled
1 tablespoon ground cumin

freshly ground black pepper, a dash
1 avocado, diced
½ onion, finely chopped
1 tomato, chopped

Steps:

  • In two separate bowls, combine seasonings for the meat (bowl 1) and shrimps (bowl 2). Then, add meat to bowl #1, shrimps to bowl #2, and marinate for 30 minutes. After marinating, sear meat in a cast-iron skillet on low heat, set aside, and saute the shrimps. Once done, set aside in a separate bowl.
  • Warm tortillas on a grill or nonstick skillet and place on plates.
  • In a separate bowl, combine ingredients for the guacamole and mix thoroughly, mashing the avocado until a spread forms.
  • Assemble tacos by dividing meat, shrimps, and guacamole among your corn tortillas.

  • 1. Combine salt, lime zest, chipotle powder, garlic powder, onion powder, dried oregano, cumin and pepper. Rub to coat the steaks and marinate 1-4 hours in the fridge. Remove the steaks and set them out at room temp for 45-60 minutes before cooking.
  • 2. Preheat oven to 325°F. Heat a cast iron skillet on high until it smokes. Place the steaks in the pan (cook in two batches if needed to avoid crowding and steaming). Sear all four sides of each steak 1-2 minutes or until a crust forms. Place steaks on the baking sheet with a cooling rack insert (an insert will protect the seared crust on the bottom side and allow for even cooking). Allow to sit for 5-7 minutes, then place in the oven. Remove the steaks when they reach an internal temp of 130°F. Allow to rest for ten minutes while you get the tortillas ready.
  • 3. Grill the tortillas on both sides. You can do this on a grill over direct heat, directly over a gas flame on a stove or in a skillet. After the tortillas are grilled, wrap them in a barely damp kitchen towel, place them on a plate and put them in the oven to keep them warm.
  • 4. Slice the steak very thinly, cutting across the short side of the steak. Top with tomatillo salsa, cheese, crema, cilantro, lime and a dash of hot sauce. Start with just enough slices for a first serving all around, so the steak will still be warm when people come back for seconds and thirds.
