12 asparagus
8 oz cheddar cheese (block)
4 chicken breasts (boneless, skinless)
1 teaspoon salt (coarse kosher )
1 teaspoon ground black pepper
1/2 cup pesto
4 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 350°F (175°C).
  • Wash asparagus and trim off the end, about 2 inches. Then cut each stalk in half. If the asparagus is thick, slice it vertically as well.
  • Slice the cheese into 8 thin slices.
  • To prepare the chicken: place each chicken breast between two plastic wraps and pound it with a meat tenderizer until chicken is evenly thin, about 1/2-inch thick.
  • To make the rolls: salt and pepper chicken breasts and spread a tablespoon of pesto on each chicken breast. Place 2 stalks of asparagus and 2 slices of cheese on each chicken. Carefully roll the chicken breasts. Secure the seams with toothpicks.
  • Place stuffed chicken breasts the seam side down on a baking sheet, lined with a parchment paper. Spread more pesto on the outside and sprinkle more Parmesan cheese.
  • Bake for 25 minutes, or until the chicken registers 165°F internal temperature. If needed, broil for 2-3 minutes to give a nice golden color.
  • Cool slightly, remove the toothpicks and serve.

2- 2 ½ cups (12 oz.) shredded cooked chicken
¾ cup (2 oz.) crumbled cooked bacon
8 oz. cream cheese-softened to room temperature
1 ¼ cup (4 oz.) shredded Cheddar cheese
½ cup Classic BBQ sauce (or more if needed)
1 small green onion-sliced
1 small red onion-diced
1 ½-2 Tbsp. chopped fresh parsley
¼ - ½ tsp. garlic powder (to taste)
Freshly ground black pepper and salt to taste
4 large flour tortillas (10 inches diameter)

Steps:

  • Place all ingredients together (except tortillas) in a large bowl and stir with a wooden spoon until evenly combined. If the mixture is too dry add more BBQ sauce. It should be thick and sticky, but spreadable.
  • Spread the mixture over tortillas, roll up tightly, slice in ½ - ¾ inch thick slices, arrange on a plate and serve.
  • Store leftovers in the fridge.

1/4 cup plus 2 tablespoons tomato paste (from a 6-ounce can)
1 cup soy sauce
1 cup distilled white vinegar
3/4 cup sugar
3/4 cup minced onion (about 1 medium)
1/3 cup minced serrano or jalapeño chiles with seeds
1/4 cup minced garlic (about 9 large cloves)
Chicken:
6 large chicken drumsticks (about 1 1/2 pounds)
6 large chicken thighs (about 2 pounds), trimmed of any excess fat and skin
Lime wedges for serving

Steps:

  • Stir together water and tomato paste in a 2 1/2- to 3-quart heavy saucepan until smooth, then stir in remaining sauce ingredients. Bring mixture to a boil, stirring, then reduce heat and briskly simmer, stirring occasionally, until sauce is reduced to 2 1/4 cups, 50 to 60 minutes. Stir frequently toward end of cooking to prevent sticking. Reserve 1 cup sauce for serving.
  • Prepare grill for indirect-heat grilling over medium-hot charcoal (medium-high heat for gas grills; see Grilling Procedure ).
  • Pat chicken dry (do not season with salt and pepper). Lightly oil grill rack and place chicken, skin side down, on area with no coals underneath (over turned-off burner if using gas). Grill, covered, turning once, until chicken registers 165°F, 22 to 25 minutes. (Chicken may appear pale; no cause for worry.)
  • Brush generously all over with some of sauce, then move chicken directly over coals (turned-on burners if using gas). Grill chicken, covered, turning and moving to area with no coals or heat underneath if flare-ups occur, until browned, 3 to 5 minutes more.
