SWEET AND SOUR MEATBALLS II
I got this recipe from my mother-in-law shortly after I was married. Now it is a favorite of our kids. I like to serve it over rice.

Steps:
- In a large bowl, combine beef, egg, onion, bread crumbs, salt and pepper. Roll into meatballs about 1 to 1 1/2 inches in size.
- In a large skillet over medium heat, saute the meatballs until browned on all sides.
- In a separate medium bowl, mix together the water, vinegar, ketchup, cornstarch, sugar and soy sauce. Pour over the meatballs, and allow sauce to thicken. Continue to heat until the sauce just starts to bubble.

- In a medium bowl, combine the ground beef, egg, bread crumbs and onion. Mix thoroughly and shape into golf ball-sized balls.
- In a large skillet over medium heat, gently brown the meatballs and set aside.
- In a large saucepan, combine the brown sugar, flour, water, white vinegar and soy sauce. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.

- Heat oven to 400°F. In large bowl, mix beef, onion, bread crumbs, milk, salt, pepper and egg. Shape mixture into thirty 1-inch meatballs. In ungreased 13x9-inch pan, place meatballs.
- Bake uncovered about 15 minutes or until meatballs are no longer pink in center and thermometer inserted in center reads 160°F.
- In 2-quart saucepan, mix meatballs and sweet-and-sour sauce. Heat to boiling over medium-high heat, stirring occasionally; reduce heat. Cover and simmer about 15 minutes, stirring occasionally, until sauce and meatballs are hot. Serve hot with toothpicks.

SWEET AND SOUR MEATBALLS
My Mom's sweet and sour meatballs recipe. These meatballs are baked in the oven in a retro sweet and sour sauce that can't be beat!

- Preheat your oven to 375 °F
- Mix the sauce ingredients together in a medium sized sauce pan until fully combined. Bring to a low rolling boil, and cook until it thickens. Remove from the heat and set aside.
- Combine the meatball ingredients : breadcrumbs, garlic, salt, pepper, egg, onions and ground beef together in a stand mixer bowl. Use the paddle attachment and mix on low until combined. This makes for the BEST distribution of egg and crumbs through the meat!
- Roll the meat mixture into meatballs, whichever size you want. I prefer slightly larger ones, they don't dry out as quickly.
- Pop them into the 375 degrees oven and start them cooking.
- After about 20 minutes, take the meatballs out for a second, and drain the fat out of them.
- Now you can cover those meatballs up with sauce. Pour the sauce over the meatball, covering them completely.
- Finish cooking them until done, and they look oh-so saucy and delicious. This can take up to another 20-30 minutes depending on the size of your meatballs.
- When cooking meatballs I like to insert a thermometer in them and make sure they have reached a temp of at least 165 degrees. With all the beef recalls lately, it's far better safe than sorry!
- I love sweet and sour meatballs on rice, especially bad-for-you, white rice! Serve with the side of your choice.

- Combine ground beef, breadcrumbs, celery, parsley, egg and 1/2 teaspoon pepper in medium bowl. Add 1 1/2 tablespoons soup mix; blend well. Using moistened hands, form mixture into 1-inch-diameter balls and place on sheet of foil.
- Combine chili sauce, 3/4 cup water, raisins, vinegar, sugar and remaining soup mix in heavy large pot. Bring to simmer over medium-low heat. Drop meatballs into sauce. Cover pot and simmer until meatballs are cooked through and sauce thickens, stirring occasionally, about 30 minutes.
SWEET-AND-SOUR MEATBALLS
Yield serves 7 or 8. serving size: 3 small meatballs with sauce over 1/2 cup cooked rice

- Combine the breadcrumbs, onion, salt, and pepper with 1 1/2 cups water in a large bowl. Let stand for 5 to 10 minutes.
- Lightly beat the eggs in a separate small bowl. Add the eggs, ground beef, pork, and tomato sauce to the breadcrumb mixture. Mix well.
- Shape into small balls (20 to 30).
- Preheat the oven to 350°F.
- Heat the oil in a large skillet. Brown the meatballs in the oil. Remove the meatballs to a roasting pan and pour out the fat in the skillet.
- Combine 1 1/2 cups water and the stock in the skillet. Stir and pour over the meatballs.
- Cover the roasting pan with aluminum foil and bake for about 20 minutes.
- Meanwhile prepare the sweet-and-sour sauce. In a large saucepan, combine 4 cups water, the vinegar, brown sugar, and soy sauce and bring to a boil.
- Thicken with the cornstarch mixed with 1/4 cup cold water and cook until the sauce is thick and clear.
- Remove the meatballs from the oven and pour the sweet-and-sour sauce over them. Return them to the oven for 10 minutes.
SWEET-AND-SOUR MEATBALLS
These meatballs can also be made with ground venison instead of the ground beef - they're delicious either way! The recipe is great for parties or other social gatherings because it's simple to make and can easily be doubled.

- Cook peas and carrots in boiling water until tender.
- Form ground beef into small balls.
- In bowl, mix together eggs, flour, salt and pepper.
- Roll ground beef balls into above mixture.
- In frypan, heat oil and brown balls; set aside.
- Combine 1/2 a tablespoon of oil with chicken stock, diced capsicum and pineapple pieces.
- Cook on medium heat for about 10 minutes.
- Add rest of ingredients, stirring until boils
- Once thickened, add meatballs and simmer for about 15 minutes.
