SWEET AND SOUR PEPPERS



Sweet and Sour Peppers image

This is a really quick side dish, and it's really tasty. Sometimes I eat it as a main dish over rice.

Number Of Ingredients 15

1/4 cup fresh lemon juice
3 tablespoons tamari soy sauce
2 tablespoons honey
1 teaspoon hot sauce
1 1/2 tablespoons oil
4 teaspoons garlic, minced
1 tablespoon ginger, minced
1 jalapeno, seeded and minced
3 scallions, whites minced, greens cut diagonally
2 red peppers, cut in squares
2 green peppers, cut in squares
2 yellow peppers, cut in squares
1 tablespoon sesame seeds
1 1/2 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • Combine lemon juice, tamari, honey, and hot sauce, and whisk until smooth.
  • Heat wok or other large saute pan on high.
  • Add the oil, garlic, ginger, chili, and scallion whites, and fry for 15 seconds.
  • Add peppers and fry for a minute.
  • Stir in 1/2 of the scallion greens and sesame seeds, and the sauce.
  • Bring to a boil.
  • Combine cornstarch and cold water. Stir into the vegetables and cook for another 30 seconds.
  • Serve topped with remaining seeds and scallion.

8 ounces dried bow tie pasta
3/4 lb fresh hot Italian sausage
2 medium red peppers or 2 medium green peppers, cut into 3/4 inch pieces
1/2 cup vegetable broth or 1/2 cup beef broth
1/4 teaspoon fresh coarse ground black pepper
1/4 cup snipped fresh parsley

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, cut the sausage into 1-inch pieces.
  • In a large skillet, cook sausage and sweet peppers over medium-high heat until sausage is brown.
  • Drain off fat.
  • Add broth and black pepper to skillet.
  • bring to boiling; reduce heat and simmer, uncovered, for 5 minutes.
  • Remove from heat.
  • When pasta is cooked, drain well.
  • Toss pasta with sausage mixture and sniped parsley.
  • Serve.

4 large garlic cloves, minced
1/4 cup extra-virgin olive oil
6 large red and yellow bell peppers (3 pounds), cut into 2-inch-long julienne
1/2 cup dry white wine
1 pound penne

Steps:

  • Cook garlic in oil in a large heavy skillet over moderate heat, stirring, until golden. Add peppers, wine, and salt and pepper to taste, then cook, covered, stirring occasionally, until very tender, 15 to 20 minutes.
  • While peppers are cooking, cook pasta in a 6-qt. pot of boiling salted water until al dente and drain. Toss pasta with peppers and season with salt and pepper.
