Superior Sweet and Sour Whole Fish image

A restaurant-styled dish of Chinese sweet and sour whole fish is easy to do at home! This is prepared with a whole fish, coated and fried twice for a crispier skin. Plus, get this fantastic recipe for a superior sweet and sour sauce!

1 whole fish (750 g scaled and gutted)
½ tbsp potato starch
½ tbsp plain flour
1 tbsp minced garlic
1 onion
1 to mato
¼ cup green pepper
¼ cup red pepper
¼ cup pineapple cubes (canned or fresh)
5 tbsp tomato sauce or ketchup
2½ tbsp chilli sauce
2½ tbsp plum sauce
1 tbsp rice vinegar
5 tbsp water
1 tbsp lemon juice
3 tbsp sugar
Pinch of salt
2 tsp corn starch mixed in 1 tbsp water for thickening

Steps:

  • Wash the fish and pat dry with paper towels. Cut three diagonal slits into each side of the fish. Set aside.
  • Dice the coloured peppers into 2-cm cubes. Peel and slice the onion into thin wedges. Slice the tomato into 8 wedges.
  • Combine the sauce ingredients in a bowl.

FRIED RED SNAPPER IN SWEET AND SOUR SAUCE

2 tablespoons cornstarch
6 tablespoons all-purpose flour
1 pound red snapper fillets, cut into 1 1/2-inch cubes
Kosher salt
Freshly ground black pepper
Oil, for deep-frying
Sweet and Sour sauce, recipe follows
1/4 cup small diced onions
2 tablespoons chopped fresh ginger
3 tablespoons canola oil
1/2 cup ketchup
1/2 cup duck sauce
1/4 cup rice wine vinegar
2 to 4 tablespoons raw sugar, or white, brown, or purple
Kosher salt
Freshly ground black pepper

Steps:

  • Mix the cornstarch and flour together. Season the snapper with salt and freshly ground black pepper, and dredge in the flour mixture. Fill a deep pot halfway full with oil. Heat oil to 350 degrees F, and fry fish until golden, toss directly into hot sauce, and serve.
  • Put a small saucepan over medium heat, add oil, onions, and ginger. Saute for 2 minutes. Add vinegar, sugar, ketchup, and duck sauce. Bring to a simmer for 5 minutes, add water to desired consistency if sauce is too thick. Season with salt and pepper.

Crispy Skinned Florida Yellowtail Snapper, Red Lentil and Yellow Crab Cassoulet with Sweet and Sour Tangelo Cascabel Syrup image

1 onion, diced
1 carrot, peeled and diced
2 celery stalks, diced
1 leek, diced
2 tablespoons olive oil
1 sachet, thyme, bay leaf, black peppercorns
2 cups red lentils, soaked
5 cups chicken stock
2 tablespoons glace de viande, concentrated veal stock
3 ounces yellow crab
1 teaspoon thyme, chopped
1 1/2 cups Tangelo orange juice
1 tablespoon Tangelo orange zest
2 cups cider vinegar
2 cups unrefined sugar
2 tablespoons molasses
1 sachet, thyme, bay leaf, black peppercorns
2 cardamom pods, whole
6 cascabel chiles, toasted and seeded
1 tablespoon grapeseed oil
One 6-ounce yellowtail snapper
2 tablespoons butter
2 shallots, peeled and shaved

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small pan saute the onions, carrots, celery, and leeks in olive oil until tender. Add the sachet and red lentils to the Sauteed vegetables and stir together. Add the chicken stock, glace de viande, crabmeat, and thyme into the pan, and stir until well mixed. Transfer all ingredients into an ovenproof dish and place in the oven for approximately 1 hour or until lentils are tender.
  • To make the glaze, combine all of the ingredients in a small pot. Slowly reduce the liquid and aromatics until it becomes a syrup and set aside.
  • In a small saute pan over medium heat, coat the bottom with the grapeseed oil. Place the snapper skin side down and sear for approximately 2 minutes. Turn fish and place butter and shallots on the skin side. Finish fish under a salamander or broiler basting it with butter.
  • To serve, place some of the red lentil cassoulet in the center of each plate. Place the snapper in the center and drizzle the glaze around the fish and lentils.

This is a recipe that I have been making for almost 30 years, and it is still a favorite! It is quick, easy and tasty, which is one of the reasons I've kept it around for so long!

2 lbs red snapper fillets
1 (20 ounce) can pineapple chunks in juice
1/4 cup cider vinegar
1/3 cup light brown sugar, packed
3 tablespoons cornstarch
1 tablespoon low sodium soy sauce
1/2 teaspoon salt (to taste)
1/2 teaspoon garlic salt
3 tablespoons canola oil
1 (8 ounce) can sliced water chestnuts, drained
1 green bell peppers or 1 red bell pepper, cut into 1-inch squares
1 medium tomatoes, cut into thin wedges

Steps:

  • Cut fish fillets into large chunks. Drain pineapple, reserving juice. Add water to juice to make 1-1/4 cups. Combine pineapple mixture, vinegar, brown sugar, cornstarch, soy sauce, salt, and garlic salt and blend well.
  • Saute fish in oil for 10 minutes or until fish is firm and white. Add liquid mixture and cook and stir 5 minutes or until sauce has thickened. Add water chestnuts, bell pepper, tomato and pineapple and cook until vegetables are heated through and fish flakes easily with fork.

1/4 cup ketchup
1/4 cup brown sugar
1/4 cup water
2 tablespoons white vinegar
1 tablespoon soya sauce
1/4 cup white wine
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Heat ketchup, sugar, water, wine, vinegar, soya sauce in a medium pan over medium, stirring constantly.
  • Mix cornstarch and water together in a small bowl. Stir slowly into sauce mixture. Stir until thickened.
  • Can add cooked meatballs, peppers, onions and carrots into pan. Heat for 20 minutes, or until late warm throughout.
