1/2 cup packed light-brown sugar
2 whole cloves
1/4 teaspoon cayenne pepper
3/4 teaspoon grated lime zest plus 1 tablespoon juice
Salt

Steps:

  • In a medium saucepan, bring cranberries, brown sugar, cloves, and 1/3 cup water to a rapid simmer over medium. Cook until berries burst and mixture becomes syrupy, 10 minutes. Stir in cayenne and lime zest and juice. Season with salt. Serve at room temperature.

1-3/4 cups sugar
1/2 cup water
1/2 teaspoon ground cinnamon

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until the berries pop and mixture is thickened, about 30 minutes. Cool. Transfer to a serving bowl; cover and refrigerate until chilled.

¼ cup water
1 cup white sugar
1 cinnamon stick
1 dash ground cloves

  • Heat orange juice and water in a saucepan over medium heat until warm, about 3 minutes. Add sugar and stir until dissolved. Mix in cinnamon stick, cloves, nutmeg, and allspice. Add cranberries and cook, stirring occasionally, until they pop, about 10 minutes.

I made this sauce over meatballs at my daughter's wedding reception. It was a hit. Nice change from your regular sweet and sour. The cranberries give it just enough tartness. This recipe makes a lot so you may want to cut it down for smaller portions. It was enough for 280 1" meatballs.

1 1/2 cups brown sugar, packed
4 tablespoons cornstarch
2 (16 ounce) cans ocean spray whole berry cranberry sauce
3 cups pineapple juice
1 cup cider vinegar
6 tablespoons soy sauce

Steps:

  • Mix brown sugar and cornstarch together in a medium sauce pan.
  • Stir in cranberry sauce, pineapple juice, vinegar, and soy sauce.
  • Cook over medium heat until thickened, stirring often.
  • Bring to a boil and boil for one minute, stirring constantly.
  • Serve over meatballs, chicken, roast pork, stir fried meats or vegetables.
  • Makes about 8 cups.

This is by far the best cranberry dish of any type that I've ever tasted. It was passed on to me from my mother-in-law. The garlic adds a hint of savoriness and the fresh ginger gives it a spicy kick. A very easy recipe with a sophisticated flavor. I could not find another cranberry chutney recipe exactly like it anywhere on the web, so I am sharing it here! The flavor gets better the longer it sits, so making it a day or two ahead is preferable.

1 cup white sugar
4 cups fresh cranberries
1 cup chopped onion
1 cup dates, pitted and chopped
1 cup raisins
½ cup vinegar

1 teaspoon salt
1 large garlic clove, chopped
8 cloves

Steps:

  • Combine water, brown sugar, and white sugar in a large pot; stir until sugars dissolve. Add cranberries, onion, dates, raisins, vinegar, ginger, cinnamon, salt, garlic, and cloves. Bring to a boil, stirring occasionally.

1 lb fresh cranberries
1 orange
1 cup sugar (I use turbinado)
1 teaspoon sea salt
2 tablespoons extra virgin olive oil
4 cardamom pods, smashed
2 cinnamon sticks, broken
4 cloves
1 -2 serranos, semmed and thinly sliced
1 1/2 tablespoons port wine (optional)

Steps:

  • Preheat oven to 450°F.
  • Wash cranberries and drain,removing any bad berries.Wash orange thoroughly-you will be using the rind.
  • Peel the orange into very thin strips(small enough to eat) about 1 1/2 " long and as thin as you can.Juice the orange and set the juice aside.
  • Combine cranberries,orange zest,and all other ingredients other than the juice and Port wine.Toss thoroughly to mix.
  • Place on a parchment lined baking sheet and bake for 15 minutes,or until the cranberries begin to burst and release their juices.
  • Place in a bowl add 1 tablespoon of the reserved orange juice and the Port wine.Mix thoroughly.Let set at least 1 hour-overnight is best-for the flavor to develop.Remove the whole spices before serving,but not the zest.
  • The sauce is best if brought to room temperature before serving so all the spices can be tasted,but it can be served cold or warm if you prefer.The sauce will keep at least a week if covered and refrigerated.
