This is a sweet and crunchy treat. I first tasted something like this at a festival. I find that the crunchiness and the sweetness are very addicting.

- Line two baking sheets with waxed paper.
- In a large pot or Dutch oven, combine butter, water and sugar. Bring to a boil. Boil 4 minutes; remove from heat. Introduce popcorn and stir to coat evenly. Pour onto prepared baking sheets and let cool before serving.

- Pop popcorn and place it in a large bowl, and preheat the oven to 250 degrees.
- Melt butter in a medium saucepan. Stir over medium heat and mix in salt, brown sugar, and corn syrup. Stir constantly while bringing to a boil
- Boil without stirring for 4 minutes and then remove from heat. Mix in vanilla and soda.
- Pour slowly over popcorn, stirring to coat.
- Place in 2 shallow baking dishes and pop in the oven to bake for 1 hour. Stir every 15 minutes. Let cool completely before breaking up the popcorn and eating!

- Preheat the oven to 350 degrees F and place a rack in the center of the oven.
- In a large Dutch oven or heavy pot with a lid, warm the oil over medium heat, then stir in the popcorn kernels. Cover the pot and shake periodically until the kernels start to pop, then shake more until the popping slows. This should take a total of 8 to 10 minutes. Remove the lid, then spread the popcorn evenly on a baking sheet and sprinkle with the peanuts if using, and set aside.
- In a small saucepan set over medium heat, melt the butter, then stir in the sugar and cook until the mixture starts to bubble and the sugar dissolves, 4 to 5 minutes. Drizzle over the popcorn and peanuts. Bake the popcorn until the sugar crisps and the popcorn has a light golden color, 10 to 15 minutes.

- Preheat the oven to 250°F. Line two baking sheets with a silicon mat or parchment paper sprayed with baking spray.
- Place the popcorn in an extra-large bowl.
- Melt the butter in a medium sauce pot. Add the sugar, corn syrup and salt and cook for 5 minutes, stirring occasionally. Remove from heat and stir in the baking soda. Once incorporated, stir in the walnuts and cranberries. Pour the mixture over the popcorn and toss to coat evenly.

COLORED POPCORN
I've been making this for 30+years. My kids used to look forward to it, especially at holiday time. You can make this any color you want, but for some reason I always did pink (I think it reminded my kids of the packaged "lucky" popcorn). Now my daughter is carrying on the tradition and making it for my grandkids. Recipe comes from an old newspaper clipping. If you plan on storing this, use a zip lock bag or container with a tight fitting lid.

- Put popcorn in a large bowl that you have lightly buttered.
- Put sugar and water in a small pan and boil to 238* on a candy thermometer (or until it forms a medium ball in cold water), adding the food coloring toward the last of the cooking.

- Put the oil in a large saucepan with a tight-fitting lid over a medium heat. Toss the popcorn kernels in the oil to coat. Put the lid on, and keep over a medium heat until you hear the first popcorn pop, then turn the heat to medium-low. When you begin to hear lots of popping, give the pan a shake. Continue to shake frequently until the popping stops. Turn off the heat and leave in the pan.
- Line a large baking tray with baking parchment. Put the sugar and 60ml water into a medium heavy-based saucepan and bring to the boil. Stir until the sugar has dissolved, then leave over a medium heat, without stirring, for 6-8 mins. It should start to turn into a golden caramel, swirl it around and add the butter - stand back as it may spit a little. Stir well until combined.
- Pour the caramel over the popcorn in the pan and stir immediately to coat the popcorn, being careful not to touch the hot caramel. Carefully transfer onto the lined baking tray and press down with the back of a spoon to spread evenly. Leave to cool for 5 mins, then break apart and eat.
