SWEET AND SPICY GRILLED SALMON
The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. It's delicious, but can be discarded to save fat and calories. (The numbers below include the skin.) A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

- Preheat an outdoor grill or grill pan on medium high.
- Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
- Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
- Transfer the fillets to individual plates and serve with the celery slaw.

- Prepare outdoor grill for high heat.
- Trim the tail and fins off of the salmon. Make several shallow cuts across the salmon's skin. Place salmon on 3 large, slightly overlapping sheets of aluminum foil.
- In a bowl, stir together soy sauce, chile sauce, ginger, and garlic. Mix in lime juice, lime zest, and brown sugar. Spoon sauce over the salmon.
- Fold the foil over the salmon, and crimp the edges to seal.
- If using hot coals, move them to one side of the grill. Place the fish on the side of the grill that does not have coals directly underneath it, and close the lid. If using a gas grill, place the fish on one side, and turn off the flames directly underneath it; close the lid. Cook for 25 to 30 minutes. Remove to a serving platter, and pour any juices that may have collected in the foil over the top of the fish. Sprinkle with green onions.

- Remove skin and scales from salmon. Season salmon fillets with lemon pepper and garlic powder. In a small bowl stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large zip bag with soy sauce mixture, seal and turn to coat. Refrigerate at least 2 hours, turn often (the longer it marinates the stronger the flavor, I marinate mine all day).
- Preheat grill for medium heat. Lightly oil grill grate. Place salmon on the preheated grill, discard marinade. Cook salmon for 6-8 minutes per side, until fish flakes easily with fork.

- Mix barbecue sauce, sugar and garlic until blended. Reserve half the barbecue sauce mixture.

SWEET AND SPICY-GLAZED GRILLED SALMON

- 1. Chop chipotles and garlic in a food processor. Add tamarind, brown sugar, and salt and puree. Add vinegar, 2 tablespoons water, and oil, and puree until smooth. Pour about 1/4 cup of glaze into a small bowl. Reserve remaining glaze for serving.
- 2. Preheat a grill to medium.
- 3. Brush salmon filets with oil and season with 1 tablespoon salt, to taste. Place fillets, top-side (rounded side) down, on grill. Cook until distinct grill marks appear, about 4 minutes. Turn fish over, lightly brush with glaze, and cook, brushing occasionally with more glaze, until firm but slightly pink, about 6 to 8 minutes. Transfer to a cutting board and brush with more glaze. - Put the jelly, scallions, cilantro, garlic, and lime zest into a food processor. Pulse the processor until the mixture is finely pureed.
- Put in a small saucepan over medium heat, bubbling away for 2-3 minutes. Add to the butter and mix while it all melts into the sauce. Remove from heat and allow to cool.
- Put the salmon face-down (presentation side) onto the foil. You are putting it face-down because during cooking, you will turn the fish over one time only, therefore ending-up with the pretty side face-up so you can re-glaze at the end.
- Now brush the less-attractive bottom side (which is now face-up) with the sauce.
- Put the aluminum foil trays with your salmon onto the grill. Cook for 6-8 minutes. Carefully flip the salmon fillets over with tongs.
- With a spoon, put a thick layer of the glaze on top and let the salmon finish cooking.
- Plate the salmon. Add a little more glaze on top and garnish it with lemon and cilantro.
