SWEET PEA DIP
"This creamy dip on crunchy bread is super satisfying."

Steps:
- Add the peas to a large pot of well-salted boiling water. (Make sure there is way more water than peas and enough salt for it to taste like the ocean.) Boil the peas for about 30 seconds. Remove the peas to an ice bath.
- In a food processor, combine the ricotta, lemon zest, parmesan and mint. Drain the peas and add them to the food processor. Pulse just until the mixture comes together; you want to keep a little texture and not make it totally smooth. Season with salt.
- Spoon the mixture into a serving bowl, crack some pepper over the top and drizzle with the olive oil. Serve the pea dip with grilled bread.
"SWEET-PEA" BURGERS
Steps:
- For the honey mustard sauce: In a bowl, combine the mayo, mustard and honey; mix well.
- For the "sweet pea" burgers: Preheat the oven to 400 degrees F.; line a baking sheet with aluminum foil.
- Set the sweet potatoes on the baking sheet and bake until soft, 1 hour. Remove from the oven and let cool.
- When cool enough to handle, halve the sweet potatoes, then scoop the flesh into a medium bowl and mash with the garbanzo beans. Add the egg, chili powder, flour, breadcrumbs, Parmesan and some salt and pepper. Mix until fully combined. Form the mixture in 6 patties.
- In a large skillet over medium heat, heat the oil and butter, swirling them together. Add the patties to the skillet and cook until brown and crispy, about 5 minutes per side. Transfer to a paper-towel-lined plate to drain.
- Serve the burgers on toasted onion rolls spread with honey mustard sauce. Top with lettuce and avocado.
SESAME SWEET PEA SPREAD
This is really quite good. Unusual. It can be used as a veggie dip (especially with carrots or cauliflower), on crackers or as a sandwich spread.

Steps:
- In a frying pan, toast the sesame seeds until golden. Set aside.
- In a saucepan, over medium heat, melt butter and cook onion and garlic until softened.
- Add peas, sherry and salt. Cover; reduce heat to low and cook until peas are soft. Stir in lemon juice and let cool for 5 minutes.
- In a blender, puree peas. Add sesame seeds and process until blended. Serve chilled.

- In a large saucepan, combine the flour, sugar and milk. Stir in peas and pepper; bring to a boil. Reduce heat; simmer for 10-12 minutes or until peas are heated through and sauce has thickened.
