- In a heavy bottom pot melt butter over medium-high heat. Add onions, celery, bell pepper, and sauté until the vegetables are translucent and tender. Add chicken broth and sweet potatoes and bring soup to a swimmer. Cook for 15 minutes or until the sweet potatoes are fork tender. When sweet potatoes are tender, puree the mixture in batches in a food processor. Return to the pot and add tasso, cinnamon, nutmeg, and parsley. Simmer soup for 20 minutes to allow flavor to come together. Add more broth or water if necessary to make a velvety smooth consistency. Add heavy cream and season to taste with salt and pepper. Serve hot in soup bowls.

- In a Dutch oven or stockpot, heat 2 tablespoons oil over medium-high heat. Season beef with salt and pepper; brown in batches, adding oil as needed. Remove with a slotted spoon. Add onion and sweet potatoes to pan. Cook, stirring occasionally, until onion is translucent and light golden brown., Meanwhile, puree tomatoes and their juices in a blender or food processor. - Combine the stock, sweet potatoes, celery, onion, bay leaf, and tarragon in a large pot and bring to a boil over high heat.
- Reduce the heat and simmer until the vegetables are tender, 20 to 30 minutes.
- Discard the bay leaf, puree the soup in batches in an electric blender or food processor, and return to the pot. Add the half-and-half, salt, and pepper and bring to a simmer.
- Garnish with a dollop of sour cream and a sprinkle of chopped herbs if desired. Don't forget the freshly ground black pepper, and some goat cheese on top might also be a nice contrast to the sweetness of the sweet potatoes. Enjoy!

- (10-15 minutes) Drain and set aside.
