Baked sweet potato wedges are crispy on the outside and tender on the inside. These are seasoned with a smoky, spicy blend that will have everybody coming back for more! Great thing about this recipe is you can adjust the seasoning to your desire. You want to add minced garlic, go ahead! You want these bad boys spicier, go for it!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Mix chili powder, cumin, paprika, garlic powder, onion powder, sea salt, cornstarch, and cayenne pepper together in a small bowl.
- Cut potatoes in half lengthwise, then cut each half into 3 wedges. Place in a large bowl and drizzle with olive oil; toss to coat. Add spice mixture and stir with a rubber spatula or your hands until potatoes are completely coated. Transfer to the prepared baking sheet.
- Bake in the preheated oven until the thickest parts of potato wedges are easily pierced with a fork, about 25 minutes.

- Start by peeling and slicing the sweet potatoes into managable 'oven chip-sized' mouthfuls.
- finely Chop the Chillies and the Garlic, and add together in a bowl, with about 4 tbsp of olive oil.
- Pre-heat the oven to 190/200C/fan = 400F = gas mark 6.
- spread the sliced sweet potato chips onto a tray for baking, and pour the chilli and garlic mixture over.
- With your hands, toss the sweet potato within the oil so that the wedges are evenly covered and the chillies and garlic are quite evenly distributed.
- Sprinkle chilli powder over (depending on how spicy you like your food) and season with salt before putting into the oven.
- On the middle shelf, bake for 15 mins or longer for a crispier wedge.
- Serve immediately, either to compliment a dinner, or they are just as delicious on their own, served with tzatztiki!

- Snip off the ends of each sweet potato (leaving the skin on), and then cut them into half lengthwise. Cut each half into two more parts lengthwise, and then further into two more till you have eight long wedges. Cut each long wedge in the middle to make 16 wedges from each sweet potato. (Scroll up to see step by step pictures to cut sweet potato into wedges).
- Toss the sweet potatoes well in potato starch till the wedges are coated evenly. Then sprinkle paprika, lime zest, lime juice, salt and olive oil over the wedges and use your hands to toss the wedges in the seasoning.
- Arrange them on the baking rack and bake for 35 minutes. Turn on the broiler (or the top element of the oven) for the last five minutes to get them extra crispy. Sprinkle them with some flaky sea salt and serve immediately.
