Steps:
- Preheat oven to 425 degrees.
- Whisk olive oil and sriracha together in a small bowl. Pour over sweet potatoes in a large bowl and toss to coat.
- Combine cumin, chili powder, paprika, salt and pepper in a small bowl. Add spices to potatoes and toss to coat. Arrange potatoes in one layer on an unoiled baking sheet.
- Bake on lowest rack 10 minutes. Turn potatoes with a spatula and bake 10 more minutes, or until golden brown on all sides.
- While potatoes are cooking, whisk dipping sauce ingredients together in a small bowl.
- Remove potatoes from oven and serve with sriracha dipping sauce.

- Pre-heat oven to 400 degrees F. Grease a large baking sheet with oil and set aside.
- Scrub and cut the sweet potatoes into 1/3 inch sticks. You can go as thin or as thick as you would like but remember the thicker the are, the longer they will need to bake.
- In a large bowl, toss sweet potatoes with olive oil, salt, pepper, and paprika. Place on the baking sheet in a single layer. be sure not to overlap for best results.
- Bake fries, turning once and rotating pans once, until edges are lightly browned and centers are tender; 15 to 20 minutes.
- To make sriracha dipping sauce:
- Combine the sour-cream, light mayo, and sriracha sauce in a small bowl. Mix with a fork until fully combine and creamy.

- To make fries:.
- Cut sweet potatoes lengthwise, then cut into french fries. I like them skinny.
- Chop sage into small pieces.
- Place cut sweet potatoes on a cookie sheet, in a single layer.
- Drizzle olive oil.
- Spread brown sugar, sea salt and cracked black pepper over potatoes.
- Bake in oven at 350° for 30=40 minutes, or until a fork can poke through easily.
- Once out of the oven, sprinkle chopped sage, let cool and serve.
- To make Sriracha Mayonnaise:.
- In a food processor, combine mayonnaise, Sriracha, cream and salt.
- Mix for 2 to 3 minutes until thick and creamy. Don't overmix. Serve as a dipping sauce for fries(also good with onion rings and fish).
- To make Herb Mayonnaise:.
- In a food processor, combine mayonnaise, herbs and sea salt.
- Mix for 2 to 3 minutes until all ingredients are well blended.
- Serve as a dipping sauce for fries or onion rings(also good with fish).

- Peel the sweet potatoes on a cutting board.
- Trim the ends of the potatoes and cut into ½-inch (1 cm) thick matchsticks.
- Add the cut potatoes to a large bowl of water and soak for 1 hour.
- Drain the potatoes in a colander, and rinse with cold water.
- Preheat the oven to 425˚F (220˚C).
- Thoroughly dry the sweet potato matchsticks with paper towels.
- Add the sweet potatoes to a large bowl and sprinkle with cornstarch, tossing until fully coated.
- Drizzle the grapeseed oil over the potatoes, add the paprika, garlic powder, and pepper. Toss to coat.
