A new twist on the old standard of sweet potato pie but no crust. This has just a hint of orange flavor and is not overly sweet. You will love it! Great side dish for your Thanksgiving feast! If desired, top casserole with marshmallows and brown in oven.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 2 1/2 quart baking dish.
- Bring a large pot of water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain and mash.
- In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla; stir until smooth. Pour into buttered dish.
- Bake in preheated oven 40 minutes.

SWEET POTATO PUDDING CUPS
Take a quick trip to the South with this sweet potato dessert, charmingly served in individual custard cups.

- Heat oven to 325°F. Grease 6 (6-oz) ovenproof custard cups or ramekins with butter or cooking spray.
- In blender or food processor, blend all ingredients except pecans and whipped cream until smooth. Pour into custard cups.
- In 13x9-inch pan, place filled custard cups. Carefully place pan with cups in oven. Pour enough very hot water into pan, being careful not to splash water into cups, until water is within 1/2 inch of tops of cups.
- Bake 30 minutes. Sprinkle tops of puddings with pecans. Bake 20 to 25 minutes longer or until tops are set. Using tongs or grasping tops of custard cups with pot holder, carefully transfer cups to cooling rack. Cool 30 minutes. Just before serving, top with whipped cream.

- Peel cut and grate sweet potatoes and place in a large mixing bowl. Add dark sugar, flour and raisins. Combine Grace Coconut Milk Powder with water, mix well and add to the sweet potato mixture. Add melted margarine,nutmeg,salt, cinnamon powder, vanilla, rum, lime juice and browning and mix well. Scrape mixture into a greased 10inch baking tin. Bake in a pre-heated oven 350 F or 180 degrees C for 1 1/2 - 1 3/4 hours.Note:5 pounds sweet potato will yield 12 cups when grated.
GRATED SWEET POTATO PUDDING
This recipe is very similar to sweet potato casserole, but with shredded sweet potatoes. My mom used to make it at both Thanksgiving and Christmas. She passed away when I was 8, so I when I eat this it reminds me of family holidays of long ago. I hope your family enjoys this!

- Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 2 quart baking dish.
- Peel and grate the sweet potatoes and mix with melted butter in a large bowl. In a medium bowl, beat eggs with sugar until well mixed. Pour over the sweet potato mixture, and stir in evaporated milk, whole milk, cinnamon, allspice, nutmeg, cloves, and vanilla extract. Mix well to combine all ingredients, and spoon into the prepared baking dish.

- If making your own mashed sweet potatoes see notes below on how to cook.

- While grating sweet potatoes, bring to a slow boil all the spices in 1 cup of water.
- Put the sweet potatoes into a large mixing bowl.
- Just before removing the pot of spices from the stove, add butter or margarine, Karo syrup, brown sugar, and salt.
- Stir while the butter melts.
- Remove the cinnamon sticks.
- Pour this mixture over the grated sweet potatoes.
- Blend well together.
- Put in a well-buttered casserole dish and place in a preheated 350 degrees oven.
- Bake, stirring well two or three times, until the sweet potatoes are tender and the top is lightly browned.
- This takes about 1 hour.
- Remove from the oven and let stand about 5 minutes before serving.
- When stirring you may decide extra spices are needed or more water so mix up more water and spice and add them.
- You may add more Karo syrup or butter as well as spices.
