2 eggs, lightly beaten
1 cup packed brown sugar
1 cup milk
¼ cup melted butter
2 teaspoons lemon juice
¼ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
½ teaspoon salt

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
  • Combine sweet potatoes and eggs in a medium bowl. Beat in the brown sugar, milk, butter, lemon juice, ginger, cloves, cinnamon, salt. Pour into prepared dish.
  • Bake in preheated oven until hot and golden brown on top, about 30 minutes.

6 large sweet potatoes, peeled and quartered
½ cup butter, melted
⅔ cup dark brown sugar
⅔ cup white sugar
4 eggs, beaten
⅔ cup orange juice
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 1/2 quart baking dish.
  • Bring a large pot of water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain and mash.
  • In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla; stir until smooth. Pour into buttered dish.
  • Bake in preheated oven 40 minutes.

Nonstick cooking spray, for spraying the baking dish
2 1/2 pounds medium sweet potatoes (about 3), poked with a fork
1/2 cup (1 stick) butter, room temperature
2 large eggs
1 cup sugar
1/2 cup milk
1 tablespoon self-rising cornmeal
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup pecan halves
1/2 cup packed brown sugar

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with cooking spray.
  • On a foil-covered baking sheet, bake the sweet potatoes until soft, about 1 hour. Remove and let cool. Reduce the oven temperature to 325 degrees F. When cool enough to handle, peel the potatoes, place the flesh in a large mixing bowl, add the butter and mash until smooth. Add the eggs 1 at a time, beating well after each addition. Add the sugar, milk, cornmeal, salt and 1/2 teaspoon of the vanilla and beat until smooth. Pour the batter into the prepared baking dish. Arrange the pecan halves on top of the pudding and top with the brown sugar. Sprinkle the remaining 1/2 teaspoon vanilla by small droplets over the brown sugar. Bake until the top is browned, about 45 minutes.

This vegan tofu pudding with sweet potato makes for a healthy and delicious snack, breakfast or dessert! It is super easy to prepare and requires less than 10 ingredients.

2 cups unsweetened plant based milk (almond or oat recommended)
1 teaspoon vanilla
3 tablespoons cornstarch
1 cup cooked mashed sweet potatoes (about 2 medium or 3 small roasted sweet potatoes)
½ cup silken tofu
2 tablespoon maple syrup (or to taste)
1 tsp cinnamon
Pinch of salt

Steps:

  • Place the mashed sweet potato, tofu maple syrup, cinnamon and salt in a blender and blend until well combined and smooth.
  • Place the almond milk or oat milk in a medium saucepan, sift in the cornstarch and add vanilla and stir till it well combined with no lumps. Bring this mixture to medium heat stir continuously until the mixture thickens. This should take about 5-10 minutes. When the cornstarch coats the back of the spoon it is done.
  • Slowly add the tofu sweet potato mixture to the saucepan and stir until well combined.
  • Store in the fridge for at least an hour to set.
  • Top with vegan whipped topping, vegan yogurt, shaved dark chocolate, raspberries or pomegranate.

1/2 cup packed light or dark brown sugar
4 large eggs
1/3 cup milk
2 tablespoons unsalted butter, melted
2 tablespoons pure vanilla extract
1 tablespoon corn syrup, preferably dark
1 tablespoon light or dark rum
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Praline topping, recipe follows
1/2 cup chopped pecans
1/4 cup chopped crystallized ginger
1/4 cup packed light or dark brown sugar
2 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
  • With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.
  • Sprinkle the praline mixture over the pudding and bake for an additional 20 to 25 minutes, until the pudding is set and slightly puffed. The top will sink as the pudding cools. Serve warm or at room temperature.
  • In a small bowl, combine the ingredients and reserve to use as topping for the sweet potato pudding.

  • Then add in the milk to moisten with the vanilla & make sure to mix everything well.

1/2 Numbers onion
1/2 Numbers capsicum (green pepper)
1 Numbers green chilli
2 tablespoon refined flour
1/2 cup bread crumbs
2 tablespoon corn flour
1 cup vegetable oil
0 As required salt
1/2 teaspoon black pepper

Steps:

  • Wash the sweet potato properly and boil it. You can also pressure cook it until soft. Now peel it and collect it in a bowl.
  • Now mash the sweet potato properly. Add finely chopped onion, capsicum, green chilli, salt, black pepper powder and refined flour. Mix well to prepare a stiff dough.
  • Now mix corn flour with 1/4 cup water to prepare a slurry. Make small balls from the mixture and place them on a plate. Dip the balls in slurry, coat them using breadcrumbs and deep fry them in hot oil. Fry until golden in colour.
  • Once fried, serve the Sweet Potato Balls with ketchup, mint chutney or mayo. Enjoy!
