Sweet Potato Rosti with Goat's Cheese image

Spicy Sweet Potato Rosti with Goat's Cheese and Balsamic Roasted Cherry Tomatoes. Great for a tasty weekend breakfast or brunch.

620 g sweet potato (about 3 small sweet potatoes) (peeled then grated using the course side of the grater)
1 medium white onion ( 125g) (peeled then grated )
2 large eggs
1/2 level tsp dried red chilli flakes
1/2 tbsp chopped chives
1 level tsp sea salt (divided)
1 level tsp freshly ground black pepper (divided)
2 level tbsp plain flour
100 g goat's cheese
1 tbsp balsamic vinegar
100 g cherry tomatoes
1 tbsp olive oil (plus more for frying the rosti)

Steps:

  • Preheat the oven to 200 degrees C / 392F. I use a fan assisted electric oven, please adjust according to your own oven.Line a baking tray with parchment paper.
  • Grate the sweet potato using the coarse side of a box grater or use a food processor. Place the sweet potato onto a clean tea towel. Gather up the edges of the towel then twist. Squeeze the sweet potato until the juice comes out. Transfer to a large mixing bowl.
  • Add the onion, eggs, chives, chilli flakes, half the salt and pepper then stir well. Then add the flour and mix well again.
  • Heat a tablespoon of olive oil in a large non-stick pan, over a medium heat.Using an 8cm/3 inch cooking ring, place it on the pan then fill it with the sweet potato mixture, fill the ring to just over halfway. Press down firmly on the rosti, using the spoon.Leave to cook for about 2 minutes then remove the ring. Press down on the rosti with a spatula and cook for another 2 minutes. Flip the rosti, press down again and cook for about 2 minutes. Continue for the remaining mixture. You should have 8 rosti.
  • Transfer the rosti to the lined baking sheet. Place a slice of goat's cheese on each rosti and place in the oven for about 8 minutes until the cheese is golden and melted.
  • While you are cooking the rosti pop the cherry tomatoes into a baking dish, add the 1 tablespoon of olive oil, 1 tablespoon of balsamic vinegar, 1/2 a teaspoon each of sea salt and freshly cracked black pepper.Roast for 10 minutes or until the cherry tomatoes have burst.
  • Serve the rosti with a generous helping of the balsamic roasted cherry tomatoes and some freshly cracked black pepper.

Goat's cheese & bacon rosti image

Adding goat's cheese and bacon to the traditional Swiss dish of rosti transforms it into a simple, warming supper

1kg medium-sized floury potato , such as Desirée or Maris Piper
1 onion , finely chopped
100g lardon (diced bacon)
8 fresh sage leaves
100g firm goat's cheese , such as chèvre blanc or Capricorn

Steps:

  • Boil the potatoes in skins for 20-25 minutes, until just tender. Leave to cool, peel, then coarsely grate into a bowl.
  • Heat 1 tbsp of olive oil in a medium non-stick frying pan, add the onion and lardons and fry for 7-8 minutes, stirring occasionally, until the onion is softened and lightly tinged with brown. Stir in the sage leaves and remove from the heat.
  • Stir the onion, lardons and any juices left in the pan into the grated potato. Season with salt and pepper and mix well.
  • Heat 1 tbsp of oil in the frying pan, add half the potato mixture and spread over the pan. Crumble the goat's cheese into small pieces, then sprinkle evenly over the potatoes. Spread the remaining potato over the top to seal in the cheese and press down lightly with the back of a wooden spoon.
  • Cook the rösti over a moderate heat for 8 minutes until the underside is nicely browned, then put a large plate on top and invert the rösti onto it. Add another tablespoon of oil to the pan if you need to, then slide the rösti back into the pan and cook the other side for 8 minutes. Serve the rösti straight from the pan, cut into wedges, with green vegetables or a big green leaf salad.

ROAST SWEET POTATO & ONION TART WITH GOAT'S CHEESE

Yield Serves 8-12 (makes 2 tarts)

Number Of Ingredients 11

3 tbsp olive oil
6 medium red onions, finely sliced
5 tbsp red wine vinegar
100g cranberry sauce
1kg sweet potatoes, peeled and cut into small chunks
1 tsp chilli flakes
2 x 320g sheets ready-rolled puff pastry
3 x 100g soft goat's cheese with rind, broken into large chunks
beaten egg, for glazing
thyme sprigs, to serve
a large salad, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 2 tbsp of the oil in a large non-stick frying pan and cook the onions over a low heat for 20-25 mins or until well softened and lightly browned. Add the vinegar and cranberry sauce, and simmer for 5-10 mins more, stirring until almost all the liquid has disappeared. Leave to cool.
  • Meanwhile, put the sweet potatoes in a bowl and toss with the remaining oil, 1/2 tsp salt, 1/2 tsp pepper and the chilli flakes. Arrange on a baking tray and cook for 20 mins, turning halfway, until softened and lightly browned. Leave to cool.
  • Reduce oven to 180C/160C fan/gas 4. Line two large baking trays with baking parchment and unroll the pastry sheets on top - trimming the edges neatly at this point will encourage a good rise. Leaving a 2cm gap around the edge, spread the onions over the pastry, then top with the sweet potatoes and goat's cheese. Brush the beaten egg around the border of the pastry and bake in the oven for 35-40 mins or until the pastry is golden and crisp, swapping the shelves after 20 mins.
  • Scatter over the thyme, then cut each tart into quarters (or smaller pieces if serving more). Serve with a large leafy salad.
