CINNAMON SWEET POTATO SLICES
Wonderful slightly sweet baked potato slices. Ingredients amounts are only a suggestion. I always keep a cinnamon/sugar blend on hand.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
- Arrange sweet potato slices on the baking sheet. Brush with 1/2 the butter. Mix the sugar and cinnamon in a small bowl, and sprinkle 1/2 over the potatoes.
- Bake 15 minutes in the preheated oven. Turn, brush with remaining butter, and sprinkle with remaining cinnamon and sugar. Continue baking 15 minutes, or until tender.

- Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.
- Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.

SWEET POTATO GNOCCHI WITH MAPLE CINNAMON SAGE BROWN BUTTER

Steps:
- For the Gnocchi: Preheat the oven to 425 degrees F.
- Pierce the sweet potato with a fork. Bake the sweet potatoes until tender and fully cooked, between 40 to 55 minutes depending on size. Cool slightly. Cut in half and scoop the flesh into a large bowl. Mash the sweet potatoes and transfer to a large measuring cup to make sure the sweet potatoes measure about 2 cups. Transfer the mashed sweet potatoes back to the large bowl. Add the ricotta cheese, salt, cinnamon, and pepper and blend until well mixed. Add the flour, 1/2 cup at a time until a soft dough forms. Lightly flour a work surface and place the dough in a ball on the work surface. Divide the dough into 6 equal balls. Roll out each ball into a 1-inch wide rope. Cut each rope into 1-inch pieces. Roll the gnocchi over the tines of a fork. Transfer the formed gnocchi to a large baking sheet. Continue with the remaining gnocchi.
- Meanwhile, bring a large pot of salted water to a boil over high heat. Add the gnocchi in 3 batches and cook until tender but still firm to the bite, stirring occasionally, about 5 to 6 minutes. Drain the gnocchi using a slotted spoon onto a baking sheet. Tent with foil to keep warm and continue with the remaining gnocchi.
- For the Brown Butter sauce: While the gnocchi are cooking melt the butter in a large saute pan over medium heat. When the butter has melted add the sage leaves. Continue to cook, swirling the butter occasionally, until the foam subsides and the milk solids begin to brown. Remove the pan from the heat. Stir in the cinnamon, maple syrup, salt, and pepper. Careful, the mixture will bubble up. Gently stir the mixture. When the bubbles subside, toss the cooked gnocchi in the brown butter. Transfer the gnocchi to a serving dish and serve immediately.
CINNAMON ROASTED SWEET POTATOES
Slices of sweet potato baked with cinnamon and brown sugar. The caramelized brown sugar make these potatoes taste like candy! I attended a catered dinner and the caterer served these with a beautiful turkey dinner. I begged for the recipe, been making it ever since.

- Preheat the oven to 375 degrees F (190 degrees C). Pour the oil into a 9x13 inch baking dish, and place in the oven until hot, about 5 minutes.
- Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven, turning after 10 minutes. In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.
- After the 20 minutes is up, remove the potatoes from the oven, and sprinkle with the brown sugar mixture. Stir to coat. Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes as necessary to allow them to brown evenly.
- Remove potatoes to paper towels to drain, then transfer to a serving dish, and sprinkle with lime juice.

- Place the sweet potatoes in a large saucepan or Dutch oven; cover with water. Bring to a boil; cook for 20-25 minutes or until tender. Drain; cool slightly and mash., Add the sugar, butter, milk, eggs, cinnamon, cardamom and lemon juice. Transfer to a greased 1-1/2-qt. baking dish. Cover and bake at 350° for 45-50 minutes or until set.

- Heat oven to 400.
- Have your child smoosh together the first 5 ingredients in a bowl till blended. Chill 10 minutes. Turn onto waxed paper and using paper as a aid, roll the butter into logsize of nickel. Wrap tightly in new piece and refrigerate 1 hour or longer.
- Scrub the potatoes and prick the skin all over with a fork. Bake on oven rack 45-60 minutes, until they're soft and easily piecred through the center with a paring knife.
- Serve each potato with 2 coin size slices of butter.

SPROUTED SWEET POTATO ROLLS WITH CINNAMON-HONEY BUTTER
These sweet potato rolls are wonderful served warm with cinnamon honey butter. For the butter spread I am using extra virgin coconut oil just because it's much better for you and I like the taste but that being said you can use just simple butter. Enjoy!!!

- In bread machine pan, place all wet ingredients first followed by the flouer and the dry ingrideints. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
- When cycle is completed, turn dough onto a lightly floured surface. Punch down. Divide into 30 portions; roll each into a ball. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30-45 minutes.
- Bake at 400° for 8-10 minutes. Serve warm with cinnamon butter on a side.
- Cinnamon butter: mix all 3 ingredients together using a spoon, If coconut oil is hard you can warm it up a little till softer or liquid. Enjoy!

- Using a fork, poke a few holes in the skin of the sweet potatoes. Set them aside.
- Preheat your smoker to a medium-low temperature (about 275°F).
- Place the sweet potatoes into the smoker and cook for about 1 hour, or until they begin to soften inside. Wrap the sweet potatoes in aluminum foil and return to the smoker for 1 hour until completely softened. Pull the sweet potatoes off the and let cool for 2 minutes.
- While the sweet potatoes cook, in a small bowl, stir together the brown sugar, cinnamon, salt, and allspice. Set aside.
- Slit open the cooked sweet potatoes. Top each with 1 tablespoon (14 g) of butter, a sprinkle of the brown sugar spice mix, and a drizzle of honey. Serve immediately.
