ROASTED SWEET POTATOES WITH PECANS AND SPICED MAPLE SAUCE

Steps:
- Heat oven to 450 degrees F and arrange rack in the middle.
- While oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside.
- Place sweet potatoes on a baking sheet, drizzle with oil. Season well with salt and freshly ground black pepper, and toss to coat. Roast until golden brown and tender when pierced with a knife, about 40 to 45 minutes.
- Meanwhile, melt butter in a small saucepan over medium heat. When it foams, stir in maple syrup and cayenne and let cook briefly, about 1 minute. Serve sweet potatoes with a drizzle of maple butter and a scattering of pecans.

- Preheat oven to 425°. Cut each potato lengthwise into six wedges; place in a large bowl. Add oil and seasonings; toss to coat. Transfer to two foil-lined 15x10x1-in. baking pans. Bake 45-50 minutes or until tender, turning once., In a small bowl, mix sauce ingredients. Serve with potato wedges.

- Preheat the oven to 450 degrees F (230 degrees C). Line two 15x10x1-inch baking pans with aluminum foil.
- Combine sweet potato wedges, olive oil, salt, and pepper in a very large bowl. Toss to coat. Arrange in a single layer on the prepared baking pans.

- peel potatoes and shred in food processor.
- put in a colander or strainer and squeeze to get rid of excess moisture.
- add beaten eggs to a bowl, add sweet potatoes.
- mix in baking powder, matzoh meal, salt, pepper.
- heat sauce in the meantime--.
- mix all sauce ingredients in a small pan over low heat, and keep warm.
- heat 2 tbsp oil in a skillet and add small ladlefuls of sweet potato batter.
- cook for 3-4 minutes per side.
- remove to paper towels to drain oil.
- add additional oil to skillet, fry latkes and drain on paper towels.
- place the sauce on plates, add latkes and garnish with mint.

- Roast sweet potatoes until tender or use prepared from can. Mash potatoes and mix with cream cheese and Chinese 5 spice and pinch salt. Assemble wontons by dabbing edges with water and filling with potato cheese mixture. Fold over in a triangle and pinch edges to seal with a fork. Heat canola oil in saute pan and fry filled wontons on both sides until golden brown. Drain on paper towel. Dipping sauce: Heat maple syrup over med heat and stir in cayenne pepper.
