Crackers, such as Wasa Thins
Thinly sliced plums or figs
Honey
Sprouts or thinly sliced radishes
Freshly grated lemon zest
Flaky sea salt and freshly ground pepper
Extra-virgin olive oil

Steps:

  • Spread cottage cheese onto crackers. For a sweet tartine, top with plums or figs and a drizzle of honey. For a savory tartine, top with sprouts or radishes and lemon zest; finish with salt, pepper, and oil.

Years ago a company called Sweet Celebrations sold supplies for cake decorators and caterers. They also produced a magazine called The Mailbox News. I found this recipe in that magazine and have been using it ever since. This pastry is so easy to work with and it never becomes tough no matter how much you handle it. The salt in the cottage cheese is just enough to give it a great flavor. It can also be used to wrap the small cocktail sausages in for hors d'oeuvres.

1 cup cottage cheese, small curd
1 cup butter, chilled
2 cups plain flour

Steps:

  • I puree the cottage cheese before mixing in other ingredients because I like a smooth pastry but it isn't necessary.
  • Mix the flour and butter in a food processor until the butter is the size of peas.
  • Add the cottage cheese and continue mixing to form a ball.
  • Let it rest in the fridge for half an hour and then roll out like pie crust.
  • Line the pot pie container with crust, fill with filling, cover with a top crust sealing the edges, cut slits in top for steam to escape and bake @ 375 degrees until browned.

½ cup instant oatmeal
¼ cup cottage cheese
½ cup egg whites
water, as needed
1 clove garlic, minced
½ teaspoon Italian seasoning
1 dash cayenne pepper
salt and pepper to taste
olive oil cooking spray
½ cup chopped mushrooms
1 cup chopped fresh spinach
2 slices Canadian bacon, diced
1 ounce crumbled feta cheese

Steps:

  • Blend the oatmeal, cottage cheese, and egg whites in a blender until smooth; add water as needed to keep the mixture moving. Add the garlic, Italian seasoning, cayenne pepper, salt, and black pepper; blend to combine.
  • Prepare a saucepan with cooking spray and place over medium heat; cook the mushrooms in the hot pan until tender, 5 to 7 minutes; set aside.
  • Prepare a large skillet with cooking spray and place over medium-high heat; cook the cottage cheese mixture in the hot skillet until bubbles begin to form on the top. Flip the pancake and cook until browned on the bottom; remove from heat. Spread the mushrooms over one half of the pancake; top the mushrooms with the spinach, Canadian bacon, and feta cheese. Fold the other half of the pancake over the fillings like you would an omelet.
