SWEET SOY CRACKER BITES
In Japan, children would eat soy cookies or crackers, not sweet but very salty with the taste of soy sauce. My son hated the taste of a sweet cookie for a while, only wanted his soy cookies.This is my revised recipe. This taste is not for everyone but you might like it.

Steps:
- In medium bowl, mix 1 cup rice flour, salt, baking powder and splenda.
- In large bowl, add cooked rice and shortening. Mix with a fork, mash the rice in the shortening. Use your fingers if it is easier.
- Pour in the dry rice flour mixture, a little at a time and mix each time.
- Add 1 tblsp cold water each time.
- The rice dough mixture should be moist.
- Add the vanilla and mix well. I use my hands.
- Preheat oven 375*.
- Squeese, knead and press with your hands.
- Let the dough rest at least 10 minutes.
- Take 1 tsp of dough, roll it in your hands and press down on the baking trays.It can be round in shape or elongated, either way, it is flattened.Use the back of the teaspoon to press it down.
- Note: I use the 2 tblsp rice flour to dust my hands.
- You will have many round or elongated flat crackers. The crackers will rise. Cook about 5 minutes.
- Heat soy sauce and margarine.Then brush soy sauce mixture on the top. Finish cooking about 8 minutes. The soy sauce will make the crackers brown and harden on top.
- Take a spatula and take one out and check the bottom, if it is slightly browned on the bottom it is done. Let cool and air dry.
- If you live in a humid region, you must put in air tight container. They will not stay crisp. You will have to crisp in the oven again. Make sure they are very very flat.

Steps:
- Place crackers in a gallon sized zipper bag.
- In a two-cup measuring cup, add oil, Ranch dressing mix, dill, garlic powder and celery salt.
- Pour the oil mixture into the bag with the crackers and close. Turn the bag to coat evenly.
- Refrigerate for atleast 24 hours, turning the bag every so often.
- Store, covered, in the refrigerator.

AIR FRYER STEAK BITES WITH SOY SAUCE
These steak bites are full of Asian-inspired flavors and are fabulous when paired with coconut jasmine rice or will elevate any stir-fried vegetable dish!

- Cut steak into bite-size pieces. Place steak bites into a resealable plastic bag.
- Mix together oyster sauce, soy sauce, sweet soy sauce, sesame oil, and brown sugar in a bowl. Pour mixture over the steak pieces and mix to coat with marinade. Marinate for 30 minutes.
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Line the air fryer basket with a perforated parchment round. Drain marinade from steak and set steak pieces onto the parchment.
- Air-fry until steak bites are cooked to your desired doneness, about 6 minutes, shaking the basket at the 3-minute mark.
- Remove steak bites from the air fryer and sprinkle with toasted sesame seeds before serving.

GRANDMA'S SOUR CREAM CHEESECAKE BITES
Delicious 2-layer cheesecake bites that are easy to make. These 1-inch bites are great for parties. They won't last long as most people will eat 3 or 4 at a time. Make lots of them!

Steps:
- Mix graham cracker crumbs, melted butter, and sugar for crust together in a bowl until combined. Transfer to a 10x14-inch glass pan and press to cover the bottom. Refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine cream cheese and sugar for cream cheese layer in a bowl. Blend with an electric mixer until smooth. Mix in vanilla and eggs, one at a time, until blended. Pour on top of the cooled crust.
- Bake in the preheated oven until edges are puffed and surface of cheesecake is firm except for a small spot in the center that will jiggle when the pan is gently shaken, about 20 minutes. Remove from the oven and cool on a wire rack for 20 minutes.
- Increase the oven temperature to 450 degrees F (230 degrees C).
- Beat sour cream, sugar, and vanilla for sour cream layer in a bowl with an electric mixer until smooth. Pour on top of the cooled cheesecake.
- Bake in the preheated oven for 10 minutes. Remove from the oven and sprinkle remaining graham cracker crumbs over top. Cool to room temperature, about 30 minutes, then cool in the refrigerator for at least 2 hours.
- Cut into 1-inch squares and serve.
