1/3 packed dark brown sugar
2 tsp. chili powder
1 1/2 tsp. kosher salt
1/2 tsp. ground cinnamon
1/2 tsp. granulated garlic
2-3 large sweet potatoes, peeled and cut into 1-1/2" inch cubes
1 red onion, cut into 1/2" wedges
2 Tbs. unsalted butter, melted
2 pork tenderloins, approx. 1 lb. each

Steps:

  • Preheat oven to 400 degrees F. In a large bowl, combine brown sugar and spices; reserve 2 tablespoons. Add sweet potatoes, onions and melted butter to bowl; toss well to coat, then spread over a large foil-lined or parchment-lined rimmed sheet pan that has been sprayed with non-stick cooking spray; roast for 10 minutes.
  • Meanwhile, rub pork tenderloins with the reserved seasoning mixture. Push sweet potatoes and onions to the sides of the sheet pan, placing the pork tenderloins in the center.
  • Roast tenderloin for 20-22 minutes or until pork is 140-145 degrees F at center when tested with an instant-read meat thermometer, and sweet potatoes are fork-tender.
  • Tent pork tenderloins with foil and let them rest for 3-5 minutes before slicing them into medallions. Serve with sweet potatoes and onions alongside.

1 poblano pepper
1 bell pepper
2 sweet potatoes
1 lime
2 scallions
1 garlic clove
4 tbsp sweet soy glaze*
12 oz pork tenderloin
1/2 c soy sauce (I use Tamari, which is gluten-free)
2/3 c brown sugar
1/3 c white sugar
1/4 c water
2 tbsp white wine vinegar
2 tbsp rice vinegar
1/2 tsp ground ginger

Steps:

  • Preheat oven to 450 degrees and adjust oven racks to the top and middle positions.
  • Core, deseed, and dice poblano and bell pepper into about 1/2 inch pieces. Dice sweet potato into 1/2 inch thick pieces. Toss veggies on a baking tray with a drizzle of oil over the top and a pinch of salt and pepper. Roast on top rack, tossing halfway through. Roast until browned and tender, or approximately 20 to 25 minutes.
  • Stir brown sugar, soy sauce, white sugar, water, white wine vinegar, rice vinegar, and ground ginger together in a saucepan. Bring to a boil, reduce heat to medium-low, and cook until reduced in volume by half, or about 30 minutes. Let glaze cool to thicken, which will take at least 1 hour.
  • Zest and quarter lime. Trim and thinly slice scallions separating whites from greens. Peel and mince garlic.
  • In a small bowl combine the sweet soy glaze, 2 tablespoons of water, and a squeeze of lime juice to your liking.
  • Pat pork dry with a paper towel and season with salt and pepper. Heat oil in a pan over medium-high heat. Add the pork and sear sides, turning occasionally, until browned all over. This will be about 4 to 8 minutes. Turn off the heat, transfer to another baking sheet, and roast on the middle rack until cooked through, or about 12 to 15 minutes (165 degrees, can use a thermometer to check). Remove from oven and let rest for 5 minutes. Thinly slice.
  • Place 1 tablespoon of butter in a microwave-safe bowl and microwave until melted. Stir in a pinch of garlic and lemon zest. Add salt and pepper and pour generously over the roasted veggies.
  • While pork rests, heat a pan over medium-high heat with oil. Add scallion whites and remaining garlic. Cook until aromatic, stirring for 1 to 2 minutes. Pour the sweet soy glaze and cook for 1 to 2 minutes until slightly thickened. Top pork with sauce and scallion greens. Serve with remaining lime wedges.

We've got you covered, and FYI, the answer to that question is pretty delicious. We're serving up succulent pork tenderloin with a side of roasted sweet potatoes, bell pepper, and poblano all tossed in garlicky lime butter. To finish things off, the pork is drizzled with a ridiculously delicious soy-spiked pan sauce. Talk about a dream come true!

Steps:

  • • Adjust racks to top and middle positions and preheat oven to 450 degrees. Wash and dry all produce. • Core, deseed, and dice poblano and bell pepper into ½-inch pieces. Dice sweet potatoes into ½-inch pieces. Toss veggies on a baking sheet with a drizzle of oil and a pinch of salt and pepper. • Roast on top rack, tossing halfway through, until browned and tender, 20-25 minutes. (For 4 servings, divide between 2 sheets; roast sweet potatoes on top rack and peppers on middle rack.)
  • • Meanwhile, zest and quarter lime. Trim and thinly slice scallions, separating whites from greens. Peel and mince garlic. • In a small bowl, combine sweet soy glaze, 2 TBSP water (4 TBSP for 4 servings), and a squeeze of lime juice.
  • • Pat pork* dry with paper towels; season all over with salt and pepper. Heat a drizzle of olive oil in a large pan over medium-high heat. Add pork; sear, turning occasionally, until browned all over, 4-8 minutes. • Turn off heat; transfer to a second baking sheet. (For 4 servings, add pork to sheet with peppers.) Roast on middle rack until pork is cooked through, 12-15 minutes. • Remove from oven; let rest at least 5 minutes. Thinly slice crosswise.
  • • Place 1 TBSP butter (2 TBSP for 4 servings) in a second small microwave-safe bowl; microwave until melted, 30 seconds. Stir in a pinch each of garlic and lime zest; season with salt and pepper. Set aside.
  • • While pork rests, wipe out pan used to sear pork; heat over medium-high heat. Add a drizzle of oil, scallion whites, and remaining garlic. Cook, stirring, until aromatics are softened and fragrant, 1-2 minutes. • Pour in sauce and cook until slightly thickened, 1-2 minutes. Turn off heat.
  • • Once veggies are done, toss with garlic lime butter; season generously with salt and pepper. • Divide veggies and pork between plates. Top pork with sauce. Garnish with scallion greens. Serve with remaining lime wedges on the side.

1 tablespoon minced garlic
1 teaspoon salt, divided
1/2 teaspoon fresh ground pepper
1/2 teaspoon ginger powder
1 1/2 lbs pork tenderloin
4 small sweet potatoes, peeled and cut into 1/2 inch strips (1 1/2 LB)
2 tablespoons olive oil, DIVIDED
1/4 cup firmly packed brown sugar
1/4 cup balsamic vinegar
1/4 cup soy sauce

Steps:

  • Heat oven to 475 degrees F.
  • Mash garlic with 1/4 teaspoon salt, pepper and ginger to form a paste.
  • Place pork in a jelly-roll pan or large roasting pan; rub all over with garlic mixture.
  • Toss sweet potatoes with 1 Tablespoon oil and 3/4 teaspoon more salt in a large bowl. Arrange potatoes in pan around the pork.
  • Combine the brown sugar, vinegar, soy sauce and remaining 1 tablespoon oil in a small saucepan; brush some of the mixture over the pork. Roast pork and potatoes 10 minutes.
  • eanwhile, bring remaining soy sauce mixture to a boil over high heat. boil until sauce is thickened, 5 minutes; remove from heat.
  • Brush half the sauce over the pork and turn sweet potatoes. Rioast 5 minutes more until the sweet potatoes are tender and meast thermometer inserted in thickest part of pork registers 155 degrees F. (I find it takes my tenderloin closer to 20 minutes to reach that temperature).
  • Cut pork into 3/4 inch thick slices. Arrange on a platter with sweet potatoes. Pout any pan drippings and remaining sauce over the pork.
  • Makes 6 servings.
  • I like to double the amount of sauce. because my family loves it so much!

2 lb pork tenderloin
1 medium yellow onion
8 Tbsp honey mustard salad dressing
3 Tbsp soy sauce
3 Tbsp red wine vinegar
2 Tbsp honey
3-4 clove garlic, chopped
2 Tbsp brown sugar
1 Tbsp chili paste
2/3 c water
salt and pepper
slow cooker

Steps:

  • 1. Pat dry pork tenderloin and trim any excess fat. Salt and pepper to taste.
  • 2. Slice onion in rings and lay on bottom of slow cooker. Place pork tenderloin on top of onions. Pour water on bottom of slow cooker around tenderloin.
  • 3. Mix together remaining ingredients. Whisking until combined. At this point taste mixture for sweetness and heat, adjust to your liking.
  • 4. Pour mixture over pork tenderloin.
  • 5. Set slow cooker on high, cook for about 4 hours or on low for about 7 hours.
  • 6. Serve with your favorite side. Mine is basmati rice. Then I garnish with fresh chopped green onions.
