FRESH STRAWBERRY COBBLER
Steps:
- Preheat oven to 375. F
- Grease a 1.8 liter casserole dish. (my oval corning ware dish was 11 x 8½ x2)
- In a medium bowl, add strawberries and sugar.
- Stir to coat strawberries in sugar and set aside.
- In a large bowl whisk together flour, baking powder, salt and sugar.
- Add in milk, vanilla extract and melted butter.
- Stir just until combined. A few lumps are ok so don't overdo it.
- Pour batter evenly into dish.
- Spoon strawberries evenly on top of batter. Do NOT stir.
- Baked for 35-40 minutes or until golden. (may need to adjust time if using a different size dish)
- Serve as is or with vanilla ice cream or frozen whipped cream.
STRAWBERRY COBBLER

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine sugar, water, and cornstarch in a saucepan. Cook over medium heat, stirring constantly, until very thick, about 5 minutes. Remove from heat and mix in strawberries. Pour mixture into a 9x13-inch baking dish.
- Stir flour, baking powder, and salt together in a small bowl. Set aside.
- Cream butter and sugar in a bowl with an electric mixer until light and fluffy. Beat in eggs and vanilla extract. Add flour mixture and stir with a spatula just until ingredients are combined. Drop batter by rounded tablespoons over the strawberry mixture. Try to cover as much filling as possible.
- Bake in the preheated oven until topping is golden brown and filling is bubbling, 35 to 40 minutes. A toothpick inserted into the topping should come out clean. Remove cobbler from the oven and let cool. Serve warm or at room temperature.

STRAWBERRY COBBLER
Strawberry cobbler is the perfect recipe to make in spring, when fresh strawberries are cheap and plentiful! Top it with a scoop of vanilla ice cream while it's still piping hot and you've got yourself a winning dessert.

- Preheat oven to 350°F. Place melted butter in a 9- x 9-inch baking dish.
- Gently stir sliced strawberries, lemon zest, lemon juice, and 1/4 cup of the sugar in a large bowl until totally combined. Let strawberry mixture stand, stirring occasionally, until juicy, about 15 minutes.
- Whisk together flour, baking powder, salt, baking soda, and remaining sugar in a medium bowl until combined.
- Whisk together buttermilk and vanilla in a glass measuring cup. Add buttermilk mixture into flour mixture, and continue to stir until the batter is smooth.
- Pour the dough mixture evenly over melted butter. (Do not stir.) Using a slotted spoon, scatter strawberry mixture evenly over batter.
- Drizzle 3 tablespoons of accumulated juice from bottom of bowl over strawberries. Discard any remaining juice.
- Bake in preheated oven until batter is puffed and slightly golden in the center and dark golden brown around edges, 30-35 minutes. Cool on a wire rack at least 15 minutes. Serve warm with ice cream.

Bisquick Baking Mix: Combine flour, baking powder, sugar, and salt in a large food processor. Pulse until fully incorporated. Add in chopped cold butter and process until texture is like coarse crumbs. Place baking mix in a sealed container and keep in refrigerator. I would try to use it within 6 months, but in my house it would never last that long! You could try to cut the butter in the old fashioned way with a pastry cutter, but I HIGHLY recommend using a food processor it makes it SO much easier. Also, find a good quality sealed plastic container or jar to store. I use one of my larger Lock & Lock containers. You can use this DIY Bisquick in place of any recipe that calls for the kind in the yellow box.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart baking dish with 1 tablespoon butter.
- Bring water, 1/2 cup sugar, and cornstarch to a low boil, stirring constantly, in a saucepan. Add strawberries and basil and stir to coat. Transfer mixture to the prepared baking dish. Cut 1 tablespoon butter into pieces; dot on tops of strawberries.
- Unravel crescent rolls and rip into pieces, arranging them on top of strawberries as desired, adding as little or as much as you'd like. Melt remaining tablespoon butter in a microwave in a microwave-safe dish, about 10 seconds. Brush melted butter over crescent rolls. Sprinkle 1 tablespoon sugar and cinnamon on top.
- Bake, uncovered, in the preheated oven until bubbly and golden, about 25 minutes, covering with aluminum foil for the last 5 minutes to prevent overbrowning.
