AMISH VINEGAR SLAW
Amish Vinegar Slaw is lighter and tangier than a classic mayo-based slaw. Made with shredded cabbage, onion, apple cider vinegar, and dry mustard.

Steps:
- In a large bowl add the shredded cabbage, onion, and sugar.
- Toss well until coated.
- In a saucepan add the white vinegar, apple cider vinegar, celery seed, kosher salt, dry mustard, and vegetable oil.
- Bring to a boil on medium heat and cook for 2 minutes.
- Let cool to room temperature then pour over the cabbage, stirring well to coat.
- Refrigerate at least for 4 hours if not overnight.

SASSY FREEZER SLAW
Coleslaw made up and put in the freezer. Easy to take out and thaw when you need it in a hurry. It does have a crunch to it and a sweet-sour vinegar based dressing. Freeze for up to two months. Chopped onions and bell peppers are an option to add in if you like them.

Steps:
- Mix shredded cabbage and salt together in a colander; drain for 1 hour. Squeeze moisture from cabbage. Stir carrots into cabbage and divide cabbage mixture between pint containers.
- Whisk sugar, vinegar, water, celery seed, and dry mustard together in saucepan over medium high heat; bring to a boil for 1 minute. Cool. Pour cooled vinegar dressing mixture over cabbage mixture, cover containers, and freeze. Thaw before serving.

- In large glass or plastic bowl, place cabbage, carrot, bell pepper and onions. In tightly covered container, shake remaining ingredients. Pour over vegetables; stir.
- Cover; refrigerate at least 3 hours, stirring several times, until chilled and flavors are blended. Stir before serving; serve with slotted spoon.

From the original card: "You won't use up all the dressing at one time for this quick slaw, but keep it in a jar refrigerated for instant use any time" Also: "You may substitute all or part of the apple with fresh pears, grapes (halved and deseeded), orange segments, or raisins. If desired, you may add 1/2 cup diced walnuts to the salad.

Steps:
- Toss cabbage and apple together in chilled salad bowl.
- To make the dressing, combine the sugar, celery seed, salt, dry mustard, onion, and vinegar in screw-top jar. Shake until sugar has dissolved.
- Add oil to the jar and shake vigorously before serving. Dressing will separate upon standing; shake before using.
- Dress the salad with 1/2 c of the dressing. Stir to combine well.
- Store remaining dressing in the refrigerator. It is excellent on fresh fruit salads.
- Recipe may be halved or doubled.
