I have been playing with this spice combination for a while now and I think I have it as close as I'm going to get it to the famous Canadian ''Swiss Chalet'' rotisserie chicken. I hope you all enjoy it :) I serve this with my Recipe #415025 Where I have listed instant tomato soup mix, I use the lipton tomato cup-a-soup mix, I tried entering this in the ingredients and it would not accept it that way. If you cannot find this you can use same amount ketchup as a substitute. This recipe is enough to marinade two 2.5 lbs chickens or one 5 lb chicken.

Number Of Ingredients 13

2 tablespoons onion salt
1 tablespoon flour
2 teaspoons garlic powder
2 teaspoons brown sugar
2 teaspoons instant tomato soup mix
1 teaspoon thyme
1/2 teaspoon ginger
1/2 teaspoon savory
1/2 teaspoon paprika
1/2 teaspoon dry mustard
1/2 teaspoon allspice
2 cups water
4 tablespoons vegetable oil

Steps:

  • Mix all ingredients together in plastic bag. Poke holes into a whole chicken. Place chicken in bag and let marinade at least 6 hours or overnight.
  • Cook chicken in rotisserie oven at 350 degrees for 2 to 2 1/2 hours . Or cook with your prefered method.

Swiss Chalet Style Chicken Dinner Platter. Seasoned Rotisserie Chicken with a small bowl of Dipping Sauce. Dip the Fries in the Sauce too!

4 Chicken Quarters
As Needed JAH Rotisserie Seasoning (- Or use a BBQ Rub)
1 Cube Chicken Maggi Bouillon
2 C Water
2 Tbl Rendered Chicken Fat
2 Tbl Tomato Juice
1 Tbl Worcestershire Sauce
1 Tbl Potato Starch
1 tsp JAH Rotisserie Seasoning
1 tsp Parsley
1/2 tsp Marjoram
1/4 tsp Ground Tarragon, Rosemary & MSG
1/8 tsp Citric Acid, Salt, Black & White Pepper

Steps:

  • Preheat the oven to 375 F. Clean and Prep the Chicken. Save the Trimming to render the fat out later.
  • Season Chicken all over with Rotisserie Seasoning. Place on a rack in a roasting pan, presentation down. Cook for 25 minutes. After 25 minutes, flip the chicken presentation side up and continue to cook 20 minutes.
  • After 45 minutes. Shut the oven off but leave the Chicken in there for 15-20 minutes. While you prepare the Sauce.
  • Combine all of the Dipping Sauce ingredients into a Bowl and mix. Render the trimmed Chicken Fat over medium heat in a sauce pot. Remove the Crackling and add the Bowl of Dipping Sauce ingredients. Bring to a boil mixing often until thickened. Adjust the Seasoning. Remove from the heat and let rest.

1 tablespoon unsalted butter
1 medium onion, chopped or 1 leek, halved lengthwise and sliced (white and light green part only)
8 ounces (225 grams) white or yellow potatoes, peeled and diced into ½-inch cubes
4 cups vegetable stock
Kosher salt and freshly ground pepper
½ cup (75 grams / 2.6 ounces) elbow macaroni
½ cup (75 grams / 2.6 ounces) thawed and squeezed frozen chopped spinach
¼ cup heavy cream
1 cup (85 grams / 3 ounces) grated Gruyere cheese

Steps:

  • Heat the butter over medium heat in a medium Dutch oven or pot. Add the onion and cook until softened, about 5 minutes. Then add the diced potatoes and stir for 20 to 30 seconds.
  • Add the vegetable stock, raise the heat to high, and bring to a boil. Season with salt and pepper, reduce the heat to low, partially cover, and simmer for 8 minutes.
  • Add the macaroni and continue to cook until the macaroni and potatoes are both tender, about 8 minutes more. Stir in the spinach, heavy cream, and grated Gruyere. Make sure to stir well so the cheese melts into the broth evenly. Adjust seasoning as needed and serve immediately.

1 Tbsp tomato paste

1/2 tsp xylitol
1 tsp Frank's red hot sauce
1 tsp paprika
1/4 tsp ground black pepper
1/4 tsp onion powder
1/4 tsp ground ginger
1/4 tsp basil
1/4 tsp oregano
1/8 tsp cinnamon
1/8 tsp ground cloves
1/2 tsp xantham gum

Steps:

  • Whisk all ingredients together in a saucepan, except for the xanthan gum. Bring to a boil and allow to simmer for 10 minutes. Remove from heat and whisk in xanthan gum until thickened. Serve as a dipping sauce with cooked chicken.
