Is it a vegetable side dish or is it corn bread? This recipe comes from The New American Diet Cookbook and is credited to having originated in eastern Oregon. It is deliciously different and goes well with stews, bean soup or chili.

1 large sweet onion, sliced
1/2 cup low-fat yogurt
1/4 teaspoon dill weed
1/4 teaspoon salt
1/2 cup whole wheat pastry flour
1/2 cup cornmeal
1 teaspoon sugar
1 1/2 teaspoons baking powder
3 tablespoons oil
1/2 cup nonfat milk
1 eggs or 1/4 cup egg substitute
1 cup creamed corn
Tabasco sauce
2 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 450 degrees.
  • Spray a non-stick 9 x 9 inch pan with non-stick cooking spray and set aside.
  • Saute the onion slices in a nonstick skillet until soft and slightly browned.
  • Add yogurt, dill weed and salt; mixing well.
  • In a medium size bowl, combine the flour, cornmeal, sugar, baking powder, oil, fat free milk and egg; mix well.
  • Add corn and a few dashes of Tabasco sauce.
  • Pour the batter into prepared pan, spread with onion mixture and sprinkle with grated cheese.
  • Bake for 25 to 30 minutes or until lightly brown.
  • Cut into 9 squares and serve.

2 tablespoons olive oil
2 cups sliced onions
1 teaspoon salt, divided
1/4 teaspoon pepper
2 cups all-purpose flour
3 teaspoons baking powder
5 tablespoons shortening
2/3 cup 2% milk
1 large egg, room temperature
3/4 cup sour cream

Steps:

  • Preheat oven to 400°. In a large skillet, heat oil over medium heat. Add onions; cook and stir until softened, 8-10 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally. Stir in 1/2 teaspoon salt and the pepper., Meanwhile, in a large bowl, combine flour, baking powder and remaining 1/2 teaspoon salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk just until moistened. Press into a greased 9-in. square baking pan; top with onions., Combine egg and sour cream; spread over onion layer. Bake until golden brown, 35-40 minutes. Cut into squares. Serve warm.

⅓ cup grated Parmesan cheese
⅓ cup mayonnaise
⅓ onion, grated, juice reserved
1 (1 pound) loaf cocktail rye bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the Parmesan cheese, mayonnaise, onion and reserved onion juice in a blender or food processor. Blend thoroughly. Spread the mixture evenly on slices of cocktail rye bread.
  • Place cocktail rye bread slices on a large baking sheet. Bake in the preheated oven 10 minutes, or until lightly toasted.

It was a cool spring day when I came up with this sweet and creamy variation of traditional baked French onion soup. I top individual bowls with toasty buttered croutons and a sprinkling of Swiss cheese, then pop them under the broiler. The rich results are delightful! - I. 7 tablespoons butter, divided
1-1/2 cups cubed day-old bread
3 large onions, quartered and thinly sliced
1-1/2 cups water
4-1/2 teaspoons chicken bouillon granules
1/4 cup all-purpose flour
1-3/4 cups milk, divided
1-1/2 cups shredded Swiss cheese, divided
Pepper to taste
Fresh minced chives or parsley

Steps:

  • Melt 3 tablespoons of butter; toss with bread cubes. Place on a lightly greased baking sheet. Bake at 350° for 7 minutes; turn and bake 7 minutes longer or until toasted. , Meanwhile, in a large saucepan, saute onions in remaining butter until lightly browned, about 12 minutes. Stir in water and bouillon; bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Combine flour and 1/2 cup milk until smooth; gradually stir into onion mixture. Stir in remaining milk. Bring to a boil; boil for 2 minutes, stirring until thickened. Reduce heat to low; stir in 3/4 cup Swiss cheese and pepper. , Ladle into four ovenproof bowls; sprinkle with reserved croutons and remaining cheese. Broil 4 in. from the heat until cheese is melted and bubbly. Garnish with chives.

1/4 teaspoon kosher salt
8 tablespoons unsalted butter, chilled and cubed
1/4 cup ice-cold water
3 ounces bacon, finely chopped (known as Speck in Switzerland)
3 tablespoons unsalted butter
1 1/2 lbs white onions, finely chopped (about 3)
kosher salt, to taste
1/2 cup milk
1/2 cup heavy cream
3 eggs
3 ounces grated gruyere cheese or 3 ounces good quality swiss cheese
fresh ground black pepper
freshly grated nutmeg

Steps:

  • Crust:.
  • Pulse flour, baking powder, and salt in a food processor to combine. Add butter and pulse until pea-sized pieces form. Add water; pulse briefly. Transfer dough to a floured work surface; form into a disk. Wrap in plastic wrap; chill for 1 hour.
  • Heat oven to 425°F Transfer dough to a floured work surface. Roll dough into a 13-inch circle; transfer to an 11-inch fluted tart pan with a removable bottom, pressing into bottom and sides. Trim excess dough; chill for 30 minutes. Prick bottom of dough with a fork; cover bottom with a sheet of parchment paper; fill with pie weights or dried beans. Bake until crust is set, about 20 minutes. Remove paper and b eans; bake until crust is light brown, about 15 minutes. Let cool.

  • Cook bacon in a 4-quart saucepan over medium heat until crisp, 7-8 minutes. Using a slotted spoon, transfer bacon to a plate. Discard bacon fat; add butter. 2 cups biscuit mix or 2 cups baking mix
1/2 cup cold water
8 ounces sliced swiss cheese
1 lb sliced bacon, cooked and crumbled
4 eggs, lightly beaten
1/4 cup milk
1/2 teaspoon onion powder

Steps:

  • Cook bacon on stovetop or microwave; crumble.
  • Mix biscuit mix and water in a bowl for 20 strokes, or until just combined.
  • Knead 10 times and place into the bottom of a greased 13x9x2 inch baking dish.
  • Spread dough evenly into bottom of dish and slighty up the sides.
  • Place Swiss cheese in 1 layer over the dough, then top with crumbled bacon.
  • In a bowl, whisk together the eggs, milk and onion powder and pour evenly over bacon.
  • Bake at 425*, for 15-18 minutes or until tests done in center. Cut into squares and serve while hot.

1 pkg (8 oz.) natural swiss cheese slices
1/2 c cold water
4 eggs
1/2 c milk
1/2 tsp onion powder

Steps:

  • 1. Mix the baking mix and water until soft dough forms. Beat vigorously 20 strokes. Gently smooth into ball on floured surface and knead 10 times. Pat into 13x9" baking dish with floured hands, 1/2" up the sides of dish.
  • 2. Top dough with cheese slices, overlapping edges. Sprinkle with bacon. Mix remaining ingredients and pour over bacon.
  • 3. Bake in a 425-degree oven until knife inserted near center comes out clean, about 25 minutes. Cool slightly and cut into squares.
