PICKLED GREEN BEANS



Pickled Green Beans image

I use these in Bloody Marys, instead of celery sticks, and they are always a hit!

2 pounds fresh green beans, rinsed and trimmed
4 cloves garlic, peeled
8 sprigs fresh dill weed
4 teaspoons salt
2 ½ cups white vinegar
2 ½ cups water

Steps:

  • Cut green beans to fit inside pint canning jars.
  • Place green beans in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, for 3 minutes. Plunge beans into ice water. Drain well.
  • Pack the beans into four hot, sterilized pint jars. Place 1 clove garlic and 2 sprigs dill weed in each jar, against the glass. Add 1 teaspoon of salt to each jar.
  • In a large saucepan over high heat, bring vinegar and water to a boil. Pour over beans.
  • Fit the jars with lids and rings and process for 10 minutes in a boiling water bath.

This recipe is from my Grandmother's cookbook she made to pass to all her grandchildren. They come out very, very crisp with a wonderful dill flavor. The red pepper flakes give them a nice punch. They are much better than the recipes that call for cooking the beans first.

2 ½ pounds fresh green beans
2 ½ cups distilled white vinegar
2 cups water
¼ cup salt
1 clove garlic, peeled
1 bunch fresh dill weed
¾ teaspoon red pepper flakes

Steps:

  • Sterilize 6 (1/2 pint) jars with rings and lids and keep hot. Trim green beans to 1/4 inch shorter than your jars.
  • In a large saucepan, stir together the vinegar, water and salt. Add garlic and bring to a rolling boil over high heat. In each jar, place 1 sprig of dill and 1/8 teaspoon of red pepper flakes. Pack green beans into the jars so they are standing on their ends.
  • Ladle the boiling brine into the jars, filling to within 1/4 inch of the tops. Discard garlic. Seal jars with lids and rings. Place in a hot water bath so they are covered by 1 inch of water. Simmer but do not boil for 10 minutes to process. Cool to room temperature. Test jars for a good seal by pressing on the center of the lid. It should not move. Refrigerate any jars that do not seal properly. Let pickles ferment for 2 to 3 weeks before eating.

Skinny, purple filet beans are fun to grow and make an unusual pickle.

2½ lbs filet beans
12 bay leaves
6 tsp whole black peppercorns
3½ cups water
2¾ cups white vinegar
¾ cup lemon juice
1½ Tbsp pickling salt
¾ cup sugar

Steps:

  • Wash and trim fresh beans.
  • Pack beans into clean, wide-mouth pint jars. This is easier to do if you tip the jar onto its side.
  • Add 2 bay leaves and 1 tsp whole peppercorns to each jar.
  • In a large pot, bring water, vinegar, lemon juice, salt, and sugar to a boil, stirring until sugar and salt dissolve.
  • Pour liquid over beans in jars, leaving ½ inch headspace.
  • Remove bubbles from jar using a chop stick or other non-metal device.
  • Cap, using the two-piece canning lids and process in a boiling water bath canner for 10 minutes.

  • then add lemon juice and cook for more 2 minutes.
  • when it's cool down then put it into airtight jar and enjoy.

5 1/2 pounds wax beans, trimmed and cut into 1" pieces
3 cups sugar
2 tablespoons celery seed
1 tablespoon turmeric
3/4 cup flour
3/8 cup dry mustard
4 cups cider vinegar

Steps:

  • Cook the beans in boiling salted water until just tender but still crisp. Drain. Mix remaining ingredients in a large pot and cook until thick, stirring constantly. Add the drained beans, bring the mixture to a full boil and pour into hot, sterilized preserving jars. Cover and seal.

600 g big prawns
oil (for deep frying)
1 teaspoon salt
1/3 teaspoon red pepper
1 tablespoon cornflour
1/2 tablespoon egg white
1 tablespoon lemon juice
1 tablespoon cornflour
1 teaspoon plain flour
6 tablespoons rice flour
1/2 teaspoon baking powder
salt
1/2 teaspoon red pepper
water

Steps:

  • Shell prawns, leaving each with the tail portion. Cut them from the back, remove intestines and wash well. Pat dry.
  • Season prawns with seasoning and leave aside for 30 minutes.
  • Put batter ingredients into a bowl and mix well. Add in water slowly and stir gently until a smooth batter is formed. Keep in fridge for 30 minutes 10 mins before using remove from fridge.
  • Heat up the oil. Held prawn by the tail and dip into batter to coat prawn, deep-fry until golden brown. The frying time is about 3 minutes. Dish up and drain well.
