Water and vegetable oil called for on salad mix box
1 1/2 cups diced English (seedless) cucumber
1 1/2 cups grape tomatoes, halved
3 scallions, thinly sliced (1/3 cup)
2 tablespoons fresh lemon juice
1/4 cup chopped fresh mint leaves
1/4 cup chopped fresh basil leaves

Steps:

  • Make pasta salad as directed on box.
  • Stir in remaining ingredients. Refrigerate 30 minutes before serving. Cover and refrigerate any remaining salad.

This is a nice summer salad! I found this recipe on the side of a box of acini di pepe pasta and adjusted the recipe to MY liking! I hope you like it too! Cook time is for the pasta.

1 (8 ounce) package acini di pepe pasta, cooked per pkg directions and drained well (rice shaped pasta)
1 cup chopped of fresh mint
1 cup chopped fresh parsley
3 cups chopped peeled and seeded tomatoes
1/2 cup sliced green onion
1 minced garlic clove
3 tablespoons lemon juice
1/4 cup olive oil
salt and pepper

Steps:

  • Combine and mix cooked pasta with all vegetables.
  • Combine the dressing ingredients and mix well.
  • Pour the dressing over the pasta and vegetables and mix gently.
  • Adjust with extra lemon or salt and pepper or olive oil to your taste.
  • Chill until ready to serve.
  • Stir before serving.

Tabbouleh is traditionally made with tomatoes, onions, parsley, and mint; this version was created with a mixture of our favorite vegetables.

1 cup bulgur wheat
2 ears fresh corn or 1 cup frozen
3/4 pound asparagus, trimmed and cut into 1 1/4-inch long pieces
1/2 (about 1 cup) fennel bulb, julienned
3 scallions, thinly sliced diagonally
1/4 cup roughly chopped cilantro leaves
2 tablespoons freshly squeezed lime juice
2 tablespoons nonfat sour cream
1 tablespoon olive oil
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • In a bowl, cover bulgur with 3 cups boiling water. Let stand 45 minutes. Drain well; return to bowl. Meanwhile, cook asparagus in boiling water until bright green and crisp, about 3 minutes. Using a slotted spoon, transfer asparagus to ice water to cool; drain and pat dry. Cut kernels off cobs, and cook in boiling water, 3 minutes; drain and let cool.
  • Add asparagus, corn, fennel, scallions, and cilantro to bulgur; toss to combine.
  • In a bowl, whisk lime juice, sour cream, oil, salt, and pepper. Pour over salad; toss. Serve at room temperature, or refrigerate.

This vegetable-packed salad requires no cooking, other than boiling water to soak the bulgur wheat. Sweet tomatoes, crunchy cucumbers and crisp asparagus provide texture, while creamy chickpeas add heft. A tangy shallot-lemon vinaigrette brightens the dish and soaks into the bulgur as it sits, developing more flavor over time. The salad can be made a few hours ahead; for best results, toss the salad with half of the dressing and reserve the remaining half. When ready to serve, toss with the reserved dressing to freshen it up. It's a satisfying vegetarian main, a great side for roasted meats and fish, or an easy make-ahead picnic dish.

2 Persian cucumbers, thinly sliced
8 ounces asparagus, trimmed and sliced on the diagonal 1/8-inch-thick
8 ounces cherry tomatoes, halved
1 (15-ounce) can chickpeas, rinsed
4 ounces fresh mozzarella cheese, cut into 1/4-inch cubes (optional)

Steps:

  • In a medium bowl, combine bulgur wheat with enough boiling water to cover by 1 inch. Season lightly with salt and stir to combine. Cover tightly with a tight-fitting lid and let stand until tender, about 25 minutes. Drain well, pressing out excess liquid. Spread out on a baking sheet to cool.
  • Meanwhile, in a large bowl, combine shallot, mustard, lemon juice and garlic. Season with salt and pepper. While whisking constantly, slowly drizzle in oil until well blended.
  • Add remaining ingredients to the vinaigrette and toss to evenly coat. Once bulgur has cooled, add bulgur, season to taste with salt and pepper, and toss again. Transfer to a large serving bowl or platter to serve.

50g bulgur wheat
50g flat-leaf parsley, chopped
50g mint, chopped
200g ripe tomatoes, deseeded and diced
3 spring onions, finely sliced
juice 1 lemon
3 tbsp olive oil

Steps:

  • Rinse the bulgur wheat in a sieve until the water runs clear. Drain well, then transfer to a bowl. Pour over 200ml boiling water, cover with cling film and leave to soak for 30 mins or so while you prepare the rest of the ingredients.
  • Keeping the parsley in a bunch, chop the leaves roughly. Don't worry about the inclusion of some of the stalks; this all adds to the flavour. Now do the same with the mint. Put the chopped herbs in a large bowl and add the tomato and spring onion.
  • Thoroughly drain the bulgur, then add to herb mix, along with lemon juice and olive oil. Mix thoroughly, season and serve.

1/2 cup tomato juice
1 1/2 cups instant couscous
1/4 cup olive oil
1 cup fresh or canned cooked chickpeas
1 1/2 cups diced tomatoes
1 cup peeled, seeded and diced cucumber
1 teaspoon finely chopped garlic
3 tablespoons finely chopped shallots
Zest of 1/2 lemon
3 tablespoons lemon juice
2 cups tightly packed mint leaves, finely chopped
2 teaspoons salt
Black pepper to taste
Tabasco or cayenne pepper

Steps:

  • Bring 1 cup water and the tomato juice to a simmer in a small saucepan. Put the couscous in a large heatproof bowl and pour the hot liquid over it. Add the oil, stir and cover with plastic wrap. Set aside.
  • In another bowl, stir together the chickpeas, tomatoes, cucumber, garlic, shallots, lemon zest and juice, mint, salt and pepper. Use a fork to mix the vegetables with the couscous and finish with Tabasco or cayenne to taste. Cover and refrigerate for at least three hours and preferably overnight to allow the flavors to blend.
