Made completely from scratch! Boneless chicken breasts are seasoned with rosemary and sauteed in broth, then added to savory ingredients for a homemade chicken pot pie everyone will love!

2 refrigerated 9-inch pie crusts, at room temperature, divided
1 tablespoon olive oil, or as needed
2 boneless, skinless chicken breasts, pounded thin
2 tablespoons minced fresh rosemary
2 tablespoons minced fresh parsley
salt and ground black pepper to taste
⅔ cup chicken broth
⅓ cup butter
1 clove garlic, minced
⅓ medium onion, diced
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup all-purpose flour
1 ¾ cups chicken broth
⅔ cup milk
1 (8 ounce) package frozen mixed vegetables, thawed
aluminum foil

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place 1 pie crust in a 9-inch pie plate. Poke several holes in the bottom of the crust.
  • Bake crust in the preheated oven for 5 minutes. Remove and set aside to cool.
  • Heat oil in a medium skillet over medium-high heat. Season both sides of chicken breasts with rosemary, parsley, salt, and pepper. Add chicken to the skillet and saute until golden brown, 2 to 4 minutes per side.
  • Reduce heat to medium-low and add 2/3 cup chicken broth. Simmer, being careful not to overcook, just until chicken juices run clear, 10 to 15 minutes. Transfer chicken to a plate, allowing it to cool until the juices settle, about 15 minutes. Reserve pan drippings.
  • Meanwhile, melt butter in a large skillet over medium heat. Add pan drippings and garlic. Saute until garlic is fragrant, about 30 seconds. Add onion, salt, and pepper and cook until onion is translucent, about 5 minutes. Whisk in flour until mixture thickens.
  • Add 1 3/4 cups chicken broth and milk, 1 cup of liquid at a time, whisking constantly. Remove from heat once mixture begins to thicken.
  • Cut chicken into bite-sized pieces and mix with thawed vegetables and broth mixture until combined. Pour into the pre-baked pie crust. Cut slits in the remaining pie crust and place it on top of the pie, crimping the edges to seal and decorating them with tongs or a fork, if desired.
  • Place pot pie in the oven and bake until crust is golden brown, 30 to 40 minutes. Check edges halfway through baking time and cover them with aluminum foil if they start to brown too much.

This recipe is a combination of a Southern Living Recipe and my Grandmother's recipe. I used short cuts when they worked and this is a recipe that my whole family loves. Even when older kids leave for college, they beg to take some of this with them! All ages love this and the house smells great! Great comfort food! Line your oven with foil paper; there is a lot of filling. Or you can divide it and make one pot pie for now and one for later!

1 1/2 cups potatoes, diced
1/2 cup margarine or 1/2 cup butter
1 cup onion, chopped
1 cup celery, chopped
1 (16 ounce) bag frozen mixed vegetables, thawed
1/2 cup all-purpose flour
2 (15 ounce) packages refrigerated pie crusts (or use your favorite pie crust recipe!)
2 cups chicken broth
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
4 cups cooked chicken, chopped
salt and pepper

Steps:

  • Saute potatoes in margarine for 5 minutes in a Dutch oven.
  • Add onion, celery and thawed frozen vegetables.
  • Saute for another 10 minutes.
  • Add flour gradually to the sauteed mixture, stirring constantly for one minute.
  • Allow refrigerated pie crust to come to room temperature.
  • Meanwhile, combine chicken broth and half and half.
  • Gradually stir into the vegetable mixture.
  • Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper.
  • Add chopped chicken, stirring well.
  • Add additional salt and pepper to taste.
  • Preheat oven to 400 degrees Fahrenheit.
  • Spray a 9 X 13 casserole with nonstick spray.
  • Place pie crust on the bottom of the pan to cover, cutting to fit.
  • Pour chicken/vegetable mixture over the pie crust.
  • Top with the remaining pie crust.
  • Cut vents in the top crust.
  • Bake for 40 minutes or until crust is golden brown.
  • Enjoy!

4 oz (half of 8-oz package) cream cheese, cut into cubes and softened
3 cups chopped cooked chicken
1 package (12 oz) frozen mixed vegetables
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
1 cup shredded sharp Cheddar cheese (4 oz)

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 4-quart saucepan, melt butter over medium heat. Stir in onions, grill seasoning and thyme. Cook 4 to 6 minutes, stirring frequently, until onion softens. Stir in flour; cook and stir 1 to 2 minutes or until mixture is deep golden brown. Stir in broth. Heat to boiling over high heat, stirring frequently. Boil and stir 1 minute. Remove from heat. Stir in cream cheese until melted. Stir in chicken and frozen mixed vegetables.
  • Pour chicken mixture into baking dish. Top mixture with frozen potatoes. Bake 35 to 40 minutes or until golden brown and mixture is at least 165°F in center.

1 1/3 cups frozen green peas
1/4 cup sliced celery
1/3 cup butter
1/3 cup minced onion

1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts

Steps:

  • Preheat oven to 425°F.
  • In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Stir occasionally. Remove from heat, drain and set aside.
  • In the saucepan over medium heat, cook minced onions in butter until soft. Stir in flour, salt, pepper, and celery seed. Mix chicken broth and milk together. Slowly stir in chicken broth and milk mix. Simmer over medium-low heat until thick. Remove from heat and set aside.
  • Put pie crust in glass pie dish (must not be frozen) Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
  • Brush pie crust with milk.
  • Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

1 clove garlic, crushed
1/2 cup all-purpose flour
1 cup chicken broth
1 1/2 cups half-and-half
1/2 teaspoon sea salt
1/3 teaspoon sage
1/4 teaspoon ground black pepper
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
Pinch dry mustard
Pinch cayenne pepper
1 pound cooked chicken breast, cubed
1/4 cup sweet peas
Store-bought puff pastry sheets, for topping

Steps:

  • Preheat the oven to 425 degrees F.
  • In a heavy-duty pot, cook the onion, celery and carrot with the butter on medium to high heat until the vegetables are soft. Add the garlic and cook until fragrant (be careful not to burn). Stir in the flour and cook until a paste forms. Reduce to low heat and add the chicken broth, half-and-half, sea salt, sage, pepper, allspice, nutmeg, dry mustard and cayenne. Cook until thickened, periodically stirring. Remove from the heat and add the chicken and peas. (Pot pie filling can be made the day before and chilled, or day-of if using right away.) Portion the pot pie filling into 4 small oven-safe crocks or baking dishes, with at least 1 cup filling per dish.
