TRAIL MIX WITH HONEY-OATMEAL CLUSTERS

Steps:
- Preheat the oven to 300 degrees F. Mist a baking sheet with cooking spray. Toss the oats with 2 tablespoons water, the vegetable oil, wheat germ and honey. Form small clusters of the mixture on the baking sheet and bake until crisp, about 15 minutes.
- Add the mixed dried fruit to the baking sheet, sprinkle with the cinnamon and bake 3 to 5 more minutes. Let cool, then toss with the nuts, sunflower seeds, raisins, coconut and M&M's. Store in an airtight container.
TRAIL MIX SANDWICHES
Going on an adventure? These unique sandwiches pack a lot of nutrients and travel extremely well. They do require an adventurous spirit because they are quite different than they average fare. For a sweeter taste use a trail mix that includes dried fruit. I would not recommend one with chocolate pieces, though! Plain, unchopped sunflower seeds work great, too.

INSPIRED TRAIL MIX
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a bowl, toss together the cashews, maple syrup, cinnamon, cayenne, and salt until well mixed. Spread the mixture onto the baking sheet. Bake until golden brown, stirring half way through, about 10 minutes. Remove from the oven and scrape the nuts onto a plate to cool.
- When the nuts are cool, put them into a bowl and toss them together with the apricots and raisins.
- Serving suggestions: Divide the mix into small individual containers for snacking. Spoon a few tablespoons over a serving of yogurt or frozen yogurt. Add a few tablespoons to a bowl of fruit salad.

THE BEST HOMEMADE TRAIL MIX
My friend told me what she adds to her trail mix and I just eyeballed it. Your main components should be peanuts and almonds. 5This fills my 5 quart bowl to the brim, so you'll need a humongous bowl, or two large ones. You can add craisins if you want, and any dried fruit.I only used about 12 oz almonds and about 2/3 tub of raisins. My kids love this!

- Combine rice cereal, oat cereal, nuts, and sunflower seeds in a large bowl.
- Pour agave and sugar into a medium saucepan. Heat over medium heat until boiling, 3 to 5 minutes. Boil for 1 minute. Add peanut butter and vanilla extract; stir until peanut butter is melted, 3 to 5 minutes.
- Pour peanut butter mixture over cereal mixture; mix well. Spray a 10x15-inch baking pan with cooking spray. Press mixture into the pan. Let stand until firm and set, about 30 minutes.
- Cut into 1 1/2-inch squares.

TRAIL MIX
My kids love to help me make this. Again, this is an awesome lunch box item. If they don't eat this at lunch, they tend to pull it out in the car on the way home - so I don't hear the ongoing whine of "I'm sssstttttaaaaaaarrrrrvvvvvviiinnnnngggg!!!!!" Because peanuts are a high allergen food, I use raw (EFA-rich) almonds and sunflower seeds. Chocolate/carob is not necessary in this recipe. A great substitute is dried cherries, cranberries, or blueberries. Try one of these combos: almond/raisin (simple and tastes like PB&J) almonds/prunes/apricots/sunflower seeds (tastes divine and is a great source of fiber) raw cashews/coconut/dried bananas/raisins and maybe chocolate chips ("Monkey Chow") almonds/sunflower seeds/cherries/bananas (tangy and crunchy)

I wanted to make Hungry Girls recipe with the same name, but I couldn't find kosher dark chocolate soy nuts. Also, I don't want to ingest the chemicals or fat used in microwave popcorn bags. So I made some substitutions. I like to use Funky Monkey for the freeze dried fruit.

- There are 2 ways to air-pop your microwave. You can either pull out your 80's era popcorn popper. Once the popcorn is popped, spray with olive oil and sprinkle on the nutritional yeast. OR spray the inside of a brown paper lunch sack with olive oil, add the popcorn kernels, nutritional yeast, fold the bag over and microwave on high for 4 minutes (stop the microwave when you no longer hear at at least a pop a second).
- Throw it into a bowl. Once the popcorn is cool, add the rest of the ingredients and mix.
