A creative twist on the traditional sloppy joe, this yummy sandwich is made with seasoned chicken taco meat and sliced cheese.

Number Of Ingredients 10

50 slices Cheese, white American
50 each Hamburger buns, whole wheat
50 servings Taco Joe Meat ((see details below))
50 slices Cheese, yellow American
as needed Cooking spray
1 teaspoon Taco seasoning
12½ pounds Taco meat, chicken
1 teaspoon Cumin, ground
1 teaspoon Paprika, ground
1 teaspoon Garlic, granulated

Steps:

  • Place one slice of white cheese on each bottom bun.
  • Top with 4 ounces drained taco joe meat.
  • Top with one slice of yellow cheese.
  • Finish by spraying the buns with cooking spray and sprinkle with taco seasoning.CCP: Hold hot at 140° F or above for service.

1 small onion, chopped (1/4 cup)
1/2 jar (16-ounce size) Old El Paso™ salsa (any variety)
1 can (11 ounces) vacuum-packed whole kernel corn
5 Old El Paso™ taco shells
Shredded lettuce, if desired

Steps:

  • Cook beef in 10-inch skillet over medium-high heat about 6 minutes, stirring occasionally, until brown; drain. Stir in celery, onion, salsa and corn. Heat to boiling, stirring constantly; reduce heat. Simmer uncovered 5 minutes, stirring occasionally.
  • Heat taco shells as directed on package. Spoon beef mixture into taco shells. Top with lettuce.

8 hamburger buns, split and toasted
2 cups shredded cheddar cheese

Steps:

  • Cook beef in a skillet over medium heat and drain fat.
  • Add tomatoes, Worcestershire and seasonings.
  • Stir well and bring to a boil.
  • Reduce heat, simmer, uncovered, for 15 to 20 minutes or until thickened.

These aren't your mama's sloppy joes! Crock Pot Taco Joes are delicious taco inspired sandwiches that feed a crowd.

3 lbs ground beef (browned & drained)
32 oz refried beans ((2 - 16 oz cans))
10 oz can enchilada sauce
1 oz pkg taco seasoning ((some packets have 1.5 oz))
16 oz jar salsa
25 hot dog buns (split)
Garnish: shredded Cheddar cheese (shredded lettuce, chopped tomatoes, sour cream)

Steps:

  • Pour ground beef in slow cooker, then add 1 can of refried beans, enchilada sauce, taco seasoning and salsa. Cook on low for 4-6 hours depending on your slow cooker. After cooked, stir in the other can of refried beans.
  • To serve, fill each bun with 1/3 cup of Taco Joe mixture and garnish as desired.

3 tablespoons oil or other fat
2 pounds ground meat of your choice, such as turkey, lamb, pork, beef, chicken, etc.
1 teaspoon cayenne or smoked paprika
1/2 teaspoon ground cumin
Salt and pepper
1/2 cup chopped onion (about 1 small)
2 cloves garlic, minced
1 cup tomato product of your choice, such as sauce, crushed, diced, etc.
1 cup liquid of your choice, such as water, stock, beer, etc.
1/4 cup mustard
1/4 cup brown sugar, optional
6 to 8 tortillas or buns
Optional toppers: diced avocado, chopped tomatoes, fresh cilantro leaves, lime wedges, sliced radishes, shaved cabbage, sliced jalapenos

Steps:

  • Heat a large pan over medium heat and add the oil. When hot, add the meat, cayenne, cumin and some salt and pepper. Cook, without stirring, until the meat is browned on the bottom, about 5 minutes. Break it up with a wooden spoon, then add the onions and garlic and cook for 2 more minutes.
  • Add the tomato, liquid, mustard and sugar, if using, to the pan and bring to a simmer; simmer for 5 minutes.
  • Toast the tortillas or buns. Serve the sloppy joe mixture on the tortillas or buns and top with your favorite toppers.

Not only is this very easy to make, but the fact that it is made in a slow cooker allows me to prep it earlier in the day before things get too hectic. I think you'll enjoy this as well. Leftovers are yummy spooned over a baked potato.
