Taco Quinoa Bowls are loaded with chicken, seasoned veggies, and quinoa! Top with salsa, sour cream, or guacamole.

1 ¼ cups uncooked quinoa
2 cups chicken broth
2 green onions (divided, 1 sliced. )
1 pound ground chicken (,turkey or beef)
½ onion (finely diced)
2 tablespoons taco seasoning
1 cup canned Mexican corn mix (drained)
toppings as desired (see notes)

Steps:

  • Rinse quinoa until water is clear. Combine quinoa, broth and one whole green onion in a sauce pan. Bring to a boil, reduce heat and simmer covered 25 minutes.
  • Meanwhile, brown ground chicken and onion in pan until no pink remains. Add taco seasoning and ½ cup water. Simmer until thickened.
  • Divide quinoa over four bowls (discard whole onion). Top with seasoned chicken, corn, and sliced green onion. Add toppings as desired.

  • Rinse quinoa well in fine mesh colander until water runs clear. Bring 2 cups of water to a rolling boil. Add quinoa and let simmer in salted water for 15-20 minutes.
  • Heat olive oil in skillet over medium-high heat. Add beans and season with taco seasoning. Heat 5-10 minutes, until warmed through.
  • Mash avocado and lime juice with a fork. Season with a pinch of garlic salt and cumin. Season with salt and pepper, to taste.

  • Heat the oil in a large pan over medium high heat. Add the onions and garlic to the pan and cook for 1-2 minutes or until softened and fragrant. Add ground beef to pan and cook for 6-8 minutes. Drain off any fat.
  • Add quinoa to the pan stirring to ensure it’s covered with liquid. Turn down heat to medium low and simmer for 15 minutes, until the liquid is absorbed and quinoa is cooked through. Stir in tomatoes. Remove pan from heat and allow to sit for 5 minutes.
