Tandoori lamb skewers with crunchy slaw & raita image

Flavourful lamb and superhealthy slaw will see you well on your way to your five-a-day and out of the kitchen in 20 minutes

4 tbsp fat-free Greek yogurt
1 tbsp tandoori paste
175g leg of lamb steak, all visible fat removed, cubed
small bunch coriander , chopped
2 wholemeal chapatis
1 carrot , peeled and sliced into strips with a peeler
¼ white cabbage , shredded
1 red onion , sliced
juice 1 lime
2 tsp olive oil
1 tsp mustard seeds

Steps:

  • In a medium bowl, combine 2 tbsp of yogurt with the tandoori paste. Add lamb, mixing to coat all the pieces. Make raita with the remaining yogurt, 1 tbsp of the chopped coriander and some seasoning, then set aside. For the slaw, mix together all of the vegetables and the remaining coriander in a large bowl, then stir in the lime juice, oil and mustard seeds.
  • Heat the grill to high. Divide the lamb between 4 skewers, grill for 3-4 mins each side, until lightly charred and cooked through. Serve with the slaw, raita and warmed chapatis.

1 teaspoon cumin powder
1 teaspoon garam masala
Seeds from 3 cardamom pods (1/2 teaspoon ground in mortar and pestle)
1 teaspoon onion powder
3 tablespoons bottled minced garlic or 8 cloves minced
1 cup plain yogurt
2 tablespoons sweet paprika
3 tablespoons Indian curry powder
1/2 cup chopped cilantro leaves, plus leaves for garnish
2 teaspoons kosher salt or Hawaiian sea salt
2 teaspoons cracked black pepper
1 pound boneless leg of lamb, trimmed and cut into 1-inch cubes
4 to 5 scallions, cut into 1-inch pieces
Basmati rice with cilantro (or orzo with spinach and butter), for serving
Lime wedges and a side of raita (yogurt sauce with vegetables), for serving

Steps:

  • Heat the cumin, garam masala and cardamom in a dry pan, over low heat, until fragrant, about 1 to 2 minutes. Add the onion powder and garlic then transfer the mixture to a bowl. Add the yogurt, paprika, curry powder, cilantro, salt and pepper.
  • Thread 4 cubes of lamb on each skewer, alternating with scallion pieces and leaving about 1/3 of the skewer as a handle. Arrange them in a shallow glass baking dish and pour the yogurt mixture over them, (turn to coat if needed). Allow to marinate for 1 hour to overnight, in the refrigerator. Brush the grill with an oiled paper towel and preheat it to medium-high. Arrange the skewers at angle for nice grill marks and grill 3 to 4 minutes per side for medium-rare, 5 to 6 minutes per side for medium. Transfer the skewers to a serving platter and garnish with lime wedges and cilantro.
  • Serve with basmati rice with cilantro or orzo with spinach and butter and a side of raita (yogurt sauce with vegetables), if desired.

Tandoori Lamb Kebabs With Raita and Couscous image

Yummy tandoori kebabs served over couscous and toped with raita. It is also very easy to prepare and does not take that long apart from the marinating time.

800 g lamb fillets (depending on appetites my hubby and son will eat 3 to 4 kebabs each where as I'm happy with 2)
3 tablespoons tandoori paste (I use Rajah brand)
150 g plain yogurt, pot
1 tablespoon lemon juice
300 g plain yogurt
1 medium cucumber, Seeded and chopped (120g)
1 1/2 tablespoons of fresh mint, finely chopped
1 teaspoon mint sauce
2 (100 g) packages quick cook instant couscous (The brand I buy come in 100g individual sachets for 4 servings it is between 150g-200g )
1 teaspoon vegetable stock powder
1 small red pepper, finely chopped
1/2 small yellow pepper, finely chopped
1 small red onion, finely chopped
3 green onions, thinly sliced
2 tablespoons of fresh mint, finely chopped
3 tablespoons fresh parsley, finely chopped
1 tablespoon white wine vinegar
2 tablespoons lemon juice
3 tablespoons olive oil

Steps:

  • Prep time does not include marinating time.
  • Chop lamb into about 1 inch cubes, combine paste, yogurt and lemon juice, add lamb and marinate several hours or overnight.
  • Either thread lamb on metal skewers or if using wooden skewers make sure they are soaked for 20-30 Min's in water to prevent burning during cooking.
  • Cook lamb on BBQ or grill 4-6 inches from heat until cooked as desired. (approx 5-10 Min's a side, medium rare-medium well).
  • Raita.
  • In a medium size bowl combine yogurt, cucumber, mint and mint sauce mix well and refrigerate until needed.
  • Couscous.
  • If using quick cooking sachets I add 1 teaspoon of chicken stock powder to the water, bring to boil and add the sachets for a couple of minutes. Remove from pan and add couscous to a large bowl and fluff. If using another type of couscous prepare according to packet.
  • Add both peppers, red and green onions, mint and parsley combine well.
  • Combine vinegar, lemon juice and olive oil in screw top jar shake well. Pour over couscous and mix well.
  • To serve place couscous on plate top with kebab and drizzle with raita.
