4 to 5 pounds pork spareribs
2 tablespoons butter
1 medium onion, finely chopped
1/2 cup finely chopped celery
1 cup water
1 cup ketchup
1/3 cup lemon juice
2 tablespoons brown sugar
2 tablespoons white vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon ground mustard
1/8 teaspoon pepper
1/8 teaspoon chili powder

Steps:

  • Cut ribs into serving-size pieces; place in a shallow roasting pan, bone side down. Bake, uncovered, at 350° for 45 minutes. , Meanwhile, in a large saucepan, heat butter over medium-high heat. Add onion and celery; cook and stir for 4-5 minutes or until tender. Stir in the remaining ingredients. Bring to a boil; reduce heat. Simmer about 10 minutes or until slightly thickened, stirring occasionally; remove from the heat. , Drain fat from roasting pan. Pour sauce over ribs. Bake 45-60 minutes longer or until ribs are tender.

6 racks baby back ribs
1 tablespoon ground cumin
1 tablespoon paprika
2 teaspoons red pepper flakes
Salt and freshly ground black pepper
1 (12-ounce) bottle light beer (recommended: Miller MGD 64)
1 lemon, zested
2 tablespoons tomato paste
2 Roma tomatoes, chopped
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 yellow onion, sliced
2 cloves garlic, chopped
2 limes, juiced
2 avocados, diced
1 cabbage head, shaved
1 cucumber, seeded and shaved
1 fennel bulb, shaved
1 jalapeno, diced
1 bunch fresh cilantro, chopped
1/2 red onion, shaved
Salt and freshly ground black pepper

Steps:

  • For the ribs: Preheat the oven to 400 degrees F.
  • Place the ribs in a deep pan and rub with the cumin paprika, red pepper flakes, 2 teaspoons salt and 2 teaspoons black pepper. Let sit 30 minutes.
  • In the meantime, whisk together the beer, lemon zest and tomato paste. Pour over the ribs. Scatter the ribs with the tomatoes, bell peppers, onions and garlic. Cover tightly with foil and bake 3 hours.
  • While the ribs are cooking, make the slaw: In a mixing bowl, whisk together the lime juice and avocado until the avocado is just broken up. Add the cabbage, cucumber, fennel, jalapeno, cilantro and onions and season well with salt and pepper. Cover and refrigerate.
  • To prepare: Preheat a grill to medium-high heat. Remove the ribs from the oven and finish on the grill until the outside is crisp, 15 to 20 minutes. Serve the ribs with the slaw on the side.

8 country style pork ribs
1 cup honey
1 cup ketchup
2 tablespoons molasses
1 (18 ounce) bottle barbeque sauce

Steps:

  • Preheat grill for medium-high heat.
  • Lightly oil grill grate. Grill ribs for 12 minutes, turning once during cooking. Transfer ribs to an 11x16 inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together the honey, ketchup, molasses, and barbecue sauce.
  • Bake ribs, uncovered, for 1 hour. Remove from the oven, and drain fat. Coat ribs with the honey sauce. Continue baking for another 1 1/2 hours, or until ribs are tender.

4 pounds spareribs, cut into serving-size pieces
1 teaspoon salt
1/2 teaspoon pepper
2 medium onions, sliced
1 cup ketchup
3/4 cup water
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper

Steps:

  • Place the ribs in a shallow roasting pan; sprinkle with salt and pepper. Top with onions. Cover and bake at 350° for 30 minutes; drain. Combine remaining ingredients; mix well. Pour over ribs. Cover and bake for 1 hour. Uncover and bake 15 minutes longer.

1 medium onion, finely chopped
½ cup finely chopped celery
2 tablespoons butter or margarine
1 cup ketchup
1 cup water
⅓ cup lemon juice
2 tablespoons vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
½ teaspoon dry mustard
⅛ teaspoon pepper
⅛ teaspoon chili powder

Steps:

  • Cut ribs into serving-size pieces; place on a rack in a shallow roasting pan. Bake, uncovered, at 350 degrees F for 1 hour.
  • Meanwhile in a medium saucepan, saute onion and celery in butter for 4-5 minutes or until tender. Add remaining ingredients; mix well. Bring to a boil reduce heat. Cook and stir until slightly thickened, about 10 minutes. Remove from the heat. Drain fat from roasting pan. Pour sauce over ribs. Bake 1-1/2 hours longer or until meat is tender.

1 teaspoon sugar
1 teaspoon paprika
1/2 teaspoon salt

1 lb boneless pork ribs, cut into 2 inch pieces
1 tablespoon canola oil
1 (16 ounce) package frozen bell peppers and onions

Steps:

  • combine cayenne, sugar, salt,pepper,& paprika in a medium bowl.
  • Add pork and toss to coat.
  • Cover& refrigerate for 15 minutes, or overnight.
  • Heat oil in a large nonstick skillet over high heat.
  • Add pepper& onion mix& cook, stirring occasionally, until vegetables are soft, 5 to 7 minutes.
  • Add the spice rub pork and cook, stirring, about 3 to 7 minutes.
  • Serve hot.

3 tablespoons extra-virgin olive oil
4 pounds baby-back ribs, split into pairs
1/2 cup dry white wine
2 very large onions, sliced very thin, about 6 cups
Fine sea salt
1/2 to 1 chopped chili pepper or 3/4 tablespoon dried red chili pepper

Steps:

  • Pour the olive oil into a 12-inch sauté pan, turn the heat to high, and when the oil is hot, slip in the meat. Turn the ribs two or three times to brown them well. If the pan is crowded, do a batch at at time, then return them all to the pan. Pour in the wine and turn the ribs once or twice while the wine bubbles completely away.
  • Add the sliced onions, salt and chili pepper, cover the pan and turn the heat down to low. Cook for 2 to 3 hours, turning the ribs occasionally, until the meaty part of the ribs feels very tender and the onions have cooked down to a creamy consistency.

5 lbs beef short ribs
2 tablespoons oil
1 cup onion, chopped
1 1/4 cups catsup
3/4 cup water
1/4 cup Worcestershire sauce
1/4 cup vinegar
2 tablespoons brown sugar
2 teaspoons salt

Steps:

  • Cut ribs into individual portions, about 2 1/2-inches wide; trim excess fat.
  • Place ribs on rack in a foil-lined roasting pan, bake in pre-heated 450F oven until browned about 20 minutes.
  • Reduce temperature to 350°F.
  • Remove beef and rack from the pan; pour off fat.
  • Return beef to pan without the rack.
  • Heat oil in a saucepan, add onions and saute for 2 minutes.
  • Stir in remaining ingredients; bring to a boil.
  • Reduce heat and simmer, uncovered, 2 minutes; pour over beef to coat.
  • Cover and bake in 350F oven until beef is fork tender, about 2 hours, spooning sauce over beef once.
  • Skim excess fat from sauce in pan.
  • Arrange beef on a platter; seve with pan sauce.
