CHICKEN WITH TARRAGON SAUCE

This is comfort food at its finest. I cook it at least once a week and usually serve it with homemade mashed potatoes and sautéed fresh green beans. -Cher Schwartz, Ellisville, Missouri

Number Of Ingredients 9

4 boneless skinless chicken breast halves (5 ounces each)
3/4 teaspoon salt, divided
1/4 teaspoon pepper
1 tablespoon butter
1 tablespoon olive oil
1 shallot, chopped
3/4 cup heavy whipping cream
3 teaspoons minced fresh tarragon, divided
2 teaspoons lemon juice

Steps:

  • Pound chicken breasts with a meat mallet to 1/2-in. thickness. Sprinkle chicken with 1/2 teaspoon salt and pepper., In a large skillet, heat butter and oil over medium heat. Add chicken; cook 4-5 minutes on each side or until no longer pink. Remove chicken from pan; keep warm., Add shallot to same pan; cook and stir over medium heat until tender. Add cream, stirring to loosen browned bits from pan. Increase heat to medium-high; cook until slightly thickened. Stir in 2 teaspoons tarragon, lemon juice and remaining salt. Serve with chicken. Sprinkle with remaining tarragon.

I'm not really sure where I got this recipe. It's written in my handwriting on a 3x5 card that's stained with soy sauce. This makes a good marinade for beef or pork.

1/2 cup soy sauce
1/2 cup water
2 tablespoons oil
2 tablespoons lemon juice
1 tablespoon brown sugar, packed
1 garlic clove, minced
1/4 teaspoon red pepper

Steps:

  • Mix all ingredients well.
  • Pour over beef or pork and marinate 8 hours or overnight.
  • Grill or broil meat.
  • Leftover marinade should be discarded.

3 garlic cloves
1 teaspoon of tarragon flakes
1 teaspoon of coarsley ground black pepper
1/2 cup of olive oil
1 1/2 cups of soy sauce Terriaki style is preferred
3 boneless skinless Chicken breasts.(or steaks or chops)

Steps:

  • Put all ingredients (except meat) into blender, blend and reserve a small amount of marinade for basting or for dressing. Make three or four long cuts 3/4 of the way to one end of the chicken breasts resulting in a piece resembeling a 3 or four fingered hand. Put meat in marinade and refrigerate for and hour or two ocasionally agitating to cover all the meat. Grill over a hot fire till done. Rest a few minutes. Slice and serve. Any left-over meat can be chilled, cut up and mixed with the mayo/marinade dressing to make a great meat salad, adding chopped celery & chopped scallions.

I clipped this recipe from a magazine years ago. "The marinade also works well for grilling whole chicken breasts or cut-up chicken pieces. Tips for grilling chicken: take out chicken 20 minutes before grilling and cut into uniform sizes so it will cook evenly throughout. You can prick the chicken with a fork to allow marinade to soak in. Do not over-marinate chicken, as it will draw out the juices and make it tougher. Because bacteria can multiply when marinating chicken, you should always discard marinade after soaking the chicken in it. In fact you shouldn't even use it for basting. Any kind of kabobs are perfect for entertaining a crowd of family or friends. They provide a simple, self contained meal--after all, meat, vegetables and fruit can all be grill at one time. If you don't have a grill or if weather doesn't permit outdoor cooking, you can get great results using the broiler setting on your oven. I prefer sturdy metal skewers; wooden skewers also work well but must be soaked in water for about 1 hour before using."

1/2 cup vegetable oil
1/4 cup soy sauce
1 tablespoon crushed dried tarragon
4 boneless skinless chicken breasts (cut into 1 x 3 inch strips)
1 cup cherry tomatoes
1 red onion (cut into 1 x 2-inch chunks)
1 fresh pineapple (cut into 2-inch slices)

Steps:

  • Whisk together pineapple juice, oil, soy sauce and tarragon in 9 x 13-inch glass baking dish. Toss chicken and vegetables in mixture and marinate at room temperature for 20 minutes, turning to re-coat now and then.
  • Form kabobs by alternating chicken, onions, tomatoes and pineapple. Grill over medium heat, 4-5 minutes per side.

2 tablespoons apple cider vinegar
1/2 orange juiced
1 clove of garlic crushed and minced
1 teaspoon fresh tarragon chopped
1/4 teaspoon onion powder
Salt and pepper to taste

Steps:

  • Combine liquid ingredients with spices and cook on low heat for 3 minutes. Remove from heat and cool. Marinate chicken or fish for 20 minutes or more. Cook chicken or fish in remaining marinade. Deglaze the pan periodically with a little water. Save the sauce and add apple cider vinegar to make additional dressing for a salad. Serve over a mixed green salad or with other vegetable. Makes 1 serving (1 fruit)

3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Using a damp towel, gently wipe dirt from mushrooms. Trim the stems flush with the caps; discard stems.
  • Place mushrooms in a medium bowl, and add the remaining ingredients. Toss to combine. Set mushrooms aside at room temperature, stirring occasionally, to marinate, at least 20 minutes or up to 4 hours. Serve at room temperature.
