Hotdish (Tater Tot Casserole) image

Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

1/4 cup extra-virgin olive oil
1 medium yellow onion, finely chopped (about 2 cups)
1 pound 80-percent lean ground beef
Kosher salt and freshly ground black pepper
2 cups frozen cut green beans, thawed (8 ounces)
1 3/4 cups frozen corn kernels, thawed (8 ounces)
Two 10-ounce cans condensed cream of mushroom soup
1 pound frozen potato tots

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
  • Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

1 tablespoon vegetable oil

Steps:

  • In a large skillet, brown pork chops in oil on both sides. Meanwhile, in a large bowl, combine potatoes and sauce mix according to package directions. Spoon into a greased 13-in. x 9-in. baking dish. Arrange chops over potatoes., Bake, uncovered, at 375° for 20-25 minutes or until meat juices run clear and potatoes are tender. Sprinkle cheese and bacon over chops. Bake 2-3 minutes longer or until cheese is melted.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet over high heat, brown the ground beef and drain fat. Stir in condensed cream of mushroom soup, skim milk, garlic salt and green beans. Pour the mixture into a medium-sized casserole dish and layer with the tater tots.
  • Bake in preheated oven for about 30 minutes, or until tater tots are browned and crispy.

½ (32 ounce) package tater tots

1 ½ cups shredded Cheddar cheese

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, brown the ground beef with the onions. Drain excess fat, and season with salt and pepper to taste.
  • Spread the beef mixture evenly over the bottom of a 2 quart casserole dish. Arrange tater tots evenly over beef layer. In a small bowl, stir the soup into the milk until smooth; pour over tater tot and beef layers. Sprinkle Cheddar cheese evenly over the top.

Whisk in the Parmesan cheese, salt, and nutmeg. Cook an additional 1 minute, whisking, then remove from the heat, set aside, and cover to keep warm.
  • In a large skillet, heat 1 tablespoon of the oil over medium-high heat until hot, but not smoking. Add the mushrooms and spread them into a single layer. Cook without stirring until they get golden brown, about 3 minutes. Stir and sprinkle in the onion powder. Pour the mushrooms into a medium bowl and cover to keep warm.
  • Add the remaining 1 tablespoon of the oil to the hot skillet, then pour the microwaved potatoes into the pan in a single layer, not stirring for 1 minute until golden brown on one side. Sprinkle with the thyme, stir and cook for 2-3 more minutes.
