I'm originally from Minnesota, and if Minnesota is famous for one thing, it's hotdish. You might know it better as casserole, or something like that, but in Minnesota, it's hotdish. This is my mom's recipe, the same one that she used to make for me when I was little.

1 lb ground beef
1 (1 lb) package tater tots (you probably won't use the whole package, but this is usually the smallest size I can find)
2 (10 ounce) cans condensed cream of mushroom soup (or 3 cans if you want it extra creamy)
1 (14 ounce) can vegetables (or 2 cans, whatever kind you like, I like sweet corn, my mom uses green beans)

Steps:

  • Preheat oven to 350 degrees.
  • While the oven is preheating, brown the ground beef (seasoning to taste as you cook) and drain off the grease.
  • Spread the beef in the bottom of a 2 to 2 1/2 quart baking dish.
  • Drain the liquid off the vegetables and spread them over the meat.
  • Using a rubber spatula, spread the cans of soup over the top of the vegetables and meat. Use the soup as is, straight from the can. Do NOT mix it with anything.
  • Arrange a layer of tater tots over the top of that.
  • Bake, uncovered, at 350 degrees for 50 minutes.
  • Top with your favorite variety of shredded cheese as you serve.

Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

1/4 cup extra-virgin olive oil
1 medium yellow onion, finely chopped (about 2 cups)
1 pound 80-percent lean ground beef
Kosher salt and freshly ground black pepper
2 cups frozen cut green beans, thawed (8 ounces)
1 3/4 cups frozen corn kernels, thawed (8 ounces)
Two 10-ounce cans condensed cream of mushroom soup
1 pound frozen potato tots

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
  • Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®), divided
1 pound ground beef
1 cup chopped onion
2 teaspoons Worcestershire sauce
2 teaspoons Montreal-style steak seasoning
1 teaspoon garlic powder
½ teaspoon ground black pepper
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk
½ cup grated Cheddar cheese
1 teaspoon Worcestershire sauce
1 cup grated Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch casserole dish with cooking spray.
  • Spread 20 potato nuggets in the casserole dish.
  • Bake in preheated oven until warmed through, about 10 minutes.
  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease. Season beef mixture with 2 teaspoons Worcestershire sauce, steak seasoning, garlic powder, and black pepper.

I got this recipe from the matron of honor at my wedding, 16 years ago. We make it a lot and it is popular at potlucks. I know there are tons of "tater tot casseroles" on zaar but each one is a little different and this one is very good too.

1 lb ground beef (I use lean)
1 small onion, diced
1 (15 ounce) can French style green beans, drained
1 small green pepper, diced
1 (28 ounce) jar ragu chunky garden vegetable spaghetti sauce
1 (2 lb) bag frozen tater tots

Steps:

  • Brown ground beef and drain.
  • Cook onion and green pepper until tender.
  • Add to ground beef.
  • Stir well and add drained green beans. Mix well.
  • Add whole jar of spaghetti sauce and mix well.
  • Put in 9x13 casserole and top with frozen tater tots spread evenly over top.
  • Bske at 350 until tater tots are crisp and casserole is bubbly (about 25 min.).
  • Or, you can bake it at 375, watching so that tater tots do not burn but still get crispy and casserole is bubbly (about 15-20 min).
  • Serve hot with a green salad and bread sticks.

1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
8 ounces prepared pulled pork
¾ cup shredded Cheddar cheese
¼ cup BBQ sauce
⅓ cup sour cream
3 medium green onions, chopped

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Spray the cups of a 12-cup muffin pan with nonstick cooking spray.
  • Place 4 to 5 frozen potato nuggets into each muffin cup.
  • Bake in the preheated oven for 10 minutes.
  • Remove muffin pan from the oven. Using a small glass (e.g. a small juice glass or shot glass) twist and press the tots downward in each muffin cup to create a potato cup. Return to the oven and bake until deep golden brown, about 15 more minutes.
  • Remove the pan from the oven and distribute pulled pork evenly between the cups. Add 1 tablespoon of shredded cheese to each potato cup, being careful to try and keep it on top of the pulled pork (not down the sides of the muffin cups).
  • Return to the oven and bake until the cheese has melted, 4 to 5 minutes. Remove from the oven and transfer the potato cups to a serving platter.
  • Drizzle with BBQ sauce, add a small dollop of sour cream, and sprinkle with green onions before serving.

  • In a 12" cast iron skillet, brown beef over medium to medium-high heat, breaking up any large chunks. Once beef is browned, remove it to a plate with a slotted spoon. Discard all but 2 tablespoons of the beef fat, and then add 2 tablespoons of the butter to the beef fat in the skillet. Turn heat to medium. Once butter is melted, add the onion, mushrooms, and garlic. Stir to incorporate. Cook until the onions are transparent and the mushrooms are nicely softened, about 6 to 10 minutes.
  • Now slide everything in the skillet to one side. Add remaining 2 tablespoons of butter to other side of skillet. When the butter is melted, sprinkle the flour over the butter, whisking all the while (a flat whisk works awesome here!). Draw in as much butter, beef fat, and juices from the vegetables as you can, into the flour. Cook for a couple minutes, until the mixture is bubbling and slightly browned.
  • Add soy sauce, Frank's Red Hot Sauce, Worcestershire sauce, salt, and pepper to the gravy side of the pan. Whisk and cook for 1 minute. Then slowly add the milk while you whisk and scrape the bottom of the skillet. Once this mixture is smoothed out, bring the mushroom mixture into the milk mixture, and then add the reserved cooked beef. Stir to incorporate. Cook until thickened, about 8 to 10 minutes. Then stir in sour cream, plus 1 tablespoon of parsley and 1 tablespoon of thyme. Next add the frozen vegetables and stir to incorporate. Level mixture out in the skillet. Then top with frozen tater tots.
