PIZZA BREAD
Our homemade pizza bread is so simple to make and it bakes in minutes. Feel free to add whatever toppings you like on your pizza.

Steps:
- Preheat oven to 375 degrees.
- Slice the bread in half lengthwise.
- Spread each half of the bread with pizza sauce. Top with cheese. Sprinkle with the Italian seasoning. Arrange pepperoni and olives over the cheese.
- Bake on a sheet pan for 10 minutes or until cheese has fully melted.
- Serve hot.

100% WHOLE WHEAT, MULTIPURPOSE DOUGH - PIZZA, BUNS, BREAD
whole grain dough kept refrigerated (or frozen) for pizza, pretzels, or buns. The method is similar to Reinhart's "artisan breads every day". Preparation time does not include refrigeration overnight.

Steps:
- Mix ingredients well (add salt and yeast at different times) and let rest 5 minutes.
- Knead by dough hook for 7 - 8 minutes.
- Stretch and fold and place in an oiled container to rest.
- After 10 minutes, stretch & fold again. Do the same two more times and place in fridge.
- After an overnight stay in the fridge (up to 3 days) divide the dough into 8 oz pieces (6) for pizza or 2.9 oz pieces (16) for buns or a combination of both.
- For pizza dough, place each ball into an oiled plastic sandwich bag and place into the fridge for use within 3 days or freeze for a month or so. Thaw in the fridge overnight.
- Roll each piece of dough for bun into balls and press or roll into round flats 3.5 " to 4" in diameter. Repress to maintain diameter and place on parchment covered to rise for 20 to 30 minutes.
- Preheat oven to 375 F.
- When risen to 1.5 the original volume, place into the oven. Bake 8 minutes and rotate.
- Bake 4 to 6 more minutes until the rolls are 200 F internally.

PIZZA BUNS
The elementary school I attended back in the 1950's used to make these, and were a favorite of most everyone. My wife and I spent a lot of time trying to recreate these when we were first married. Our kids (now in their 30's) still request these when they come to visit. We use canned pizza sauce but spice it up. Left-overs are easily reheated in the toaster oven.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place bun halves, crust sides down, onto a baking sheet. Broil the buns until just toasted, about 1 minute. Watch them carefully, they burn easily. Set the toasted buns aside.
- Turn oven heat to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, cook and stir the ground beef until the meat is browned and crumbly, about 10 minutes. Drain excess grease, and stir in the onion. Cook and stir the beef mixture until the onion is translucent, about 5 more minutes, then stir in the pizza sauce, Parmesan cheese, Italian seasoning, garlic powder, onion powder, crushed red pepper flakes, and paprika. Bring the sauce to a boil, and simmer for 10 to 15 minutes to blend the flavors, stirring often.
- Spoon the beef sauce over the buns on the baking sheet, and top each bun with about 1/4 cup of the shredded mozzarella cheese. Return the buns to the oven, and bake until the cheese is bubbly and lightly browned, about 10 minutes.

EASY PIZZA IN A PINCH

- To make the sauce, combine tomato sauce, garlic, 3 teaspoons herbs, paprika, salt and pepper in a sauce pan over medium-high heat.
- When sauce bubbles, reduce to a low simmer and stir. Cover and allow to simmer over very low heat for 15 minutes.
- Crumble Italian sausage in a pan and cook over medium heat until no longer pink, about 15 minutes. Drain over paper towels. Set aside.
- Preheat oven to 400 degrees F.
- Mix olive oil, garlic and 1 teaspoon herb blend in a small bowl.
- Open hot dog buns and arrange on sheet pans covered in foil.
- Separate buns in halves along the folds if you want to make 16 appetizers; leave whole if you want to make 8 pizzas.
- Brush the buns with the olive oil mixture.
- Toast buns in the oven for about 5 minutes, just until edges begin to brown.

- Return pan to the oven and bake at 400 degrees F for 5 to 10 minutes or until cheeses are bubbling.
- Serve garnished with fresh oregano leaves and crushed red pepper, if desired.

- For the dough: In a large bowl or the bowl of a stand mixer fitted with the kneading hook, mix together 2 cups of the flour, the sugar, salt and instant yeast. In a measuring cup, combine the warm water with the oil. Add the water mixture to the dry ingredients and mix to combine. Knead by hand or with the mixer, add more flour in small increments, as needed, until the dough comes together into a smooth dough. It shouldn't stick to your hands or be dry and crumbly. Grease a bowl and place the dough ball into the bowl. Cover with plastic wrap and let rise until doubled, about 30 - 45 minutes, depending on how warm your kitchen is.
- Remove the dough to a floured cutting board. Cut the dough evenly in half. Cut each half in half again. Cut each piece in half again and then in half again, to make a total of 16 roughly equal sized pieces.
- Take a piece of dough. Form it in to a rough ball, then stretch in to a circle about 4-5 inches in diameter. (You don't need to stretch them completely at this point. Once the dough has rested a few minutes on the baking sheet, they will be easier to shape, so you will be going back and stretching them out a second time later.) Place the dough circle onto the prepared baking sheet. Repeat with each piece of dough, placing 8 on each on the prepared sheets (you can place them fairly close together as they don't spread much, but don't allow them to actually touch each other). Go back to the first pieces you formed and stretch them a little more, as needed.
