Teppanyaki-Style Shrimp and Calrose Rice image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 35m

Yield 2 servings

Number Of Ingredients 21

1 cup Calrose rice, rinsed very well
1/2 teaspoon salt
6 shell-on prawns (U10/U12 size)
1 1/2 teaspoons grapeseed oil
1/4 teaspoon sesame oil
3/4 teaspoon grated fresh ginger root
3/4 teaspoon minced garlic
1/4 small yellow onion, thinly sliced
1 ounce carrots,
8 baby corn, optional
1/4 red bell pepper, thinly sliced
1 large egg
1 tablespoon tamari sauce (gluten-free soy)
1 tablespoon mirin rice wine
1 tablespoon rice wine vinegar
1 teaspoon sambal olek
1 pinch dry mustard, dissolved in 1 tablespoon water
1 ounce mung bean sprouts
1 lemon, cut in half
1/4 green onion, thinly sliced
1/4 teaspoon sesame seeds

Steps:

  • For the steamed Calrose rice: In a saucepan on high heat, add the rice, salt and 2 1/2 cups water. Bring to a full boil, cover, place a tight-fitting lid on top and then reduce the heat to a simmer. Allow to cook for 18 minutes, then carefully fluff the rice with a fork before serving.
  • For the teppanysaki-style shrimp: Peel and devein the shrimp and remove the tails. Split the shrimp lengthwise.
  • Heat a large griddle or heavy wok over medium-high heat. Add the grapeseed oil and sesame oil. Add the shrimp and quickly sear to caramelize them, cooking them halfway, about 1 minute. Remove immediately.
  • Quickly add the ginger, garlic and onion and saute until tender, about 3 minutes. Add the carrots, baby corn if using and peppers and saute until cooked through, about 3 minutes. Crack the egg over the vegetables and quickly stir-fry to cook the egg.
  • Add the tamari, mirin, rice wine vinegar, sambal and dry mustard dissolved in water and toss until everything is well coated. Add the shrimp and mung bean sprouts and cook until the liquid is reduced by half and the shrimp are cooked through, about 1 minute.
  • Serve over the steamed rice and top with a squeeze of lemon juice, sliced green onions and sesame seeds

TEPPANYAKI

Teppanyaki image

Teppanyaki is a Japanese term that refers to food prepared on a griddle. This simple recipe includes a dipping sauce with sweet mirin rice wine as an ingredient but a tablespoon of soft light brown sugar can be substituted, if desired. The recipe comes from the cookbook Chicken. Posted for: Zaar World Tour 4

JAPANESE STEAKHOUSE FRIED RICE RECIPE - (3.9/5)

Japanese Steakhouse Fried Rice Recipe - (3.9/5) image

Provided by AzWench

Number Of Ingredients 9

2 eggs
3 tablespoons unsalted butter
2 cloves garlic, minced
2 carrots, finely chopped
2 cups cooked medium-grain rice
3 tablespoons soy sauce
3 green onions, finely chopped
2 tablespoons gomasio (sesame and salt seasoning)
Black pepper, to taste

Steps:

  • In a large wok or on a griddle, scramble the eggs in 1 tablespoon of the butter over low to medium heat. Remove from the wok and set aside on a plate. Melt the additional 2 tablespoons of butter in the wok or on the griddle over high heat. Add the garlic and carrots, stirring constantly. After 1 to 2 minutes, stir in the cooked rice and soy sauce. Toss to thoroughly incorporate the ingredients. Add the cooked eggs and onion and mix in the gomasio and black pepper to taste; cook for another 6 to 8 minutes, or until the rice is warmed through and the flavors incorporated. Serve immediately alongside grilled meats or a teriyaki-style main dish. Tips: Make your fried rice stand out by varying the ingredients. Yumiko Kanou, chef and owner of the Tokyo restaurant Nakaiseki Sen, leaves out the egg, butter and gomasio and adds pine nuts, sesame oil and chiles de arbol to her brown fried rice. A splash of sake added along with the soy sauce adds another layer of flavor to fried rice, too. Cook the rice the day before and refrigerate it overnight. Refrigerated rice is less likely to stick together when fried, so you'll get separated grains, rather than a mushy mass. To give the rice even more flavor, cook it in chicken or vegetable broth. That Steakhouse Flavor Although this recipe is a close approximation of Japanese steakhouse fried rice, it can't duplicate it exactly. Teppanyaki-style restaurants usually cook the rice straight on the grill that's used to cook the meat and multiple other dishes. This imparts a flavor into the rice that's unique and almost impossible to replicate without a highly seasoned grill.

CHICKEN FRIED RICE

Chicken Fried Rice image

This chicken fried rice recipe tastes just like the one served at Benihana! The secret? Lots of garlic butter. Chewy and delicious, it is easy to make at home, no special tricks required! (Total time to make this recipe includes cooking the rice and chilling overnight.)

Provided by Olivia Mesquita

Categories     Side Dish

Time 9h

Number Of Ingredients 15

2 cups medium grain white rice
1 teaspoon Kosher salt (plus more to taste)
3 cups cold water
1 stick (½ cup) unsalted butter (softened)
2 tablespoons lemon juice
1 teaspoon soy sauce (plus more to finish)
2 cloves garlic (minced)
1 ½ pounds chicken breasts
About ¼ cup vegetable oil (divided)
1 large onion (finely chopped)
2 large carrots (peeled and finely diced)
½ cup green onions (thinly sliced)
3 eggs (beaten)
Freshly ground black pepper (to taste)
Sesame seeds to garnish (optional)

Steps:

  • Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Transfer to a medium saucepan, adding 1 teaspoon of salt and 3 cups of water.
  • Bring to a boil, then cover and reduce the heat to the lowest setting. Simmer, undisturbed, for 15 minutes. Then, remove from the heat and let it stand for at least 15 minutes. Uncover and fluff the rice to break down the clumps. Let it cool completely, then transfer to a baking sheet, cover with plastic and refrigerate overnight.
  • The next day, mix the softened butter, lemon juice, 1 teaspoon soy sauce and garlic cloves in a bowl. Stir vigorously until smooth. Reserve.
  • Season the chicken breasts with salt. Heat 1 tablespoon of vegetable oil in a large non-stick skillet, over medium-high heat, and brown the chicken breasts on all sides, about 2 minutes per side.
  • Transfer the chicken breast to a cutting board and cut into cubes. Return the cubes to the skillet and continue cooking until golden brown, about 3-5 more minutes. Add 1 tablespoon of the garlic butter and mix to combine. Remove the chicken cubes to a plate and reserve.
  • Return the skillet to the heat, adding another tablespoon of oil. Add the chopped onion and carrots, sautéing until softened, about 5-8 minutes. Then, add the green onions and continue cooking for another couple minutes. Remove and reserve.
  • Heat more oil in the skillet and add the eggs, scrambling them, about 1-2 minutes. Remove and reserve.
  • Place a large wok pan on the stove and heat on medium-high. Add enough oil to coat the whole pan. Add the cooked rice and let it cook for about 5 minutes, or until warmed through. Then, add the remaining garlic butter and toss to combine, making sure all the rice gets coated with the butter.
  • Add the reserved veggies and mix until combined. Then, carefully stir in the reserved chicken and eggs. Stir-fry for another 2-3 minutes or until the rice begins to brown slightly.
  • Season with salt and pepper, and drizzle soy sauce to taste.
  • Serve, garnished with toasted sesame seeds.
