SIMPLE TURKEY CHILI
This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

Steps:
- Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
- Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

TERRIFIC TURKEY CHILI WITH BLACK BEANS
This Terrific Turkey Chili with Black Beans has just the right amount of sweetness and smoky flavor, thanks to a little barbecue sauce. This has been my go-to chili recipe for years!

Steps:
- Peel and chop the onion. Heat olive oil in a large pot on medium high. Add the onions and cook until they're tender, stirring occasionally.
- While the onions are cooking, rinse the red pepper and pat it dry. Cut out the stem, then cut the pepper in half to remove the seeds and membrane. Cut the red pepper into 3/4-inch pieces.
- When the onions are soft, add the ground meat to the pan and break it up with a cooking spoon, stirring to combine with the onions. Cook the turkey until it is no longer pink. Use a ladle to scoop out about 1/2 cup of the liquid fat and discard it. (Leave some fat for flavor.)
- With a clean spoon, stir the red peppers into the pot and let them cook for a minute. Add the canned tomatoes (including any liquid). Use a potato masher to mash the tomatoes a bit (or cut them up with a fork and knife).
- Stir in the barbecue sauce and chili powder, salt, cumin, garlic powder and cayenne pepper. Add the drained beans and stir to combine.
- Reduce the heat and simmer for 30 minutes, loosely covered. You can use a wooden spoon resting on the edge of the pot to prop open the lid. Stir occasionally to prevent sticking.
- Serve chili with shredded cheddar and red pepper flakes at the table, if desired. Store leftovers in the refrigerator for up to four days, or freeze them.

CHEF JOHN'S TURKEY CHILI
I served mine with some beautifully ripe slices of avocado that gives the final bowl another layer of silky richness. By the way, don't let the cocoa powder in our chili spice mixture throw you off! It's only a small amount and it really works. My chili was garnished with sour cream, diced jalapeno, cilantro and avocado.

- Mix the ancho chile powder, paprika, cumin, salt, chipotle pepper, oregano, cocoa powder, black pepper, cayenne pepper, and cinnamon in a bowl; set aside.
- Heat the olive oil in a large heavy pot over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the ground turkey and garlic. Cook and stir until turkey is no longer pink, breaking up any large chunks, 7 to 8 minutes. Stir in the spice mixture. Cook until fragrant, 3 to 4 minutes.

THE BEST TURKEY CHILI
This is just the best tasting chili. My family prefers it over beef chili. I like to put out toppings such as chopped onion, cilantro, chopped bell pepper, cheese, and sour cream and let everyone serve themselves.

- Heat olive oil in a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink.
