Swap the beef for ground turkey to make these flavorful, and better-for-you Turkey Tacos! The ground turkey has a killer seasoning mix and can be whipped up in 15 minutes or less in one skillet. Add your favorite taco toppings and dinner is served!

1 tablespoon olive oil
1/2 cup diced yellow onion ((~1/2 of 1 onion))
2 teaspoons minced garlic ((~2 cloves))
1 tablespoon ground chili powder
1 teaspoon EACH: ground cumin, paprika
1/2 teaspoon EACH: onion powder, garlic powder, dried oregano, salt and pepper
1/2 tablespoon beef bouillon powder
1 pound lean (93/7) ground turkey
1/3 cup tomato sauce
tortillas (flour or corn)
1 cup freshly grated Colby Jack or extra-sharp Cheddar cheese
Toppings: shredded lettuce, sour cream (fat-free or lite is great), fresh guacamole or ripe avocados, chopped cherry tomatoes, salsa or pico de gallo, fresh cilantro, fresh lime

Steps:

  • TURKEY TACO MEAT: Dice the onion and mince the garlic. Heat 1 tablespoon olive oil in a large, nonstick skillet over medium-high heat. Once the oil is hot, add the diced onion. Cook for 3-5 minutes or until soft and translucent. Add in the garlic and cook for 20-30 seconds. Add all of the seasonings: 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and 1/2 tablespoon beef bouillon powder. Stir the spices until fragrant, about 30 seconds. Nothing should be burning; reduce the heat if needed.
  • TACO MEAT CONT.: Add in the ground turkey. Crumble the meat into small pieces and cook until no longer pink (but not cooked through all the way), about 5-8 minutes. Add in the tomato sauce and scrape the bottom of the pan to release any browned bits (this is where the flavor is!). Let simmer for 3-5 minutes, or until fully cooked through, and then remove from heat.
  • ASSEMBLY: Char/warm tortillas (Note 1). Add even amounts of the meat and then sprinkle cheese on top. The taco meat should be hot enough that the cheese will melt. Immediately add toppings of choice. Our favorites are a big scoop of sour cream, ripe sliced avocado (or guacamole), a few chopped cherry tomatoes, fresh cilantro, and a squeeze of fresh lime juice. Enjoy hot!

28 oz canned diced tomato, drained

Steps:

  • Heat a skillet over high heat. Once hot, add oil to coat the bottom of the pan.
  • Add the ground turkey and break apart with a spatula.
  • Add taco seasoning, salt, and pepper and stir, cooking until meat has browned and is fully cooked through.
  • Stir in the tomatoes. Bring to a gentle simmer for about 5 minutes and remove from heat.
  • Assemble tacos with your favorite toppings.

Chunky zucchini, fresh green onion, sour cream, and - what the heck - shredded Cheddar cheese, are sure to make this your favorite chili recipe. If you like beans in your chili, garbanzos right out of the can are great in this.

3 tablespoons vegetable oil, divided
1 ½ pounds ground turkey
1 (1 ounce) package taco seasoning mix
1 teaspoon ground coriander
1 teaspoon dried oregano
1 teaspoon chili pepper flakes
2 tablespoons tomato paste
1 (14.5 ounce) can beef broth
1 (7 ounce) can salsa
1 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree
1 (7 ounce) can chopped green chile peppers
1 medium onion, finely chopped
1 green bell pepper, diced
3 medium zucchini, halved lengthwise and sliced
1 bunch green onions, chopped
1 cup sour cream
1 cup shredded Cheddar cheese

Steps:

  • Heat 1 tablespoon of oil in a large stock pot over medium-high heat. Crumble turkey into the pot, stirring with a wooden spoon to break apart as much as possible. Season with taco seasoning mix, coriander, oregano, chili flakes, and tomato paste, and mix until meat is evenly coated with seasonings. Continue cooking, reducing heat if necessary, until turkey is well browned.
  • Pour in beef broth, and simmer to reduce liquid slightly, about 5 minutes. Add salsa, tomatoes, and green chilies, and continue cooking at a moderate simmer for ten minutes. Adjust the thickness at any time you feel necessary by adding water.
  • While chili is still cooking, heat one tablespoon of oil in a large skillet over medium-high heat. Cook onion and green bell pepper, stirring occasionally for 5 minutes, or until onion is translucent and bell pepper is lightly browned. Add onion and bell pepper to the chili, and continue cooking at a very low simmer.
  • In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the zucchini, and cook stirring occasionally, for 5 minutes, or until lightly browned. Add the zucchini to the chili, reduce heat, and continue cooking 15 minutes more. Again, adjust the consistency with water as needed.
  • Ladle chili into serving bowls. Top with sour cream, green onion, and cheddar cheese, and serve.

2 tbsp chipotle paste
400g pack turkey mince
100g long grain rice , rinsed
420g can kidney bean in water, rinsed and drained
600ml chicken stock
140g frozen sweetcorn , defrosted
small bunch coriander , chopped
8 taco shells
½ iceberg lettuce , shredded
150ml pot soured cream
grated cheese and guacamole , to serve

Steps:

  • Heat the paste in a frying pan with a lid. When hot, add the mince and cook until browned, breaking it up well with a fork. Stir in the rice and beans, and mix well, then add the stock.
  • Cover and simmer for 20-25 mins until the rice is tender, then stir in the sweetcorn and scatter over the coriander. Heat the taco shells following pack instructions, then serve with the mince mixture, lettuce and soured cream. Let everyone build their own dinner, adding grated cheese and guacamole.

2 tablespoons olive oil
1/2 small onion, diced
1 cup diced zucchini
1/4 cup mild salsa, plus more for passing at the table
8 ounces raw turkey sausages
1/2 cup shredded Monterey jack
8 corn tortillas
1 ripe avocado
Salt and pepper
4 iceberg lettuce leaves, shredded
1 wooden spoon
1 medium saute pan
2 medium bowls
Paring knife (use with an adult)
1 fork
1 microwave

Steps:

  • Heat the oil in medium non-stick skillet over medium heat. Add the onion and cook until soft, about 4 minutes. Add the zucchini, the salsa, and a couple tablespoons of water. Cover, cook for 5 minutes, or until the squash is tender. Transfer the vegetable mixture to a bowl with a spoon.
  • Squish the sausage meat from its casing into the same skillet. (Discard the casings.) Break the meat up with a wooden spoon. Cook the meat over medium heat for 3 to 5 minutes or until it loses its color. Add the meat to the vegetables. Add the cheese and stir. Set aside.
  • Cut avocado in half. Using a spoon, scrape the avocado from the skin into another bowl. Smash the avocado with a fork and season with salt and pepper.
  • Wrap the tortillas in moist paper towels. Heat in the microwave for 1 minute or until warm. Lay out the tortillas and divide the turkey mixture evenly on top. Top with lettuce and avocado, fold the tortillas over and serve with salsa.

2 tablespoons extra virgin olive oil
1 1/3 lbs ground turkey

fresh ground black pepper
2 teaspoons poultry seasoning
3 garlic cloves, minced
1 medium onion, chopped
1/4 cup golden raisin, chopped
2 tablespoons chili powder
2 teaspoons cumin
1/2 cup beer or 1/2 cup chicken broth
1 cup tomato sauce
2 cups shredded monterey jack pepper cheese
1 romaine lettuce hearts, shredded
2 firm plum tomatoes, diced
1/2 cup green pimento stuffed olive, chopped
1 cup salsa verde (or your choice of salsa)

Steps:

  • Preheat the oven to 375°; place 8 large taco shells on a rimmed baking sheet and bake 6-7 minutes or until crisp but not brown; remove from oven.
  • Meanwhile, heat a large nonstick skillet over med-high heat.
  • Add in the olive oil; then add in the turkey and break up with a wooden spoon.

2 tablespoons canola oil
1 cup chopped onion
1 garlic clove, minced
1 lb ground turkey
1 teaspoon cumin
1 (8 ounce) can tomato sauce
1/4 cup water
1/4 teaspoon crushed red pepper flakes
1/4 cup chopped fresh cilantro
salt
12 taco shells
2 cups grated sharp cheddar cheese
2 cups shredded romaine lettuce or 2 cups red leaf lettuce

Steps:

  • Heat the oil in a large skillet.
  • Saute the onion and garlic over medium heat for 3 minutes.
  • Add the ground turkey and cook, stirring and breaking up the clumps of meat, until the meat has lost its pink color, about 5 minutes.
  • Stir in the cumin and cook for 1 minute.
  • Add the tomato sauce and water and simmer, partially covered, over low heat for 10 minutes.
  • Raise the heat to medium, uncover the skillet, and simmer for 5 minutes more, or until mixture is quite thick but not dry.
  • Stir in the crushed red pepper and cilantro and add salt to taste.
  • While turkey mixture is cooking, preheat the oven to 350 degrees and arrange taco shells on a baking sheet.
  • Prepare grated cheese, lettuce, scallions, and olives and put them into individual bowls.
  • When turkey mixture is almost done, heat taco shells in preheated oven for 5 minutes or so.
  • When turkey mixture and taco shells are done, each person can spoon some turkey mixture into the bottom of the half-moon-shaped taco shells and add toppings of choice.
  • Finish with a sprinkle of hot sauce, taco sauce or salsa.
  • Note: Turkey filling can be made ahead and will keep in the refrigerator for a few days.
