TEX-MEX BLACK BEAN BURGERS



Tex-Mex Black Bean Burgers image

2 cups precut vegetable stir-fry mix (broccoli, bell peppers, onions and/or mushrooms)
1/4 cup extra-virgin olive oil
1 cup frozen cooked brown rice
Kosher salt
1 teaspoon ancho chile powder
1/2 teaspoon ground cumin
1 15-ounce can black beans, drained and rinsed
Freshly ground pepper
1/3 cup breadcrumbs
1 tablespoon chipotle mayonnaise, plus more for topping
4 kaiser rolls
Shredded lettuce, sliced avocado, sliced tomato and pickled jalapeños, for topping
Sweet potato chips, for serving

Steps:

  • Chop the stir-fry mix into 1/2-inch pieces. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the vegetables, brown rice and a big pinch of salt. Cook, stirring, until the vegetables are softened, about 5 minutes. Stir in the chile powder, cumin, black beans, 3/4 teaspoon salt and a few grinds of pepper. Cook until the beans are hot and the skillet is dry, about 2 minutes.
  • Transfer the mixture to a food processor; reserve the skillet. Pulse 5 to 6 times, until the mixture holds together but is still chunky. Scrape into a large bowl and stir in the breadcrumbs and chipotle mayonnaise. Shape into 4 patties, about 4 inches wide. Place the patties on a plate, cover with plastic wrap and freeze to firm up, about 15 minutes. Meanwhile, split and toast the rolls.
  • Wipe out the reserved skillet, add the remaining 2 tablespoons olive oil and heat over medium-high heat. Add the patties and cook until heated through and a crust forms, about 2 minutes per side. Season with salt.
  • Serve the patties on the rolls with lettuce, avocado, tomato, pickled jalapenos and chipotle mayonnaise. Serve with chips.

This is a very easy dish to make in the crockpot. I usually serve this with corn tortillas and red beans & rice. It can be varied by the spices or even usinga bottle of salad dressing.

1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon honey
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon dill
1 tablespoon salt
1/4 cup apple cider vinegar
1 (8 ounce) package corn tortillas

Steps:

  • Place everything in the crockpot.
  • Turn on high for 1 hour.
  • Then low for 6-8.
  • Let the meat cool slightly and then shred.
  • Heat the tortillas on a grill pan and enjoy.

- the other half of brisket left from guinness beef brisket
1 package(s) sliced fresh portobello mushrooms
1 - large onion sliced
4 clove(s) garlic
- salt and pepper to taste
1 jar(s) salsa
1 can(s) black beans rinsed
1 package(s) monterey jack cheese
2 - large tomatos chopped
1 cup(s) sour cream
2 - ripe avacados
1 teaspoon(s) onion powder
1 teaspoon(s) garlic powder
2 teaspoon(s) lemon juice

Steps:

  • In large saute pan heat olive oil add onion mushroom and garlic salt and pepper to taste and saute on med heat until softend.
  • add shredded Brisket heat through
  • add jar of salsa and can of black bean and simmer to thicken a bit
  • top with cheese and cover low heat to melt cheese
  • In food processor blend avacado, lemon juice, garlic and onion powder, salt and pepper to make the guacamole and put in bowl.
  • Use the chopped tomatos, sour cream and guacamole to serve as toppings for beef mixture

400g can chopped tomato
2 spring onions , whites and greens separated, both finely sliced
2 tsp ground cumin
2 tsp mild chilli powder
1 tbsp brown or barbecue sauce
400g can black bean , drained and rinsed
2 slices of your favourite bread
1 small ripe avocado
few good squeezes of lemon or lime juice
big dollop of natural yogurt

Steps:

  • Tip the tomatoes, spring onion whites, spices and brown sauce into a saucepan. Bring to a simmer and bubble for 10 mins.
  • Stir in the beans with some seasoning and heat through for 5 mins. Meanwhile, toast the bread, then chunkily dice half the avocado and mix with a squeeze of lemon or lime juice.
  • Squash the remaining avocado over one of the pieces of toast, and sandwich with the other. Sit on a plate and top with the hot chilli beans, followed by the diced avocado and a dollop of cooling yogurt. Scatter with the spring onion greens and tuck in.

6 chicken leg quarters, skin removed
1 envelope taco seasoning, divided
1 can (14-1/2 ounces) Mexican diced tomatoes, undrained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 large onion, chopped
1 can (4 ounces) chopped green chiles
1 cup uncooked instant rice
1 cup canned black beans, rinsed and drained
1 cup sour cream
1 cup shredded cheddar cheese
1-1/2 cups crushed tortilla chips
Minced fresh cilantro

Steps:

  • Sprinkle chicken with 1 tablespoon taco seasoning; transfer to a 5- or 6-qt. slow cooker. In a large bowl, combine the tomatoes, soup, onion, chiles and remaining taco seasoning; pour over chicken. Cover and cook on low for 5-7 hours or until chicken is 165° and tender., Prepare rice according to package directions. Stir in beans; heat through. , Remove chicken from cooking juices; stir sour cream into cooking juices. Serve chicken with rice mixture and sauce. 1 fresh beef brisket (3-1/2 pounds)
1 jar (18 ounces) hickory smoke-flavored barbecue sauce
1/2 cup finely chopped onion
1 envelope chili seasoning
1 tablespoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon lemon juice
14 hamburger buns, split

Steps:

  • Cut brisket in half; place in a 5-qt. slow cooker. , In a small bowl, combine the barbecue sauce, onion, chili seasoning, Worcestershire sauce, garlic and lemon juice. Pour over beef. Cover and cook on low for 8-9 hours or until meat is tender., Remove beef; cool slightly. Shred and return to the slow cooker; heat through. Serve on buns.
