THIN, CRISP ALMOND COOKIES

Thin, Crisp Almond Cookies image

Very thin and especially crisp. The dough must be chilled at least 4 hours prior to baking or it can be made a day ahead and refrigerated overnight. Turbinado sugar, like brown sugar but paler and dryer, gives these cookies a golden color and crunch and can be found in the baking aisle of most supermarkets. Adapted from "Sweet Miniatures".

Provided by dojemi

Categories     Dessert

Time 4h16m

Yield 25-30 cookies

Number Of Ingredients 7

1/2 cup unsalted butter (cut up)
1 1/3 cups turbinado sugar
1/2 teaspoon ground cinnamon
1/3 cup water
2 1/3 cups flour
1/4 teaspoon baking soda
1 cup almonds (sliced)

Steps:

  • Cover a baking sheet with plastic wrap (or line a 6"x9" glass baking dish with plastic wrap).

  • Most of the sugar will 'not' be disolved.
  • Remove the pan from the heat.
  • Stir in the flour, baking soda and almonds. Mix well.
  • Cool 5 minutes.
  • On the sheet covered with plastic wrap, shape the dough into a 5"x8" rectangle that is 1" high, rounding out the edges and corners slightly - OR - press the dough into a 6"x9" dish.
  • Cover with more plastic wrap and chill at least 4 hours or overnight.
  • Set the oven at 325°.
  • Line two baking sheets with parchment paper.
  • Lift the block of dough from the baking sheet (or dish).
  • Set it on a cutting board, discarding the plastic wrap.
  • Using a long, sharp knife, slice the dough crosswise into rectangles as thin as a coin.
  • Space the cookies on a bakiing sheet about 1/2" apart.
  • Bake for 8 minutes, until the cookies feel slightly firm and the undersides are golden brown.
  • With a wide spatula, turn the cookies over and bake 8 minutes more.
  • Leave the cookies on the sheet to cool for 5 minutes.
  • Transfer to a wire rack to cool completely.
  • Store in an airtight container.

ALMOND CRUNCH COOKIES

Almond Crunch Cookies image

Categories     Cookies     Nut     Bake     Spring     Bon Appétit

Yield Makes about 4 dozen

Number Of Ingredients 9

3 cups slivered almonds, toasted 1 1/4 cups powdered sugar
3 large egg whites
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup sugar
3 tablespoons amaretto liqueur
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Line heavy large baking sheet with parchment paper. Place 1 1/2 cups almonds in large bowl and sift 1/2 cup powdered sugar over; toss to coat. Whisk 1 egg white to blend in small bowl. Add 1 tablespoon egg white to nuts and toss to blend. Spread mixture in even layer over prepared baking sheet. Bake until almonds are golden and coating is dry, about 10 minutes. Cool completely.
  • Transfer candied almonds to processor. Using on/off turns, process until almost all almonds are coarsely chopped and some fine crumbs form. Transfer chopped candied almonds to small bowl.
  • Line 2 large baking sheets with parchment paper. Finely chop remaining 1 1/2 cups slivered almonds in processor. Add flour, baking soda, and salt. Blend until nuts are very finely ground.
  • Using electric mixer, beat butter, 3/4 cup sugar, and remaining 3/4 cup powdered sugar in large bowl until well blended. Add remaining 2 egg whites, amaretto, and vanilla. Beat until well blended. Gradually mix in flour-almond mixture. Stir in chopped candied almonds.
  • Working in 2 batches and using small ice cream scoop or tablespoon, spoon 2 level tablespoonfuls dough in mound for each cookie, forming about 12 mounds on each sheet and spacing 2 inches apart. Bake until cookies are golden brown, about 14 minutes. Cool slightly on baking sheets. Transfer cookies to rack and cool completely. (Can be made 3 days ahead. Store airtight at room temperature.)

TEXAS SHEET CAKE COOKIES

Texas Sheet Cake Cookies image

This is the cookie version of the fudgy, chocolaty goodness that is a Texas sheet cake. Make sure to frost these cookies while both the cookies, and the frosting, are still warm--because this frosting sets up quickly! Feel free to top these with either chopped walnuts or pecans, if desired. Store in airtight containers.

Categories     Desserts     Cookies     International Cookie Recipes     American Cookie Recipes

Time 1h

Yield 20

Number Of Ingredients 18

¼ cup semisweet chocolate chips (such as Ghiradelli® 60% Cacao)
1 ⅛ cups all-purpose flour
3 tablespoons unsweetened baking cocoa (such as Ghirardelli®)
1 teaspoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
⅓ cup white sugar
1 large egg, room temperature
1 ½ teaspoons vanilla extract
¼ cup buttermilk, at room temperature
5 tablespoons unsalted butter
5 tablespoons heavy cream
3 tablespoons unsweetened baking cocoa (such as Ghirardelli®)
1 teaspoon vanilla extract
¼ teaspoon salt
2 cups powdered sugar

Steps:

  • Place chocolate chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Let cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Whisk flour, cocoa powder, baking powder, cinnamon, baking soda, and salt together in a bowl until thoroughly combined. Set aside.
  • Combine butter and sugar in a bowl and beat using an electric mixer until light and fluffy. Beat in egg and vanilla extract until thoroughly combined. Mix in melted chocolate until thoroughly incorporated. Stir in 1/2 of the dry ingredients, mixing until just combined. Mix in buttermilk. Stir in remaining dry ingredients, mixing until just combined.
  • Use a medium cookie scoop to drop rounded balls of dough 1 1/2 inches apart on the prepared baking sheets.
  • Bake in the preheated oven until cookies are just set, 8 to 10 minutes. Do not overbake. Remove from the oven and allow cookies to cool slightly on the baking sheets. Do not remove cookies from the baking sheets.
  • Combine butter, heavy cream, cocoa powder, vanilla extract, and salt in a saucepan set over low heat. Whisk until butter is melted and frosting is smooth and combined. Mix in powdered sugar 1 cup at a time, whisking thoroughly after each addition. Keep whisking over low heat until frosting is smooth and shiny, 1 to 2 minutes.
  • Remove chocolate frosting from heat and immediately pour approx 1 to 2 tablespoons over each cookie while still warm. Use the back of a spoon to gently smooth out frosting as needed. Allow cookies to cool and frosting to set completely before gently removing from the baking sheets.
